BACKGROUND: Increasing global protein consumption has led to the demand for new sources of food protein, particularly plant sources. Many inexpensive but protein‐rich bean cultivars have not been well evaluated and are thus underutilised. In this study the physicochemical and functional properties of seeds of ten seem cultivars were assessed. RESULTS: In agreement with their sizes, seeds of Airet had the highest 1000‐seed weight and volume, while those of Bari had the lowest. In terms of proximate composition (g kg?1), protein content ranged from 240.08 (Ashina) to 292.63 (Puti), fat content from 31.47 (Goalgadda) to 38.40 (Puti), ash content from 32.80 (Puli) to 45.53 (Goalgadda) and fibre content from 21.90 (Tatulia) to 28.90 (Noldog). Hydration (g kg?1) and swelling (mL L?1) capacities ranged from 1688.60 and 1850.43 (Goalgadda) to 1999.40 and 2208.66 (Rupbhan) respectively. Similarly, cooking time (min) varied from 114 (Rupbhan) to 179 (Goalgadda). Lowest gelation concentration was in the range 80–100 g kg?1. Water and fat absorption capacities (g kg?1) ranged from 941.00 and 644.44 (Ashina) to 1043.33 and 749.26 (Puti) respectively. Foaming capacity and stability (mL L?1) ranged from 443 (Puli) to 635 (Puti) and from 314 (Ashina) to 643 (Rupbhan) respectively. CONCLUSION: Seeds of seem cultivars appear to be a promising food in terms of their protein content and functionality. Copyright © 2009 Society of Chemical Industry  相似文献

Catering businesses continue to be the most common setting for foodborne disease outbreaks. In a study of catering businesses in England and Wales, operational practices relating to the supply, preparation, and service of food in 88 businesses associated with outbreaks were compared with those practices at 88 control businesses. Operational practices did not differ significantly between case and control businesses but larger small medium-size enterprise (SME) businesses were more likely to be associated with foodborne disease outbreaks than were micro-SME businesses. Businesses associated with outbreaks of Salmonella infection were less likely to use local or national suppliers but instead used regional suppliers, especially for eggs. This practice was the only significantly independent operational practice associated with outbreaks of Salmonella infection. Regional egg suppliers also were more likely to be used by businesses associated with outbreaks attributed to food vehicles containing eggs. Businesses associated with egg-associated outbreaks were less likely to use eggs produced under an approved quality assurance scheme, suggesting that the underlying risk associated with using regional suppliers may relate to the use of contaminated eggs.  相似文献

Due to their capability for supporting high-peak powers, large-core hollow optical fibers may be used to deliver high-peak-power nanosecond pulses for the fluid flow measurement technique of particle image velocimetry [Meas. Sci. Technol. 16, 1119 (2005)]. One drawback of using such fibers for fluid flow measurements is that the output suffers from a speckled interference pattern due to the fiber's multimode nature, which can lead to a loss of spatial information and reduced data quality. Presented here is a technique to reduce the speckle contrast from these fibers when delivering nanosecond pulses. Significant smoothing of the output intensity distribution is demonstrated, giving an improved source of illumination for fluid flow measurements and other imaging techniques requiring pulsed laser illumination.  相似文献

Lack of sulphur nutrition during potato cultivation has been shown to have profound effects on tuber composition, affecting in particular the concentrations of free asparagine, other amino acids and sugars. This is important because free asparagine and sugars react at high temperatures to form acrylamide, a suspect carcinogen. Free amino acids and sugars also form a variety of other compounds associated with colour and flavour. In this study the volatile aroma compounds formed in potato flour heated at 180 °C for 20 min were compared for three varieties of potato grown, with and without sulphur fertiliser. Approximately 50 compounds were quantified in the headspace extracts of the heated flour, of which over 40 were affected by sulphur fertilisation and/or variety. Many of the 41 compounds found at higher concentrations in the sulphur-deficient flour were Strecker aldehydes and compounds formed from their condensation, whereas only one compound, benzaldehyde, behaved in the same way as did acrylamide and was found at higher concentrations in the sulphur-sufficient flour. The adhesive fracture energy, G1c, of a model adhesive/adherend system, consisting of poly(methyl-methacrylate) plates bonded with a cyanoacrylate adhesive, has been evaluated using the Tapered Double Cantilever Beam and Blister test geometries. A refined Blister testing technique is described which, using relatively large diameter test plates [200mm], is capable of arresting the initial propagation of the-invariably less than naturally sharp-starter crack. This allows us to three subsequent Gc determinations for the same specimen from starter cracks of natural sharpness.

Adhesive fracture energy values determined for the model system using TDCB test pieces, 0.110±0.017 kJm-2, were in good agreement with those obtained for Blister specimens in which arrested cracks had been repropagated, 0.119±0.013 kJm-2. As is generally observed, values calculated from the initial propagation of starter cracks were somewhat higher for the TDCB specimens, 0.140±0.045 kJm-2. Corresponding values for the Blister tests were significantly higher with more scatter, 0.194±0.074 kJm-2.

It is concluded that meaningful G1C data are only obtained from the Blister test if values obtained from the propagation of the initial starter crack are discarded. No matter how carefully prepared, these flaws will be less than naturally sharp. The precracking technique described here detects crack growth and, by releasing the hydraulic pressure driving it, arrests a propagating crack before catastrophic failure can take place.  相似文献

The antiviral effect of natural interferon (IFN)-alpha on chronic hepatitis C virus (HCV) infection was estimated by determining quantitative changes in serum HCV-RNA compared with the serum alanine aminotransferase (sALT) improvement; the relationships of responses to IFN according to the dose and period of IFN therapy were defined to determine an appropriate IFN therapy protocol. Twenty-two patients with chronic hepatitis C were given natural IFN-alpha and in 16 (72.7%) patients the viraemia was suppressed during therapy. Five (27.7%) of them sustained the disappearance of HCV-RNA for more than 6 months after therapy accompanied with a prolonged sALT improvement. Pre-treatment viraemia levels in 5 complete responders with "complete suppression" of viraemia were significantly lower than in 11 patients with a transient loss or a decline of HCV-RNA. A favorable antiviral response was closely associated with a high total dose of IFN-alpha and a long duration of IFN therapy.  相似文献

PURPOSE: Magnetic resonance arteriography (MRA) of the lower extremities affords several possible advantages over conventional contrast arteriography (CA). We hypothesized that MRA of the infrageniculate vessels was sufficiently accurate to replace CA before revascularization procedures in patients with limb-threatening ischemia. METHODS: Fifty-three extremities in 49 patients were prospectively evaluated before attempted infrageniculate revascularization procedures with preoperative infrageniculate time-of-flight MRA (cost, $170/study) and standard contrast arteriography (cost, $1310/study) of the aortoiliac and runoff vessels. Independent operative plans were formulated based on the MRA and CA results before the revascularization procedure. Intraoperative, prebypass arteriograms (IOA; cost, $46/study) were obtained in all patients to confirm the adequacy of the distal runoff. The preoperative plans formulated by the results of MRA and CA were compared with the actual procedure performed based on the IOA. All arteriograms (CA, MRA, IOA) were reviewed after the operation by two independent reviewers, and the number of patent vessel segments and those with < 50% stenosis was determined. RESULTS: Revascularization procedures were performed in 44 of 53 extremities (83%), and amputation was performed in nine extremities (17%) because of an absence of a suitable bypass target. The CA and MRA were equally effective in predicting the optimal operative plans as determined from IOA (CA, 42 of 53 [77%] vs MRA, 40 of 53 [75%]; p = 0.79). More patent vessel segments were seen on CA than MRA (reviewer A, 229 vs 174, kappa = 0.32; reviewer B, 321 vs 314, kappa = 0.46); however, a comparable number of segments were seen if the vessels of the foot were excluded. The accuracy (reviewer A, 78% vs 68%, p = 0.003; reviewer B, 75% vs 67%, p = 0.003) and sensitivity (reviewer A, 69% vs 51%, p = 0.001; reviewer B, 68% vs 46%, p = 0.0001) of CA relative to IOA were superior to those of MRA, although the specificity was comparable (reviewer A, 86% vs 90%, p = 0.31; reviewer B, 82% vs 87%, p = 0.52). The combination of MRA and IOA would have resulted in the optimal operative plan in 51 of the 53 cases (96%) and was comparable with CA and IOA (53 of 53; 100%; p = 0.50). Substitution of MRA and IOA for CA and IOA could potentially have saved an estimated $60,420. CONCLUSIONS: The combination of MRA and IOA provides an accurate, cost-efficient strategy for visualization of the infrageniculate vessels before revascularization procedures.  相似文献

Telomerase is a specialized ribonucleoprotein polymerase that directs the synthesis of telomerase repeats at chromosome ends. Accumulating evidence has indicated that telomerase is stringently repressed in normal human somatic tissues but reactivated in cancers and immortal cells, suggesting that activation of telomerase activity plays a role in carcinogenesis and immortalization. In this work, the status of telomerase activity during the development of human thyroid cancer was determined using telomeric repeat amplification protocol (TRAP) in 14 nodular hyperplasia, 14 adenomas, 23 papillary carcinomas and 11 follicular carcinomas. Positive telomerase activity was detected in 2 of 14 nodular hyperplasias (14%), 4 of 14 adenomas (29%), 12 of 23 papillary carcinomas (52%) and 10 of 11 follicular carcinomas (91%). The cancers that are negative for telomerase activity are mostly in early stage (stage I or II). These results suggest that telomerase reactivation plays a role during the development of thyroid cancer.  相似文献
