ABSTRACT

The cleaning behavior of a soil with physical properties that depend on the wetting time is studied experimentally via the local phosphorescence detection method and simulated numerically in fully developed plane channel flow for Reynolds numbers up to 30,000. A computationally inexpensive general cleaning model is proposed, adopting an existing removal model and coupling it to the turbulent flow field. The influence of the soil on the flow is neglected and the transient behavior of the soil during cleaning is modeled in the form of a transient Dirichlet boundary condition. This approach is innovative for computational fluid dynamics of this phenomenon. The way of determining the model parameters from the experiment is described. The comparison of the simulation results with experimental data reveals very good suitability of the model in the case of a starch soil. A similar good agreement is found for data for a model protein foulant in tube flow from the literature.  相似文献

Abstract

The propagation of optical vortex beams obstructed by a knife edge is investigated. The intensity profile shows a characteristic rotation around the beam axis which can be used to determine the absolute handedness of the vortex. Heteroaggregated oil‐in‐water (O/W) emulsions formed by targeted combination of oppositely charged emulsion droplets were proposed to be used for the modulation of physical properties of food systems, ideally achieving the formation of a particulate 3‐dimensional network at comparably low‐fat content. In this study, rheological properties of Quillaja saponins (QS), sugar beet pectin (SBP), and whey protein isolate (WPI) stabilized conventional and heteroaggregated O/W emulsions at oil contents of 10% to 60% (w/w) were investigated. Selected systems having an oil content of 30% (w/w) and different particle sizes (d43 ≤ 1.1 or ≥16.7 μm) were additionally subjected to chemical (genipin or glutaraldehyde) and thermal treatments, aiming to increase network stability. Subsequently, their rheological properties and stability were assessed. Yield stresses (τ0) of both conventional and heteroaggregated O/W emulsions were found to depend on emulsifier type, oil content, and initial droplet size. For conventional emulsions, high yield stresses were only observed for SBP‐based emulsions (τ0,SBP approximately 157 Pa). Highest yield stresses of heteroaggregates were observed when using small droplets stabilized by SBP/WPI (approximately 15.4 Pa), being higher than those of QS/WPI (approximately 1.6 Pa). Subsequent treatments led to significant alterations in rheological properties for SBP/WPI systems, with yield stresses increasing 29‐fold (glutaraldehyde) and 2‐fold (thermal treatment) compared to untreated heteroaggregates, thereby surpassing yield stresses of similarly treated conventional SBP emulsions. Genipin‐driven treatments proved to be ineffective. Results should be of interest to food manufacturers wishing to design viscoelastic food emulsion based systems at lower oil droplet contents.  相似文献

This work aimed to optimize the extraction of an extracellular protease produced by the cold-adapted yeast Rhodotorula mucilaginosa L7 using aqueous two-phase systems (ATPS) comprising polyethylene glycol (PEG) and sodium citrate or sodium tartrate. First, the biocompatibility of the phase forming agents was assessed. The results obtained with PEG-2000, PEG-4000, and PEG-6000 demonstrated that even at large PEG concentrations (32 wt%) the protease maintains its activity after 3 h of reaction, whereas an increase in salt concentration provokes a gradual decrease in protease stability. Subsequently, the partitioning of the protease in both types of ATPS was assessed, evaluating the effect of temperature, molecular weight, and concentration of PEG on protease purification, using two 23-full factorial designs. The best partitioning conditions were obtained in PEG-6000/sodium tartrate-based ATPS, at 30ºC (with a yield of 81.09 ± 0.66% and a purification factor of 2.51 ± 0.03). Thus, considering the biodegradable characteristics of the system, the PEG/sodium tartrate ATPS is a viable and economic low-resolution step in protease purification, with a strong potential for future industrial application.  相似文献

An interfacial engineering technology, based on the electrostatic deposition of charged polyelectrolytes onto surfaces of oppositely charged templates is reviewed with an emphasis on practical applications in the food, pharmaceutical and personal care industries. On interfaces of disperse systems consecutively deposited polymers provide major advantages in terms of physical and chemical stability of dispersions against superimposed stresses (pH, temperature, ionic strength, freezing, chilling, dehydration, lipid oxidation). The controlled deposition of multiple layers allows for a controlled and triggered release of incorporated functional components. This review highlights the basic principles of the layer‐by‐layer (LbL) electrostatic deposition method as well as some major advantages and drawbacks of this approach. An overview of several systems that can be used as templates for the deposition including emulsion droplets, liposomal vehicles, colloidal aggregates, and planar surfaces is given. Suitable substrates for the deposition are presented with a focus on charged biopolymers such as proteins or polysaccharides since they play an essential role in the formulation and stabilization of food, pharmaceutical and personal care applications. Manufacturing of chemical‐pharmaceutical products is moving increasingly fast on a global scale. Therefore, developing and starting up production facilities fast, with high quality, and at reasonable costs has become extremely challenging. Engineering concepts like modularization, standardization and simultaneous/parallel engineering are discussed as methods for speeding up process design and filing for regulatory approval.
