Influence of nitrate, ascorbic acid, and nitrate reductase microorganisms on N-nitrosamine formation during Korean-style soysauce fermentation.

Traditional Korean soysauce samples were collected from households in Chinju, Gyeongnam, Korea and analysed for volatile N-nitrosamines. Five of 24 samples contained NDMA (range = 1.6-10.4 micrograms/l) which was the only volatile N-nitroso compound found. Soysauce made from well water contained NDMA more often (4 of 6 samples) than soysauce made from tap water (1 of 18). This suggests that the water source is a determinate in the NDMA content of soysauce, probably due to a higher nitrate content of well water. The source of salt used did not clearly influence NDMA content. Soysauce was prepared in the laboratory using traditional methods but with 0 to 400 mg/l nitrate and in some cases made 6.5 to 65 mM in ascorbic acid and fermented for 120 days. The NDMA content of the samples was positively correlated with increasing nitrate concentration. Nitrate at 400 mg/l resulted in an NDMA content of 203 micrograms/l. Ascorbic acid substantially inhibited NDMA formation. All samples contained large numbers of nitrate reductase-containing organisms (greater than 1 x 10(7) CFU/ml).

Preparation,structure and properties of transition metal trichalcogenides

In recent years, the transition metal trichalcogenides (TX₃) of Group IVB, VB and VIB have received much more attention because of the considerable diversity in their physical properties. The most striking feature of these compounds is that the structure here may be classified into three types depending on the number of different TX₃ chains present in the unit cell. Thus ZrSe₃, TaSe₃ and NbSe₃ are the representative compounds having one, two and three types of chain based on the different bond lengths for the (X₂)^2– pairs in the base of the TX₃ trigonal prismatic framework. A similar model is also applicable in the case of NbS₃, with the addition of a 2b-superstructure associated with the formation of niobium pairs. The chain structure also facilitates the process of intercalation which has been most effectively used in secondary batteries. These compounds exhibit the superconductivity phenomena and charge density wave, etc. and also find application in photoelectrochemical cells. An attempt has been made here to review the up-to-date chemistry of transition metal trichalcogenides related with their preparation, structure and properties such as physical and chemical, thermodynamic, electrical, magnetic and optical properties, intercalation and use in the photoelectrochemical cells. 93     

Nqr experiments on Sc-Y alloys at very low temperatures

We have performed Nuclear Quadrupole Resonance (NQR) experiments on an alloy of scandium and yttrium. We find that the characteristic resonance frequencies in zero external field are 50 percent larger than in pure scandium. This increase in frequency makes the Sc-Y alloy a better candidate for absolute thermometry below 500 µK. However, the spin-lattice relaxation time of this alloy is more than an order of magnitude longer than in the pure scandium. In addition, we have observed an abrupt increase in the Korringa constant for temperatures below 5mK.

Ultrafast all-optical switching in GaAlAs integrated interferometer in 1.55 mu m spectral region

The first observation is reported of ultrafast all-optical switching in an integrated asymmetric Mach-Zehnder interferometer, using the nonresonant nonlinearity in Ga/sub 0.82/Al/sub 0.18/As below half the bandgap. A relative switching fraction of more than 80% has been achieved using 330 fs pulses at around 1.55 mu m from a coupled-cavity mode-locked colour centre laser.<>
