EFFECTS OF NISIN AND MODIFIED ATMOSPHERE PACKAGING (MAP) ON THE QUALITY OF EMULSION‐TYPE SAUSAGE

ABSTRACT

The aim of this work was to study the effects of nisin (30 ppm) and modified atmosphere packaging (MAP) on the chemical, microbial and sensory properties of emulsion‐type sausage stored under two different atmospheres (%CO₂/%N₂/%CO/%O₂): 39.5/60/0.5/0 and 39.5/20/0.5/40. The samples were stored at 3 ± 1C for 42 days. Microbial count, values of pH, CIE L*, a* and b* color parameters, lipid oxidation, production of nitrosomyoglobin and sensory properties were assessed throughout the storage period. The data showed that nisin was able to reduce the growth of mesophilic, psychrotrophic and lactic acid bacteria. In addition, the MAP did not show any significant effects on microbial growth. However, free O₂ MAP, in combination with nisin, reduced the growth of yeast and mold. MAP could produce a stabilized red color and minimize the oxidative reactions in the samples. Packaging conditions had no significant effect on pH and sensory properties.

PRACTICAL APPLICATIONS

The results of this study confirmed that nisin can reduce the growth rate of lactic acid bacteria, psychrotrophic and mesophilic bacteria in emulsion‐type sausage, and free O₂ MAP, in combination with nisin, inhibits the growth of yeast and mold. The use of 30 ppm nisin, in combination with MAP containing 39.5% CO₂ and 0.5% CO gases, can lead to better quality preservation of the emulsion‐type sausages stored at low temperature and can extend their shelf life.     

An Improved Method for Preparation of Nitric Oxide Myoglobin

We developed an improved method for preparation of bovine nitric oxide myoglobin using the following starting materials: 0.1 mM purified metmyoglobin; 0.1 mM (7 ppm) sodium nitrite; and 1.76 mM (350 ppm) sodium ascorbate. The method requires complete deoxygenation of the reacting system. NOMb prepared in this manner is a source of cured meat pigment which contains a minimum of impurities, since the nitrite reacts quantitatively with the myoglobin in this method.     

Approximate pole placement in linear multivariable systems using dynamic compensators†

The problem of approximate pole placement in linear time-invariant systems is generalized to include the case in which the controllable, observable plant of order n is augmented by o, fixed order compensator. It is shown how a low-order compensator may be obtained such that the eigenvalues of the closed-loop system are close to a set of preassigned values.     

Investigation of TaC–TaB<Subscript>2</Subscript> ceramic composites

The TaC–TaB₂ composition was sintered by spark plasma (SPS) at 1900–2100°C and applied pressure of 30 MPa. TaC and 2–3 wt% B₄C were used as starting powders. Densification process, phase evolution, microstructure and the mechanical properties of the composites were investigated. The results indicated that the TaC–TaB₂ composition could be SPS to 97% of theoretical density in 10 min at 2100°C. Addition of B₄C leads to an increase in the density sample from 76 to 97%. B₄C nano-powder resists grain growth even at high temperature 2100°C. The formation of TaB₂/carbon at TaC grain boundaries helps in pinning the grain boundary and inhibiting grain growth. The phase formation was associated with carbon and boron diffusion from the starting particles B₄C to form TaB₂ phases. TaC grain sizes decreased with increase in B₄C concentration. Samples with 2.0 wt% B₄C composition had highest flexure strength up to 520 MPa. The effect of B₄C addition on hardness measured by microhardness has been studied. Hardness of samples containing 3.0 wt% B₄C was 16.99 GPa.     

ANTIOXIDANT ACTIVITY OF BENE HULL OIL COMPARED WITH SESAME AND RICE BRAN OILS DURING THE FRYING PROCESS OF SUNFLOWER OIL

The antioxidant activity of Bene hull oil (BHO) was compared with that of sesame oil (SEO) and rice bran oil (RBO) during the frying process of sunflower oil (SFO) at 180C. The ratio between the polyunsaturated and saturated fatty acids and calculated oxidizability were statistically greater for the SFO (4.26 and 6.48, respectively), followed by the SEO (3.18 and 6.27, respectively), RBO (1.53 and 4.37, respectively) and BHO (0.37 and 1.67, respectively). Peroxide and acid values of the oils studied ranged from 0.34 to 3.07 mEq/kg and from 0.19 to 5.20 mg/g, respectively. Total tocopherols and phenolics contents of the SEO (1093.28 and 1042.43 mg/kg, respectively) were significantly higher than those of the SFO (740.27 and 38.68 mg/kg, respectively), BHO (573.41 and 276.67 mg/kg, respectively), and RBO (832.98 and 67.98 mg/kg, respectively). In total, based on the conjugated diene value and carbonyl value measurements during the frying process, the BHO showed an antioxidant activity higher than those of the SEO and RBO at the level of 2%, and the levels higher than 2% of the antioxidative oils caused to decrease the oxidative stability of the SFO, indicating the pro-oxidant effect of the oils added at these levels.

PRACTICAL APPLICATIONS

This research introduces the oil obtained from the hull of Bene, a species of pistachio growing wild in Iran, as a new source of vegetable oil for human nutrition with antioxidant activity significantly higher than sesame and rice bran oils, which are considered as very stable and antioxidative vegetable oils because of the presence of very strong indigenous antioxidants, during the frying process.

在传统矩阵变换器和多电平逆变器的基础上，提出一种新颖的多电平矩阵变换器，介绍了其拓扑结构和工作原理．多电平矩阵变换器的能量传递，是通过三相输入电压对中点电容充电到一个恒定直流电压而实现的．选择适当的控制算法和电容电压，能在变换器的两侧合成低次谐波含量小且波形近似于正弦的可控输入／输出电压．对多电平矩阵变换器进行建模和仿真，并探讨了其输出能控性．
