Several quality parameters of smoked, oven‐dried and sun‐dried paprikas were studied. Smoked paprikas showed the highest American Spice Trade Association (ASTA) units and pigment concentrations, whereas oven‐dried paprikas showed the best browning index and red/yellow pigment ratio, and sun‐dried paprikas had the highest redness for reflected colour. The colour stability results showed drastic overall colour change (ΔE) and decreased redness and ASTA units of the sun‐dried and oven‐dried paprikas after two and 5 days of UV exposure. Degradation of the smoked paprika colour parameters was progressive, and they showed less degradation even after 30 days. The evaluation of the antioxidant activity showed higher DPPH radical‐scavenging capacity in the smoked samples. The profiles of volatile phenolic compounds of the smoked samples are responsible for the differences in the antioxidant capacity. The great differences in colour stability and antioxidant activity make smoked paprika the best choice for use in the food industry. 相似文献

Foodborne intoxications caused by the consumption of fish and other products of marine origin contaminated with bacterial
pathogens are an ever-present threat, either due to bacteria and/or its metabolites. In addition, the rapid spoilage of seafood
due to microbial activity, results in high economic losses. The development of the microbiota in seafood products depends
on the microbiological ambience of capture, processing and storage, and the applied preservation method. Thus, pathogenic
and spoilage bacterial species in seafood may come from the indigenous microbiota of the aquatic ambience or are introduced
by contamination during processing. Rapid and accurate bacterial species identification is essential for an effective control
program to ensure safety and quality of either processed or minimally processed seafood. In the present work, matrix-assisted
laser desorption ionization-time of flight mass spectrometry was successfully applied to identify 26 bacterial strains isolated
from fresh fish and processed seafood samples. The approach was based on the comparison of unknown spectra to a reference
spectral library and demonstrated to be a fast and accurate technique for bacterial species differentiation, which can be
used for the rapid identification of foodborne pathogens and spoilage bacteria potentially present in products of marine origin. 相似文献

Samples of virgin olive oils (105) from seven Extremaduran olive varieties (Cacereña, Carrasqueña, Cornezuelo, Corniche, Morisca, Picual, and Verdial de Badajoz) in three stage of maturity (green, semi-ripe, and ripe) were collected and the alkane, alkene, and sesquiterpene contents determined. There were significant differences at the 0.01 probability level in most of the hydrocarbons, both by variety and by state of maturity. Discriminant analysis applied to 70 samples explained 72.3% of the variance between the different groups of varieties and allowed 90% of the samples to be classified according to their variety. The acceptability of the model was verified against the remaining 35 samples, giving a mean level of correct classification of 94%. 相似文献

2‐Hydroxyethylmethacrylate (HEMA) and acrylamide (AA) have been copolymerized via free radical mechanism, in the presence of 5 mol % of four different crosslinker systems, the symmetric ethylenglycoldimethacrylate (EGDMA), bisacrylamide (BIS), a mixture of EGDMA and BIS, and the asymmetric acrylamideethylenmethacrylate (METAA). The polymerizations have been monitored with a rheometer, exhibiting the gel obtained with the asymmetric METAA, an elastic modulus that is dramatically increased compared with those of the gels prepared with the other three crosslinker systems. A kinetic analysis using the terminal model has been used to build probabilistic surfaces that give information about how the crosslinker is incorporated into the network. This analysis shows a high dissimilarity between the reactions using the asymmetric and the mixture of symmetric crosslinkers, what has been correlated to the difference in modulus. © 2009 Wiley Periodicals, Inc. We report the development, design, and results of effectiveness and acceptability testing of a hydrating, nutritive, barrier-type hand cream designed for severely damaged skin (including skin damaged by dermatological problems). We tested different silicone derivatives and a water-in-oil (W/O) silicone emulsifier to produce organoleptic qualities that would increase consumer acceptance of this type of W/O emulsion. Pharmacotechnical and effectiveness tests were done to check the stability and preservation of the formulas, their usefulness in improving dry skin, and acceptance by users. The results of pharmacotechnical testing were optimal. Although no active principle aimed specifically at dermatological problems was present in the final formulas, users reported notable subjective improvements in cracking and scaling. 相似文献

The role of two common polymorphisms of enzymes involved in the metabolism of drugs and carcinogens was studied in relation to prostate cancer. The gene encoding one of these enzymes (NAT2) is located in an area where frequent allelic loss occurs in prostate cancer. Mutations at the genes CYP2D6 and NAT2 were analysed by allele-specific polymerase chain reaction and restriction mapping in DNA from 94 subjects with prostate cancer and 160 male healthy control subjects. Eleven prostate specimens were analysed for genotype and enzymatic activities NAT2, CYP2D6 and CYP3A by using the enzyme-specific substrates sulphamethazine and dextromethorphan. Enzyme activities with substrate specificities corresponding to NAT2, CYP2D6 and CYP3A are present in human prostate tissue, with mean +/-s.d. activities of 4.8+/-4.4 pmol min(-1) mg(-1) protein, 156+/-91 and 112+/-72 nmol min(-1) mg(-1) protein respectively. The Km values for the prostate CYP2D6 and CYP3A enzyme activities corresponded to that of liver CYP2D6 and CYP3A activities, and the CYP2D6 enzyme activity is related to the CYP2D6 genotype. The N-acetyltransferase, in contrast, had a higher Km than NAT2 and was independent of the NAT2 genotype. The CYP2D6 and CYP3A enzymes, and an N-acetyltransferase activity that is independent of the regulation of the NAT2 gene, are expressed in human prostate tissue. The presence of carcinogen-metabolizing enzymes in human prostate with a high interindividual variability may be involved in the regulation of local levels of carcinogens and mutagens and may underlie interindividual differences in cancer susceptibility. 相似文献
