The main objective of this study was to design gluten‐free breads containing chestnut and rice flour and xanthan–guar gum blend to be baked in infrared–microwave combination oven. Response surface methodology (RSM) was used to optimise gluten‐free bread formulations and processing conditions. Weight loss, firmness, specific volume and colour change of the breads were determined. Rice flour mixed with different proportions of chestnut flour and different emulsifier contents were used to prepare breads. The gluten‐free formulations were baked using different upper halogen lamp powers, microwave powers and baking time which were varied from 40% to 80%, 30% to 70% and 9 to 17 min, respectively. Gluten‐free breads and wheat breads baked in conventional oven were used for comparison. Breads containing 46.5% chestnut flour and 0.62% emulsifier and baked using 40% infrared and 30% microwave power for 9 min had statistically comparable quality with conventionally baked ones.  相似文献

The aim of this study was to produce a functional emulsion product enriched with anchovy (Engraulis encrasicholus) oil. Tomato and garlic extracts were added to perform oxidative stability. Tomato and garlic extracts were added to avoid oxidative degradation in such a product. The plant extracts delayed the formation of primary and secondary oxidation products. The value of conjugated diens (3.07 ± 0.15) was markedly low in the emulsions containing garlic extract at the end of the storage period. The p–Av values of the emulsions treated with the extracts were significantly (P < 0.01) lower than untreated samples. TBARS formation increased slightly, therewithal statistical difference was not observed in the samples treated with garlic extract during the storage. Strong odour and flavour of the garlic suppressed the odour of fish oil. The panellists preferred the flavour, odour and aroma characteristics of the samples treated with the extracts.  相似文献

Pervious concrete systems are developing stormwater management technologies which also have wintertime benefits as melting snow may percolate into the system instead of refreezing on the surface. Enhancing the surface microtexture of pervious concrete may also be beneficial in preventing icing or slipping by pedestrians. This research explored different surface treatments on pervious concrete specimens both qualitatively from personal judgements, and quantitatively through static friction measurements with a spring balance with respect to “slipperiness”. The tests were performed on both dry and wet specimens. One aim was to determine whether the spring balance method may be a simple test for comparing surface treatments on pavement samples with little surface area such as laboratory specimens or sidewalk sections. The other purpose was to make a preliminary decision of which surface treatments to use for a sidewalk installation for future studies on wintertime performance. The reliability analysis of the spring balance results showed that there was high operator consistency. In addition, there was a high level of consistency on average results between the quantitative and qualitative methods. This implies that the spring balance test may be an acceptable methodology for comparative analyses with respect to static friction.  相似文献

In this study, a new thermosensitive material was proposed as a carrier for gene delivery. The thermosensitive submicron particles were synthesized by the dispersion copolymerization of N-isopropylacylamide (NIPA) with a relatively new, cationic comonomer, N-3-dimethylaminopropylmethacrylamide (DMAPM) with higher ionization ability with respect to the commonly used cationic comonomers. To achieve particle sizes smaller than 1 microm, suitable for gene delivery, the total monomer concentration in the dispersion copolymerization was kept at a sufficiently low level. The size of poly(NIPA-co-DMAPM) particles was determined as 454 nm, by AFM in dry state. The poly(NIPA-co-DMAPM) particles showed both temperature and pH sensitivity in the aqueous media.The plasmid DNA adsorption onto the thermosensitive cationic particles was investigated at different temperatures and pHs. The adsorbed amount of plasmid DNA onto the particles was significantly increased by the introduction of cationic comonomer. The equilibrium plasmid DNA adsorptions up to 13 mg/g dry particles were achieved at physiological pH. Approximately 36% w/w of adsorbed plasmid could be desorbed from the cationic nanolatex. The results of biocompatibility studies performed with mouse fibroblast cells showed the suitability of thermosensitive cationic particles for intended application.  相似文献

RAPD analysis with four primers was used to examine the genetic relationship among 432 strains of Listeria monocytogenes isolated from clinical and veterinarian cases of listeriosis, dairy, vegetable, meat- and fish-based food items, environmental samples and samples collected from one transport terminal, one poultry-processing company and four Atlantic salmon-processing plants. The purpose of the study was to determine whether clinical isolates belonged to a specific genetic group, whether links could be made between food groups and clinical cases and whether specific genetic groups were associated with specific food products or processing units. There was great genetic variability among the isolates, which produced a total of 141 RAPD composites based on the RAPD analysis with four primers. The RAPD composites divided in two major clusters and clinical isolates were evenly distributed in both of them. None of the isolates from food products had the same RAPD composite as isolates from human patients, thus, no particular food commodity could be linked to clinical cases. Each food-processing environment was contaminated with more than one RAPD composite and the genetic variability found within each company was, in most cases, of approximately the same magnitude as the variability found when considering all the samples. In each plant, one or a few types persisted over time, indicating the presence of an established in-house flora. Our results indicate that most of the analysed cases of listeriosis were sporadic and, further, that these cases cannot be traced to a few specific food sources. We also found that no particular RAPD composite was better suited for survival in specific food types or food-processing environments, indicating that although differences may be found in virulence properties of individual strains, all L. monocytogenes must be treated as potentially harmful.  相似文献

In this study the usage of eye fluid refractive index as a freshness indicator for sardine (Sardina pilchardus) was investigated. Eye fluid refractive index measurements and quality control analyses of sardine during storage at 0°C and +4°C were performed at 24h intervals. According to the sensory analysis results, the sardines stored at 0°C and +4°C had a shelf life of 6 and 4days, respectively. The changes in eye fluid refractive index values during storage at 0°C were not significant while the changes at +4°C were significant (p<0.01). TVB-N and TMA-N values significantly (p<0.01) increased. No microbiological growth was observed at 0°C, however the increase in microorganism counts was significant at +4°C. As a result, eye fluid refractive index measurements can be used as a quality criterion for sardine freshness, when stored at +4°C.  相似文献

Although WCO plays a crucial role for the economical production of biodiesel, free fatty acid (FFA) level in the nature of WCO cause saponification problems during transesterification. Acidic ion-exchange resins can be used to decrease WCO free fatty acid level. In this study, activities of resins (Amberlyst-15 (A-15), Amberlyst-35 (A-35), Amberlyst-16 (A-16) and Dowex HCR-W2) in direct FFA esterification were examined in the temperature range of 50–60 °C and the effect of catalyst amount (1–2 wt%) on FFA conversion was also analyzed. FFA conversion increased with increasing reaction temperature and catalyst amount. Order of catalytic activities was found as A-15 > A-35 > A-16 > Dowex HCR-W2. This was related to the size of average pore diameters and magnitude of BET surface area.  相似文献

An experimental salt gradient solar pond having a surface area of 3.5 × 3.5 m2 and depth of 2 m has been built. Two covers, which are collapsible, have been used for reducing the thermal energy loses from the surface of the solar pond during the night and increasing the thermal efficiency of the pond solar energy harvesting during daytime. These covers having reflective properties can be rotated between 0° and 180° by an electric motor and they can be fixed at any angle automatically. A mathematical formulation which calculates the amount of the solar energy harvested by the covers has been developed and it is adapted into a mathematical model capable of giving the temporal temperature variation at any point inside or outside the pond at any time. From these calculations, hourly air and daily soil temperature values calculated from analytical functions are used. These analytic functions are derived by using the average hourly and daily temperature values for air and soil data obtained from the local meteorological station in Isparta region. The computational modeling has been carried out for the determination of the performance of insulated and uninsulated solar ponds having different sizes with or without covers and reflectors. Reflectors increase the performance of the solar ponds by about 25%. Finally, this model has been employed for the prediction of temperature variations of an experimental salt gradient solar pond. Numerical results are in good agreement with the experiments.  相似文献

Poly(l ‐lactide) (PLLA) is a bioabsorbable polymer with high stiffness and strength compared to the other commercially available bioabsorbable polymers. The properties of PLLA can be improved by straining, causing deformation‐mediated molecular orientation. PLLA tubes were biaxially strained above their Tg for improvement of their strength, in a two‐step process (sequential straining). Mechanical properties and crystal morphology were investigated as a function of processing strain rate and temperature. DSC revealed that a low processing strain rate allows molecular chain relaxation in the direction of strain and the crystallization is suppressed. Faster strain rates on the other hand suppress chain relaxation, and results in crystalline tubes. The mechanical properties are influenced by both processing strain rate and temperature. Low strain rates allow chain relaxation resulting in the lowest strength and stiffness, whereas a larger stiffness and strength is achieved by increasing strain rate and temperature.
