Forty-eight gilts were submitted to a 30% restriction of feed (groups F and F1) or protein intake (group P) from 90 to 118 days of age, followed by realimentation from 119 to 168 days of age. Control pigs (C) were fed during the whole experiment according to a semi ad libitum scale. During realimentation all animals were fed according to semi ad libitum scale except pigs F1 which were fed ad libitum. Six pigs from each group were slaughtered at the end of restriction and realimentation. Restriction decreased the weight of musculus longissimus dorsi (MLD) and increased shear force. Restriction of feed intake depressed MUFA concentration and increased n-6/n-3 ratio while protein restriction decreased n-6/n-3 and PUFA:SFA ratios. Structure of fibers was not affected. After realimentation MLD mass was still lower in all previously restricted pigs, shear force was the lowest in F1 pigs. Only percentage of fast twich oxidative fibers was significantly greater in F1 pigs than in others. Significant correlations between parameters investigated during the study were found. 相似文献

This study investigated the influence of antioxidants of green tea aqueous extract (GTE) and green coffee aqueous extract (GCE) in concentrations of 0.25, 0.5 and 1 g·100 g? 1 on the nutritional properties of fine yeast pastry fried products such as donuts. Yeast donuts were made according to the traditional processing technology. In fried donuts physical properties (water activity, pH, hardness and color with the use of instrumental methods) as well as sensory properties were established. Moreover, quality of fat extracted from donuts (composition of fatty acids and peroxide value), content of acrylamide, composition of polyphenols and antioxidant activity were analyzed. Obtained extracts of GTE and GCE contained 26 and 41% of polyphenols, respectively, and the degree of polyphenol degradation during production of donuts was less when the dilution in dough was greater. Both tests indicated that the highest antioxidant activity had donuts with the highest analyzed addition of extract, however depending on the applied test or GTE or GCE had better antioxidant properties. Fatty acid composition was the most beneficial when the addition of GTE and GCE was on a level of 0.25 and 0.5 g·100 g? 1, respectively. In fried donuts relatively low amounts of acrylamide were obtained, amounting to 18–46 μg·kg? 1. Only the lowest addition of GTE and the highest addition of GCE caused an increase of acrylamide content in donuts, while all other levels of added extracts caused a decrease in the content of formed acrylamide. 相似文献

This study reports results of respirometric measurements of activated sludge biodegrading the substrate in wastewater originating from the following brewery plant production departments: malt house, brewhouse, fermentation house and racking house. The process was conducted at two temperatures: 10 and 20°C with activated sludge adapted to brewery wastewaters. The loading of activated sludge reached 0.25 g chemical oxygen demand per gram dry matter per day, which assured complete degradation of organic matter. The physicochemical characteristics of the wastewaters are provided. The study demonstrates a correlation between the site of wastewater generation, the specific character of a unitary technological process and the quality of the wastewater discharged to the sewage system, including biodegradability. Despite significant differences in the quality of the wastewaters, they were characterized by high biodegradability at a temperature of 10 and 20°C and by the C:N:P ratio being beneficial for biological treatment, irrespective of their source of origin. The aim of this study was to determine the effect of different roasting conditions, including temperature, humidity, and roasting air velocity on acrylamide contents in roasted Robusta coffee. In addition, acrylamide concentrations were correlated with the degradation of coffee bean polyphenols and its antioxidant activity. In the process of roasting in a quarter-technological scale apparatus used temperatures ranged from 190 to 216°C. Dry or moist air at a velocity of 0.5 or 1 m s?1 was used. Beans were roasted to achieve optimal sensory properties. The increase of roasting air velocity regardless of its temperature resulted in the intensification of acrylamide formation. The increase of humidity of roasting air caused a reduction of acrylamide formation, but only at the highest used roasting temperature. However, the modification of roasting conditions to achieve a drop in acrylamide concentration resulted in increased degradation of polyphenols and/or deterioration of antioxidant activity. The optimal roasting parameters were: Temperature 203°C, dry air, and low velocity of roasting air. The objective of the work was to elucidate the chemical composition of fractions of oil extracts obtained during the supercritical extraction on a semi‐industrial scale from strawberry (Fragaria x ananassa Duch.), chokeberry [Aronia melanocarpa (Michx.)], and raspberry (Rubus idaeus L.) seeds from industrial press cake. The oil extracts differed in terms of their content of bioactive components: carotenoids, tocopherols, chlorophylls, and fatty acids. Raspberry seed oil was the richest source of tocopherols (620.1–2166.7 mg kg?1) and α‐linolenic acid (above 37%). Chokeberry seed oil had the highest content of linoleic acid (above 70%), and α‐tocopherol (166.0–1104.8 mg kg?1). Strawberry oil was characterized by the highest content of chlorophylls and α‐linolenic acid (above 30%). It was showed that the oil fraction collected at the beginning of extraction is characterized by a high acid value, which requires purification steps to be used for food purposes.
Practical applications
Strawberry, raspberry, and chokeberry by‐products left over from the production of concentrated juice are a valuable source of oils rich in n‐3 and n‐6 polyunsaturated fatty acids, tocopherols, and carotenoids. The research showed that the fractionation of extracts in the course of supercritical extraction leads to oils with varying amounts of different bioactive compounds, and thus to products with potentially wide applications. Seeds oils have high potential utility as a source of unconventional oil for cosmetic and pharmaceutical sectors and biodiesel. The in vivo antioxidant activity of a quantified leaf extract of Cynara scolymus (artichoke) was studied. The aqueous artichoke leaf extract (ALE), containing 1.5% caffeoylquinic acid with chlorogenic acid being most abundant (0.30%), and luteolin‐7‐O‐glucoside as major flavonoid (0.15%), was investigated by evaluating the effect on different oxidative stress biomarkers, after 3 wk oral supplementation in the streptozotocin‐induced diabetic rat model. Apart from two test groups (0.2 g ALE/kg BW/day and 1 g ALE/kg BW/day, where BW is body weight), a healthy control group, untreated oxidative stress group, and vitamin E treated group (positive control) were included. A 0.2 g/kg BW/day of ALE decreased oxidative stress: malondialdehyde and 8‐hydroxydeoxyguanosine levels significantly diminished, whereas erythrocyte glutathione levels significantly increased. A 1.0 g/kg BW/day ALE did not show higher antioxidant activity. 相似文献
