The purpose of this study was to investigate the effects of pasture-based versus indoor total mixed ration (TMR) feeding systems on the chemical composition, quality characteristics, and sensory properties of full-fat Cheddar cheeses. Fifty-four multiparous and primiparous Friesian cows were divided into 3 groups (n = 18) for an entire lactation. Group 1 was housed indoors and fed a TMR diet of grass silage, maize silage, and concentrates; group 2 was maintained outdoors on perennial ryegrass only pasture (GRS); and group 3 was maintained outdoors on perennial ryegrass/white clover pasture (CLV). Full-fat Cheddar cheeses were manufactured in triplicate at pilot scale from each feeding system in September 2015 and were examined over a 270-d ripening period at 8°C. Pasture-derived feeding systems were shown to produce Cheddar cheeses yellower in color than that of TMR, which was positively correlated with increased cheese β-carotene content. Feeding system had a significant effect on the fatty acid composition of the cheeses. The nutritional composition of Cheddar cheese was improved through pasture-based feeding systems, with significantly lower thrombogenicity index scores and a greater than 2-fold increase in the concentration of vaccenic acid and the bioactive conjugated linoleic acid C18:2 cis-9,trans-11, whereas TMR-derived cheeses had significantly higher palmitic acid content. Fatty acid profiling of cheeses coupled with multivariate analysis showed clear separation of Cheddar cheeses derived from pasture-based diets (GRS or CLV) from that of a TMR system. Such alterations in the fatty acid profile resulted in pasture-derived cheeses having reduced hardness scores at room temperature. Feeding system and ripening time had a significant effect on the volatile profile of the Cheddar cheeses. Pasture-derived Cheddar cheeses had significantly higher concentrations of the hydrocarbon toluene, whereas TMR-derived cheese had significantly higher concentration of 2,3-butanediol. Ripening period resulted in significant alterations to cheese volatile profiles, with increases in acid-, alcohol-, aldehyde-, ester-, and terpene-based volatile compounds. This study has demonstrated the benefits of pasture-derived feeding systems for production of Cheddar cheeses with enhanced nutritional and rheological quality compared with a TMR feeding system. 相似文献

Polychlorinated biphenyls (PCBs) and polybrominated diphenyl ethers (PBDEs) were quantified in 67 high volume air samples taken concurrently in a forest and a clearing in southern Ontario, Canada from October 2001 to November 2002. Air concentrations were comparable between the two sites. Gaseous PCBs ranged from 6.4 to 150 pg x m(-3), and gaseous PBDEs ranged from below method detection limit (BDL) to 55 pg x m(-3) (with two extreme events up to 290 pg x m(-3)). Particulate PBDEs ranged from BDL to 40 pg x m(-3). Gaseous concentrations of PCBs and PBDEs were highly temperature dependent, suggesting a relatively strong influence of re-evaporation. Air concentrations of highly chlorinated PCBs in the forest were more temperature dependent than those in the clearing, whereas no difference was observed for the less-chlorinated PCBs. Forest filtering may have enriched highly chlorinated PCBs in the forest soil relative to the soil in the clearing, resulting in a higher contribution of re-evaporation for highly chlorinated PCBs at the forest. Compared to measurements conducted a decade earlier at a nearby site, PCB air concentrations were generally less temperature dependent, indicative of a reduction in the contribution of re-evaporation in the region. Furthermore, a significant correlation was found between temperature dependence and degree of chlorination, which had not been apparent in the previous study. This is presumably because depuration from soils occurred slower for highly chlorinated PCBs, resulting in their relatively higher abundance in terrestrial surfaces and, therefore, higher contribution from re-evaporation. Contrasting with the PCBs, the temperature dependence of PBDE air concentrations did not differ between congeners or between forest and clearing site. This could be a result of different usage and emission history: PCBs were banned approximately three decades ago, whereas PBDEs are currently still in use. The effects of high hydrostatic pressure treatment and the ability for survival, repair, and growth of three human pathogenic serotypes (O:1, O:3, O:8) of Yersinia enterocolitica were investigated in washed-curd model cheese made with pasteurized bovine milk. Samples were treated at 300, 400, and 500 MPa for 10 min at 20 degrees C and analyzed at 0, 1, 7, and 15 days to assess the viability of the Yersinia population. A long-term study (up to 60 days of ripening after high hydrostatic pressure treatment) was also undertaken. Treatments at 400 and 500 MPa caused maximum lethality, and only the treatment at 300 MPa showed significant differences (P < 0.05) between serotypes; the most baroresistant was O:3. Ability to repair and grow was not observed after 15 days of storage at 8 degrees C. Yersinia counts in untreated cheese samples also decreased below the detection limit at day 45 in the long-term study. These results suggest that the cheese environment did not allow recovery of injured cells or growth. A primary contributing factor to this effect seemed to be the low pH resulting from the production of lactic acid during cheese ripening. 相似文献

Evasion from first- and second-order streams in a watershed may be a significant factor in the atmospheric recycling of volatile pollutants such as mercury; however, methods developed for the determination of Hg evasion rates from larger water bodies are not expected to provide satisfactory results in highly turbulent and morphologically complex first- and second-order streams. A new method for determining the Hg evasion rates from these streams, involving laboratory gas-indexing experiments and field tracer tests, was developed in this study to estimate the evasion rate of Hg from Gossan Creek, a first-order stream in the Upsalquitch River watershed in northern New Brunswick, Canada. Gossan Creek receives Hg-contaminated groundwater discharge from a gold mine tailings pile. Laboratory gas-indexing experiments provided the ratio of gas-exchange coefficients for zero-valent Hg to propane (tracer gas) of 0.81+/-0.16, suggesting that the evasion mechanism in highly turbulent systems can be described by the surface renewal model with an additional component of enhanced gas evasion probably related to the formation of bubbles. Deliberate field tracer tests with propane and chloride tracers were found to be a reliable and practical method for the determination of gas-exchange coefficients for small streams. Estimation of Hg evasion from the first 1 km of Gossan Creek indicates that about 6.4 kg of Hg per year is entering the atmosphere, which is a significant fraction of the regional sources of Hg to the atmosphere. 相似文献

Polybrominated diphenyl ethers (PBDEs) are widely used as additive flame retardants in plastics, soft furnishings, electrical and electronic equipment, and insulation in the indoor environment, and may be released indoors via volatilization or as dusts. The penta-and octa-brominated mixes are now banned in most parts of Europe, and phasing out of their use has recently begun in North America. This study follows a previous investigation into indoor air levels of PBDEs. House dust was analyzed from the family vacuum cleaners of 68 of the same 74 randomly selected homes, in Ottawa, Canada during the winter of 2002-2003. PBDEs, comprising on average 42% BDE-209, were found in all samples. The levels were log-normally distributed with a geometric mean sigmaPBDE of 2000 ng g(-1), and a median of 1800 ng g(-1) dust. The levels in dust did not correlate with questionnaire information on house characteristics. Correlations were found between pentamix congener levels in dust and in air from the same homes, but not for congeners of the more highly brominated mixes. Exposure scenarios are presented for mean and high dust ingestion rates, and compared against exposures from other pathways, for both adults and toddlers (6 months-2 years). Assuming a mean dust ingestion rate and median dust and air concentrations, adults would be exposed to ca. 7.5 ng sigmaPBDE d(-1) via the dust ingestion pathway, which represents approximately 14% of total daily exposure when compared to diet (82%) and inhalation (4%). However, for toddlers the equivalent intakes would be 99 ng d(-1), representing 80% of their daily PBDE exposure. At high dust ingestion rates these values increase to 180 ng d(-1) (80% daily intake) for adults and 360 ng d(-1) (89% daily intake) for toddlers. The data give a clearer picture of sources of PBDE exposure in the home environment and suggest that dust could be a significant exposure pathway for some individuals, particularly children. 相似文献

The aim of this study was to determine the effects of extraction temperature on the colour as well as on the phenolic and parthenolide content of feverfew (Tanacetum parthenium) aqueous extracts, with a view to incorporating the extracts into a beverage. Results showed that extraction temperatures of 20–70 °C yielded dark-coloured extracts with low total phenol and a relatively high total tannin concentration. However, increasing the temperature to 75 °C produced lighter-coloured extracts with a significantly higher concentration of total phenols, lower total tannin fraction and maximum extraction of parthenolide. Higher extraction temperatures (80–100 °C) yielded suitably pale extracts rich in total phenols, but with progressively higher total tannin to non-tannin ratio and lower parthenolide content. The compromise temperature of 80 °C was found to provide extracts rich in parthenolide content, phenolic content and with a desirable colour, suitable for incorporation into a functional beverage. 相似文献

The extractable, protein-bound and fibre-bound condensed tannin (CT) concentrations in the leaves of tropical legumes grown in both Colombia and Northern Australia were determined by the butanol–HCl method, whilst extractable CT was also determined by the vanillin–HCl method. With the exception of Senna siamea all species contained CT. The very high CT concentration found in many plants growing in Colombia may have been partly due to soil fertility being much lower at the Colombian than the Northern Australian site. Acacia boliviana , Arachis pintoi , Centrosema latidens , Senna velutina and Gliricidia sepium contained <55 g total CT kg−1 DM, which suggests that they could comprise a reasonable proportion of ruminant diets. All other species grown in South America contained 100–240 g CT kg−1 DM, which suggests that they should only be fed in small amounts as supplements to dilute the CT concentration. Leucaena species and Calliandra calothyrsus grown in Northern Australia contained intermediate concentrations of total CT (60–90 g kg−1 DM). Most species contained 70–95% of total CT as extractable CT, with the exception of Flemingia macrophylla , where 60% was extractable and 40% bound, and Gliricidia sepium , where almost all the CT was bound to protein. Values for Flemingia macrophylla differed between accessions. Extractable CT determined with vanillin–HCl was generally higher than extractable CT determined with butanol–HCl. Three accessions showed negligible (<1 g kg−1 DM) extractable CT with butanol–HCl but 10–12 g extractable CT kg−1 DM with vanillin–HCl. Two accessions showed undetectable levels of extractable CT but substantial levels of protein-bound CT, illustrating the importance of using a bound CT method for identifying forages containing CT. Relative to freeze drying, oven drying of Leucaena species reduced the concentration of extractable CT and increased concentrations of bound CT. The significance of the results for the nutrition of ruminant livestock are discussed, including the possible roles of protein-bound and fibre-bound CT. 相似文献

Alcohol‐free beers (AFBs) are an attractive segment of the beer market both for the brewing industry and for consumers. While AFBs produced by arrested/limited fermentation often suffer from a lack of volatile compounds, beer flavour can be improved by yeast selection and optimization of fermentation conditions. The yeast selection strategy was demonstrated by comparing traditional lager yeast with selected cachaça yeast strains. Correspondingly, response surface methodology was used to enhance the formation of the flavour‐active volatile compounds by optimization of the fermentation conditions (original wort extract, fermentation temperature, pitching rate). Statistical analysis of the experimental data revealed the relative significance of process variables and their interactions. The developed quadratic model describing the responses of total esters and higher alcohols to changes in process variables was used to predict the ideal fermentation conditions in terms of flavour formation.
