To prolong the shelf life of burrata cheese, we evaluated the effects of lysozyme and EDTA disodium salt (Na2-EDTA) with or without modified-atmosphere packaging (MAP) conditions. In particular, 3 concentrations of enzyme were combined with packaging in air and under MAP (95:5 CO2:N2). The decline in quality of burrata cheese stored at 8°C was assessed by monitoring microbiological and sensory quality, in addition to pH and headspace composition. The combination of lysozyme/Na2-EDTA and MAP prolonged cheese shelf life, especially at the highest lysozyme concentration. In particular, the tested strategy was effective against microbial spoilage phenomena that appeared to be the quality factor that determine product unacceptability. 相似文献

Diamond is considered as a very promising material for the development of devices for radiation detection. Unlike other conventional photoconductive detectors diamond-based devices should provide high discrimination between UV and visible radiation. In this work we present the electro-optical properties of devices based on randomly oriented diamond films, synthesized in a microwave plasma enhanced chemical vapor deposition reactor. A comparative study on devices with coplanar interdigitated Cr/Au electrodes (with different interelectrode pitches) made of films grown simultaneously on intrinsic and p-doped silicon (100) substrates has been performed. The chemical-structural, morphological, electrical and optical properties of ROD films have been studied. In particular, the optical response has been measured in air using a Xe flash lamp coupled with an optical quartz fiber and a properly tailored front-end electronics based on a charge sensitive amplifier. The aim of the work was to manufacture, using a laboratory‐scale film production pilot plant, nanocomposite polylactic acid (PLA) films added with Cloisite 30B clay‐derived nanofiller having one nanometric dimension, and to characterize and to assess the migration of the obtained systems, in view of food packaging applications. The study demonstrated that it is possible to obtain nanocomposite PLA films with intercalated/exfoliated morphology of the dispersed layered nanofiller using conventional film production technologies. With increasing the silicate content in the film, the developed systems show a marked improvement of the mechanical performance, with a rise in the modulus and in the elongation at break with respect to the unfilled PLA, a significant lowering in the oxygen permeability and a slight increase in the surface wettability, without given significant alteration of film transparency and chromatic perception. Compared with the unfilled PLA, no significant changes can be observed about the migration behaviour of the nanocomposite PLA systems. In fact, both the overall migration and the specific migration, measured as lactic acid, remain always well below the applicable generic specific migration limit of 60 mg/kg food (10 mg/dm2) of the Regulation EU 10/2011. The radial neutron camera (RNC) will provide the spatial distribution and the total strength of the ITER neutron source (emissivity profile and fusion power) by means of collimated neutron measurements. Line-integrated neutron spectral measurements can also provide information on the ion temperature profile. The present design of the RNC consists of two collimating structures for a full coverage of the plasma: 36 collimated lines of sight (LOS) distributed in three different planes view the plasma core (ex-port system) and nine collimated LOS view the plasma edge (in-port system).The RNC design is based on the combined use of the MCNP Monte Carlo code and a software tool performing asymmetric Abel inversion of simulated measured neutron signals (MSST). Neutron and γ-ray transport calculations are performed with MCNP using a 3D RNC model to determine the signal/noise for each RNC channel and the spectra at the detectors. The MSST code is used to check the RNC compliance with the ITER measurement requirements for the neutron emissivity profile.In the present paper the improvement of the hard variance reduction technique applied to the MCNP neutron source (consisting in sampling neutrons only from plasma regions contributing to the detector signal) is presented and the following issues are analyzed: the possibility of reducing the length of the ex-port collimators (resulting in a significant reduction of the overall RNC dimension and weight); options for the reduction of the dose due to the neutron streaming through the RNC cut-outs in the blanket shielding module; the integration of a γ-ray detection system in the RNC by partially filling the collimators with a neutron absorbing material (LiH). 相似文献

Microwave-assisted sample digestion and inductively coupled plasma-mass spectrometry (ICP-MS) were considered for exploring major and trace elements in the Mediterranean Sepia ink. The present work aims to (a) fully validate the employed ICP-MS method and compare the Hg determinations by ICP-MS with those obtained by a direct mercury analyzer (DMA) and (b) interpret quantitative data by chemometrics and perform a risk/benefit analysis for assessing the quality/safety of Sepia ink. DMA gave Hg determinations similar to the ICP-MS counterpart (p > 0.05), confirming its reliability for food analysis. Sepia ink demonstrated to be both a reservoir of “healthy” elements and a sink of potential toxic metals. In fact, a good contribution of major and essential trace metals to the established RDAs was revealed, and, at the same time, potentially toxic elements showed to accumulate depending upon the environmental conditions, although not representing a risk for human consumers. 相似文献

The individual and interactive effects of temperature, pH and NaCl on the aminopeptidase-types N and A and proline iminopeptidase activities of several strains of non-starter lactic acid bacteria (NSLAB) were studied by quadratic response surface methodology. The effects on enzyme activities depended on the interactions among the independent variables, species, strains within species and type of activity. With few exceptions, the aminopeptidases N and A and proline iminopeptidase activities of Lactobacillus casei ssp. pseudoplantarum and Lb. curvatus were strongly inhibited by the hostile cheese-like conditions, while the peptidases of Lb. casei ssp. casei and especially Lb. plantarum were tolerant or not affected by variations in pH and showed the least sensitivity to NaCl or even a requirement for NaCl for the optimal activity. Strains which maintained relatively high activity under cheese-like conditions were selected within the species. The proline iminopeptidase of Lb. casei ssp. casei 2107 as well as Lb. plantarum 2788 and 2789 greatly tolerated the interactions among the independent variables. At 10°C in the presence of 3.750% NaCl and independent of the pH, the PepN activity of Lb. plantarum 2788 and 2789 was at least 33% of the maximum determined at pH 7.5 and 35°C. Proline iminopeptidase activity was most sensitive to the individual and interactive variations in temperature, pH and NaCl. On the other hand, aminopeptidase-type A activity seemed to be least sensitive to cheese-like conditions. 相似文献

The biological activities of a series of mono- and oligosaccharides (beta-xylosides and alpha-glucosides) of 9-fluorenylmethanol were investigated together with mono-beta-galactoside and beta-glucoside of this aglycone, produced by biocatalytic routes. By using marine glycoside hydrolases and inexpensive donors such as maltose or xylan, access to mono-alpha-glucoside or mono-beta-xyloside of 9-fluorenylmethanol was obtained. Additionally, interesting polyglycoside derivatives were isolated. Biological testing indicated that in vitro treatment with these carbohydrate derivatives may influence the balance of cytokines in the environment of human peripheral blood mononuclear cells (PBMC), restricting the harmful effect of herpes simplex type 2 replication. In fact, these carbohydrate derivatives tested in WISH cells did not show any significant antiviral activity. 相似文献

In this continuation of our research on derivatives containing the stilbene privileged structure or that are derived from it, we report the results of further studies carried out on the previously initiated collection of compounds. We used a parallel synthetic approach to rapidly obtain small sets of compounds and started the annotation of the library in progress by calculating some physicochemical properties to be eventually correlated with biological activities. A pharmacophore for the antiproliferative activity was also built to summarize the features of the library. We evaluated the antiproliferative and pro-apoptotic activities of all compounds as well as the cell-cycle effects of some representative compounds. After in-depth investigations, 3'-phenyl-[1,1';4',1']terphenyl-4,3',5'-triol showed the most interesting biological profile, as it interferes with cell-cycle progression at the G(1)-->S transition, acting on retinoblastoma phosphorylation and inducing cell differentiation. 相似文献
