Considering microwave (MW) heating as a viable alternative for in‐shell pasteurization of eggs, after the simulation of the MW heating process by using a finite element model, process optimization was carried out to determine the most effective procedure and design for the process. The varying parameters obtained by using different modeling techniques for MW heating of in‐shell eggs were optimized. Laboratory‐scale experimental trials were conducted to test the validity and effectiveness of the optimized parameters. The optimal parameters set forth were found to be more efficient in terms of heating time and uniformity. MW heating appeared to be a viable alternative for the pasteurization of in‐shell eggs. Strain SMXD51, isolated from chicken ceca and identified as Lactobacillus salivarius, produced a component that inhibits the growth of Gram-positive and Gram-negative bacteria and especially Campylobacter jejuni. The active peptide from the cell-free supernatant of Lb. salivarius SMXD51 was purified in three steps: (i) precipitation with 80% saturated ammonium sulfate, (ii) elution on a reversed phase SPE UPTI-CLEAN cartridge using different concentrations of acetonitrile, (iii) final purification by reversed phase HPLC on a C18 column. The mode of action of this peptide of 5383.2 Da was identified as bactericidal, and its amino acid composition was established. This new bacteriocin SMXD51 appears potentially very useful to reduce Campylobacter in poultry prior to processing.  相似文献

In order to discourage the use of chemicals in raisin processing, the effect of microwave and pulsed electric field (PEF) pretreatments on the drying rate and other quality parameters like color, total soluble solids, bulk density, appearance, and market quality were compared with that of chemically pretreated raisins dried at 65°C. The untreated and pretreated samples had a statistically significant difference in drying rate (P < 0.05). The drying rate of chemically pretreated raisins was the highest when compared to others. The results showed that the PEF and microwave-treated samples had a significantly high Total Soluble Solids (TSS), along with good appearance and market quality.  相似文献

Ovine whey proteins were fractionated and studied by using different analytical techniques. Anion-exchange chromatography and reversed-phase high-performance liquid chromatography (HPLC) showed the presence of two fractions of beta-lactoglobulin but only one of alpha-lactalbumin. Gel permeation and sodium dodecyl sulfate (SDS)-polyacrylamide gel electrophoresis allowed the calculation of the apparent molecular mass of each component, while HPLC coupled to electrospray ionisation-mass spectrometry (ESI-MS) technique, giving the exact molecular masses, demonstrated the presence of two variants A and B of ovine beta-lactoglobulin. Amino acid compositions of the two variants of beta-lactoglobulin differed only in their His and Tyr contents. Circular dichroism spectroscopy profiles showed pH conformation changes of each component. The thermograms of the different whey protein components showed a higher heat resistance of beta-lactoglobulin A compared to beta-lactoglobulin B at pH 2, and indicated high instability of ovine alpha-lactalbumin at this pH.  相似文献

The possibility of using IMF content/MS at the last rib to predict the corresponding fat attribute of loin chops at the 2nd last to the 7th last thoracic ribs and the mean of IMF content/MS of the whole loin joint was investigated. Linear and quadratic regression, cross‐validation analysis and analysis of variance were employed for the study. For either IMF or MS, linear and quadratic regression models had similar performance. The best mean correlation coefficients of calibration (Rc) of 0.91 and cross‐validation (Rv) of 0.88 were obtained for linear regression model of IMF content of the whole loin, while Rc of 0.90 and Rv of 0.88 were obtained for quadratic regression model of MS of the whole loin. The results indicated that IMF content and MS at the last rib had great potential for the prediction of IMF content and MS at the other ribs.  相似文献

In September 2011 the Belgian Road Safety Institute (BRSI) conducted its first roadside survey of child restraint system (CRS) use and misuse. The aim of this study was to obtain population-bases estimates of the prevalence of use and misuse of CRS and to identify predictors of misuse on the basis of observations in real traffic conditions. The survey was conducted on randomly selected sites across the country, stratified across various types of journeys. The principal parameters analysed were: the characteristics of the children and the car drivers, type of journey, types of CRS and types of misuse. The sample consisted of 1461 children (under 135 cm) for whom the conditions of restraint were observed in detail and the driver was interviewed.  相似文献
