Heat transfer coefficients around a model food shaped as a circular cylinder placed on a flat surface and impinged by a slot air jet has been determined using an inverse heat transfer method. The determination was based on time-temperature data measured with a thermocouple in the cylinder and in the air jet. The cylinder was rotated around its horizontal axis to determine the heat-transfer coefficients at different locations around the cylinder. A sensitivity analysis using Monte Carlo simulations was also performed. The local heat-transfer coefficients determined, were compared to computational fluid dynamics (CFD) simulations using the k-ω SST and RSM models. The heat-transfer coefficients determined from temperature measurements was larger than predicted by the CFD simulations. The heat-transfer rates were in better agreement on the upper part of the cylinder, including the decrease along the cylinder due to flow separation, than on the lower part close to the wake recirculation area. The SST model predicted in general a slightly higher heat-transfer rate on the upper part of the cylinder and slightly lower on the lower part of the cylinder, as compared to the RSM model.  相似文献

Microbiological sampling of Norvegia cheese from three cheese factories was done during ripening. The evolution of aerobic mesophilic bacteria, lactococci, lactobacilli, enterococci, presumptive leuconostoc and pediococci was investigated after 30, 90, 180 and 270 days of ripening. Isolates (135) of non-starter lactic acid bacteria (NSLAB) from nine Norvegia cheeses after 90, 180 and 270 days of ripening were examined. The isolates were tested by physiological and biochemical assays, species-specific PCR and 16S rDNA sequencing. After 90 days of ripening Leuconostoc spp., most probably from the starter, and the NSLAB specie Lactobacillus paracasei dominated among the isolates, however, after longer ripening Lb. paracasei dominated. The development and evolution of the microflora in Norvegia varied according to dairy and ripening time.  相似文献

BACKGROUND: Human studies have demonstrated that processing of tomato can greatly increase lycopene bioavailability. However, the difference between processing methods is not widely investigated. In the current study different thermal treatments of tomato were evaluated with regard to their impact on in vitro bioaccessibility and retention of lycopene and β‐carotene as well as textural properties. Thermal treatments used were low (60 °C) and high (90 °C) temperature blanching followed by boiling. RESULTS: Lycopene was relatively stable during thermal treatment, whereas β‐carotene was significantly (P < 0.05) reduced by all heat treatments except for low temperature blanching. In vitro bioaccessibility of lycopene was significantly increased from 5.1 ± 0.2 to 9.2 ± 1.8 and 9.7 ± 0.6 mg kg?1 for low and high temperature blanching, respectively. An additional boiling step after blanching did not further improve lycopene bioaccessibility for any treatment, but significantly reduced the consistency of low temperature treated samples. CONCLUSION: Choice and order of processing treatments can have a large impact on both lycopene bioavailability and texture of tomato products. Further investigations are needed, but this study provides one of the first steps towards tomato products tailored to optimise nutritional benefits. The lactoperoxidase/SCN-/H2O2 system (LPS) was found to inhibit lipoprotein lipase (LPL) in milk. Inhibition was related to the amount of SCN-/H2O2 added to milk. Lipolysis was unaltered until LPL activity was decreased to less than 40% of the original activity. When LPL was inhibited further, decreased lipolysis was observed. Purified LPL was also inhibited by LPS, at similar concentrations of SCN-/H2O2 as in milk. It was shown that non enzymically prepared OSCN- inhibited LPL at concentrations comparable to those produced by the LPS. Cysteine could eliminate the effect of LPS on LPL. The sulphydryl reagents dithiobisnitrobenzoic acid and Na tetrathionate had no effect on LPL activity.  相似文献

Silica aerogel is a sol-gel prepared material characterized by high porosity and large inner surface area. Aerogels can be prepared with a high transparency and low thermal conductivity, giving a material excellent for application as transparent thermal insulator. The traditional route to prepare silica aerogels is by formation of an alcogel by hydrolysis and condensation of silicon alkoxides followed by supercritical drying in an autoclave at high pressure (–100 atm). Unfortunately, this process is expensive and might be dangerous, so drying methods have been developed that operate under ambient conditions. In previous work, we have shown that gels can be strengthened and stiffened by providing new monomers to the alcogel giving xerogels with similar properties as aerogels by drying at ambient pressure (porosity up to 90%). This method of obtaining ambient pressure dried aerogels will be described and special emphasis will be given on the effect of the initial gel structure on the preparation of the xerogels.  相似文献

The glass transition, onset crystallization, solidus, and liquidus temperatures of a ZBLAN glass have been measured by differential thermal analysis in a sealed Pt ampoule. The onset crystallization was observed at 335°C for a powdered glass, while for a monolithic glass, prepared by in situ quenching in the Pt capsule, the onset crystallization was observed at 395°C, 135°C higher than T g. Surface-induced heterogeneous nucleation is therefore proposed to be important for the crystallization of ZBLAN glasses. The solidus temperature was observed at 452°C, about 10°C lower than reported for the subsystem ZrF4–BaF2–NaF.  相似文献

BACKGROUND: Two field trials growing Jerusalem artichoke (Helianthus tuberosus L.) are discussed. Twenty genetic variants were compared in order to find genotypes suitable for Norwegian production. A second trial investigated the above‐ground part of early and late variants. RESULTS: The highest yield (28.7 t ha?1) and highest amount of tubers per plant was obtained in early variants, e.g. the white Tysnes gave 1.72 kg tubers plant?1. Early variants had a markedly lower portion of smooth tubers. Late variants gave the most preferable tuber shape, but low yield. Only a weak correlation was found between dry matter content and total content of fructo‐oligosaccharides (FOS) (r = 0.255) in the tubers. The mean content of FOS including sucrose through all variants was found to be 116 g kg?1 fresh weight (FW) or 550 g kg?1 dry weight (DW). The average chain length of FOS in the tubers was found to be DP3.9. There was no difference in tuber FOS content between early and late variants. The highest above‐ground amount biomass was found for the late variants when harvested in September. The content of soluble carbohydrates was found to be highest in stalks in August (sucrose and FOS major compounds). We propose a methodology, based on aspect-oriented modeling (AOM), for incorporating security mechanisms in an application. The functionality of the application is described using the primary model and the attacks are specified using aspects. The attack aspect is composed with the primary model to obtain the misuse model. The misuse model describes how much the application can be compromised. If the results are unacceptable, then some security mechanism must be incorporated into the application. The security mechanism, modeled as security aspect, is composed with the primary model to obtain the security-treated model. The security-treated model is analyzed to give assurance that it is resilient to the attack.  相似文献

Building secure systems is difficult for many reasons. This paper deals with two of the main challenges: (i) the lack of security expertise in development teams and (ii) the inadequacy of existing methodologies to support developers who are not security experts. The security standard ISO 14508 Common Criteria (CC) together with secure design techniques such as UMLsec can provide the security expertise, knowledge, and guidelines that are needed. However, security expertise and guidelines are not stated explicitly in the CC. They are rather phrased in security domain terminology and difficult to understand for developers. This means that some general security and secure design expertise are required to fully take advantage of the CC and UMLsec. In addition, there is the problem of tracing security requirements and objectives into solution design, which is needed for proof of requirements fulfilment. This paper describes a security requirements engineering methodology called SecReq. SecReq combines three techniques: the CC, the heuristic requirements editor HeRA, and UMLsec. SecReq makes systematic use of the security engineering knowledge contained in the CC and UMLsec, as well as security-related heuristics in the HeRA tool. The integrated SecReq method supports early detection of security-related issues (HeRA), their systematic refinement guided by the CC, and the ability to trace security requirements into UML design models. A feedback loop helps reusing experience within SecReq and turns the approach into an iterative process for the secure system life-cycle, also in the presence of system evolution.  相似文献

The composition of the initial bacterial flora of pork and the development of the flora after storage at +4 degrees C for 4 days were analysed by amplification, cloning and sequencing of 16S rDNA. A total of 122 clones were obtained, with lengths of > or =400 nucleotides and > or =95% similarity to database sequences. Nineteen clones were similar to sequences in database not assigned to any genera. Fourteen different genera were represented in clones from fresh meat, with 36.5% of the clones most resembling Acinetobacter and 17.3% resembling Staphylococcus and Macrococcus. After storage, the clones were composed of six different genera, with 44.3% resembling Pseudomonas, 17.1% resembling Aeromonas and only 14.3% resembling Acinetobacter. This study shows that the overall pattern of the initial and chill-stored pork flora, as shown by a molecular approach, was in agreement with results obtained in previous studies using traditional cultivation methods.  相似文献
