Fructoselysin als wichtigstes Reaktionsprodukt von Lysin mit Glucose bei Hitzesch?digung von Lebens- und Futtermitteln

Zusammenfassung In Hydrolysaten hitzegeschädigter Milchpulverproben wurde im Bereich der basischen Aminosäuren eine bisher unbekannte ninhydrinpositive Substanz gefunden. Wie Untersuchungen mit¹⁴C-markiertem Lysin und¹⁴C-markierter Glucose ergaben, waren im Molekül der unbekannten Verbindung sowohl Lysin als auch Glucose im Verhältnis 1:1 vorhanden.Nach Hydrolyse von Fructoselysin (1-Amino-1-desoxy-2-Fructose), einem wichtigen Reaktionsprodukt aus Lysin mit Glucose im Initialstadium der Maillardkondensation wurde die Substanz X ebenfalls nachgewiesen. Damit dürfte die Verbindung ein durch die Bedingungen der salzsauren Hydrolyse entstandenes Folgeprodukt von Fructoselysin darstellen. Ein besonderer Vorzug gegenüber Fructoselysin ist die leichte Identifizierung im Chromatogramm der basischen Aminosäuren (Elution erst nach dem Arginin) und die Stabilität der Substanz X.Bei Hitzeschädigung von Milchpulver stellt Fructoselysin das wichtigste und nahezu einzige Reaktionsprodukt des Lysins mit der Lactose dar. In einer stark hitzegeschädigten Trockenmagermilch waren über zwei Drittel des Ausgangsgehalts an Lysin als Fructoselysin gebunden. Bei hochgradiger Hitzeschädigung eines Modellgemisches aus Casein mit Glucose nahm dagegen der Gehalt an Fructoselysin, wahrscheinlich durch Weiterreaktion in der Maillardkondensation (Bräunung) wieder ab.Wie Fütterungsversuche mit wachsenden Ratten und Untersuchungen zur Anflutung freier Aminosäuren im Pfortaderblut nach einer Probemahlzeit an erwachsene Ratten ergaben, wird Fructoselysin ernährungsphysiologisch nicht genutzt und auch ungespalten nicht resorbiert.     

Transient convection due to the sudden change of the temperature gradient

Changing the imposed angular temperature distribution suddenly into another angular temperature yields a transient convection due to the thermal Marangoni effect inside the liquid column until the final velocity distribution is reached. This transient has been determined analytically for a liquid bridge, for which no axial dependency exists,i.e. for the two-dimensional case. The method may also be applied to time-periodic temperature fields.     

Teaching information systems to small business management

The availability of cheaper, more efficient small computers opened up the possibility for medium-sized firms to install their own EDP system. Nevertheless these firms do not make sufficient use of EDP. One major reason for this is the lack of management knowledge about good computer applications. The paper describes a way to close this gap.On the basis of pilot and empirical studies, a combination of introductory lectures, autodidacts studies, and concluding lectures is proposed.To support the small business management, a manual was first designed. This deals with the practical problems and decisions of small and medium sized firms. In order to achieve better training seminars were designed that combined information materials with other systems of learning. The methods and the contents of these seminars including various case studies is described.     

Zur Frage der Entstehung von Nitrosaminen bei der Reaktion von Monosacchariden mit Aminos?uren (Maillard-Reaktion)

Zusammeufassung Zur Überprüfung des Auftretens von Nitrosaminen [2] im Rahmen der Maillard-Reaktion wurden die flüchtigen Produkte verschiedener Glucose-Aminosäure-Modell-gemische durch Kombination von Gaschromatographie and Massenspektrometrie, Polarographie und Dünnschicht-Chromatographie untersucht. Das Auftreten von Nitrosaminen kann durch die Ergebnisse eindeutig ausgeschlossen werden.

The problem of formation of nitrosamines by reacting monosaccharides with aminoacids (maillard-reaction)

Summary For proving the formation of nitrosamines applying maillardconditions [2] we tested the volatile reaction products of various glucose-aminoacid mixtures by coupling gas chromatography and mass spectrometry, polarography and thin-layer chromatography. The appearence of nitrosamines could undoubtedly be excluded according to the results.

Tracer diffusivity of Ca45and electrical conductivity in CaO-SiO2 melts

The tracer diffusivity of Ca⁴⁵ has been measured in CaO-SiO₂ melts in the temperature range 1500 to 1700°C. In addition the electrical conductivity has been determined. Both properties decrease with increasing silica content. The activation energies (~30 kcal g-atom−1) are of the same order of magnitude. The electrical conductivity as computed from the diffusivity on the assumption that the total current is transported exclusively by divalent calcium ions and that the usual Nernst-Einstein relationship is valid, is somewhat lower than the measured electrical conductivity with the difference increasing with increasing silica content.     

Continuous Determination of the Oxidation State in a Soda-Lime-Silica Glassmelt During Refining

Influences on the oxidation state of glassmelts can be studied by using an electrochemical oxygen sensor which allows in-situ measurements at melting temperatures. The action of fining agents such as arsenic and sodium sulfate was investigated. The behavior of arsenic (i.e. release and uptake of oxygen) and the decomposition of sodium sulfate with and without carbon additions can be seen electrochemically.
