This study aimed at characterizing the sensory quality of Italian PDO dry-cured Parma, San Daniele and Toscano hams, applying a multi-disciplinary approach. Ham sensory profile as well as physico-chemical, aromatic, morphological and textural characteristics was investigated. There was a great difference between Toscano ham and Parma and San Daniele hams, which were more similar even though differentiated. Toscano ham showed higher scores for pork-meat odor, saltiness, dryness, fibrousness and hardness; accordingly, this ham was described by a high NaCl content and by high values of instrumental hardness, cohesiveness, gumminess and chewiness. Parma ham was characterized by a cured flavor, whereas San Daniele ham showed a wider fatty area and higher pH values. Parma and San Daniele hams were also described by higher values of sweetness, RGB color values and water activity. Sensory characteristics evaluated by trained assessors were correlated to instrumental measures, indicating that instrumental devices can be effectively applied for dry-cured ham characterization.  相似文献

In this study a threshold for fatigue crack propagation as a function of crack length is defined from a depth given by the position d of the strongest microstructural barrier to crack propagation, which defines the plain fatigue limit. The material threshold is estimated from the plain fatigue limit ΔσeR, the position d of the strongest microstructural barrier and the threshold for long cracks, ΔKthR. The threshold for eight different materials for which experimental results can be obtained from the literature was estimated. Good agreement was observed in all cases. Some quantitative analyses of the fatigue propagation behavior of short cracks are carried out and discussed.  相似文献

The foundations and implementation of a genetic algorithm (GA) for instrumentation purposes are presented in this paper. The GA constitutes an initialization module of a decision support system for sensor network design. The method development entailed the definition of the individual’s representation as well as the design of a graph-based fitness function, along with the formulation of several other ad hoc implemented features. The performance and effectiveness of the GA were assessed by initializing the instrumentation design of an ammonia synthesis plant. The initialization provided by the GA succeeded in accelerating the sensor network design procedures. It also accomplished a great improvement in the overall quality of the resulting instrument configuration. Therefore, the GA constitutes a valuable tool for the treatment of real industrial problems.  相似文献

The behavior of SiC ceramic joints brazed with commercially available Incusil ABA (Ag‐32.25Cu‐12.5In‐1.25Ti, in wt.%) was characterized especially with respect to the mechanical performance at temperatures up to 550°C using four‐point bending and torsional shear tests. The failure mechanisms with changing temperature were investigated with the aid of fractography. Additionally, the microstructure of brazed specimens was characterized in detail by high resolution scanning electron microscopy. The test geometry and setup for the high temperature torsional shear test is presented. The change in mechanical behavior of the joints as a function of temperature is shown and discussed. The brazed joints interestingly showed that flexural bending strength was maintained with only a small decrease up to 300°C. Above 300°C, the bending strength decreased much faster. For the first time, this joint system was characterized in torsional shear test at temperatures up to 550°C to achieve the intrinsic shear strength values. Very strong joints were achieved, resulting in failure through the ceramic base materials up to (torsional shear) testing temperatures of 400°C. The results indicate that SiC joints brazed with Incusil ABA exhibit excellent mechanical performance for applications up to 300°C.  相似文献

Oxygen–ozone (O2–O3) therapy is increasingly applied as a complementary/adjuvant treatment for several diseases; however, the biological mechanisms accounting for the efficacy of low O3 concentrations need further investigations to understand the possibly multiple effects on the different cell types. In this work, we focused our attention on fibroblasts as ubiquitous connective cells playing roles in the body architecture, in the homeostasis of tissue-resident cells, and in many physiological and pathological processes. Using an established human fibroblast cell line as an in vitro model, we adopted a multimodal approach to explore a panel of cell structural and functional features, combining light and electron microscopy, Western blot analysis, real-time quantitative polymerase chain reaction, and multiplex assays for cytokines. The administration of O2–O3 gas mixtures induced multiple effects on fibroblasts, depending on their activation state: in non-activated fibroblasts, O3 stimulated proliferation, formation of cell surface protrusions, antioxidant response, and IL-6 and TGF-β1 secretion, while in LPS-activated fibroblasts, O3 stimulated only antioxidant response and cytokines secretion. Therefore, the low O3 concentrations used in this study induced activation-like responses in non-activated fibroblasts, whereas in already activated fibroblasts, the cell protective capability was potentiated.  相似文献

The sonochemical degradation rate of Methylene Blue (MB) is markedly increased in the presence of Fe(Ill), a rather inexpensive reagent for the application of sonochemistry to wastewater treatment. The effect of Fe(lll) is due to a sonochemically induced Fenton reaction, where both reactants (Fe(ll) and H2O2) are sonochemically synthesized. Hydroperoxide/superoxide, generated upon sonochemical processes in aerated solution, is a key species involved in both Fe(lll) reduction to Fe(ll) and in the production of H2O2. The Fenton reaction between Fe(ll) and H2O2 then produces hydroxyl radicals, enhancing the degradation of MB. A further enhancement of the degradation of the substrate in the presence of Fe(lll) takes place upon addition of H2O2, which is likely to favor the Fenton process. Interestingly, H2O2 alone, in the absence of Fe(lll), has a very limited effect on the sonochemical degradation rate.  相似文献

Effects of genetic variants of the milk proteins, alpha S1-casein, beta-casein, kappa-casein and beta-lactoglobulin (beta-lg), on milk yield and composition, particularly the protein composition, were investigated in milk samples from 289 Jersey and 249 Friesian cows in eight commercial herds. Milk protein genotypes had no significant effect on yields over a complete lactation of milk and fat, but significant differences in fat content were detected for beta-casein (B, A1B, A2 greater than A1A2) and beta-lg (B, AB greater than A) variants. Significant differences between beta-lg variants were also found with total solids (B, AB greater than A), casein (B, AB greater than A), whey protein (A greater than AB greater than B) and beta-lg (A greater than AB, AC greater than B greater than BC) concentrations. Casein genotypes were not significantly different in total protein and casein concentrations but many differences were found in casein composition. alpha S1-Casein variants significantly affected alpha S1-casein (BC greater than B) and kappa-casein (B greater than BC) concentrations. beta-Casein variants affected concentration and proportion of beta-casein (A1B, A2B greater than A1, A1A2, A2, B), alpha S1-casein (A1, A2 greater than B) and kappa-casein (B greater than A2) and concentration of whey protein (A1 greater than most other beta-casein variants). kappa-Casein variants affected concentration and proportion of kappa-casein (B greater than AB greater than A), proportion of alpha S1-casein (A greater than AB greater than B) and concentrations of beta-lg (A greater than AB, B) and alpha-lactalbumin (A, AB greater than B). Differences in milk composition were found between breeds, herds and ages, and with stage of lactation. The potential use of milk protein genotypes as an aid in dairy cattle breeding is discussed.  相似文献

Cell walls of the commercial silicon carbide (SiC)‐based foams were decorated by one‐dimensional tin dioxide (SnO2) nanostructures. Thermal evaporation of SnO2 powder with the assistance of a Au catalyst in inert atmosphere caused the formation of SnO2 nanobelts on the pore surfaces. The room temperature (RT) ammonia (NH3) and nitrogen dioxide (NO2) gas sensing behaviors were investigated systematically in both dry and humid air atmosphere with/without UV activation. The results were compared to those for bare SnO2 and SiC. It was shown that SiC/SnO2 composite was efficient to detect low concentration of NH3 (10–50 ppm) and NO2 (1–5 ppm) under humid air and UV activation at RT.  相似文献
