Our objective was to evaluate the influence of lactate on in vitro redox stability and thermostability of beef, horse, pork, and sheep myoglobins. Lactate (200 mM) had no effect (P > 0.05) on redox stability at physiological (pH 7.4, 37 °C) and meat (pH 5.6, 4 °C) conditions. However, lactate increased (P < 0.05) metmyoglobin formation at a condition simulating stressed live skeletal muscle (pH 6.5, 37 °C). The redox stability of myoglobins at stressed live skeletal muscle and meat conditions was species–specific (P < 0.05). Myoglobin thermostability at 71 °C was lower (P < 0.05) in the presence of lactate compared with controls and was influenced (P < 0.05) by species. The results of the present study indicate that the effects of lactate on myoglobin are temperature and pH dependent. The observed lack of influence of lactate on myoglobin redox stability at meat condition suggests that the color stability of lactate-enhanced fresh meat is not due to direct interactions between the ingredient and the heme protein.  相似文献

Our objective was to assess the effects of lactate enhancement in combination with different packaging systems on beef longissimus lumborum and psoas major steak color. Strip loins and tenderloins (n = 16) were assigned to one of four injection treatments (non-injected control, water-injected control, 1.25%, and 2.5% lactate in the finished product). Steaks were individually packaged in either vacuum, high-oxygen (80% O2/20% CO2), or 0.4% CO (30% CO2/69.6% N2) and stored for either 0, 5, or 9 days at 1 °C. The L and a values of both the longissimus and psoas responded similarly to lactate, which at 2.5% darkened steaks (P < 0.05) packaged in all atmospheres and improved (P < 0.05) the redness of steaks packaged in high-oxygen. Packaging steaks in CO did not counteract the darkening effects of lactate. Nevertheless, CO improved (P < 0.05) color stability compared with high-oxygen packaging.  相似文献

We report on the synthesis and functional properties of nanoscale (50 nm) dense Y-doped zirconia (YDZ) electrolyte thin films by photon-assisted oxidation of Zr–Y precursor alloy thin films. Crystalline zirconia films with grain size of 5 nm were successfully grown at room temperature by oxidation under ultra-violet (UV) photon irradiation. Microstructure of the films was characterized by transmission electron microscopy. The electrochemical conductivity of UV grown YDZ electrolytes was investigated over a broad range of temperatures using Pt electrodes as a function of yttria doping concentration. The slightly lower electrical conductivity in UV grown films at intermediate temperature range (400–550 °C) is consistent with previous reports on oxygen defect annihilation under photo-excitation. Micro-fuel cells utilizing such ultra-thin YDZ membranes yielded 12 mW cm−2 power density at 550 °C. The results are of potential relevance in advancing low temperature ultra-thin oxide membrane synthesis for energy applications.  相似文献

Our objective was to evaluate the effect of chitosan on premature browning in refrigerated ground beef patties stored in different packaging systems. Ground beef patties (15% fat) with chitosan (1% w/w) or without chitosan (control) were individually packaged either in vacuum (VP), aerobic packaging (AP), carbon monoxide modified atmosphere packaging (LO-OX; 0.4% CO+19.6% CO(2)+80% N(2)), or high-oxygen modified atmosphere packaging (HI-OX; 80% O(2)+20% CO(2)), and stored for 0, 1, or 3 days at 1°C. At the conclusion of storage, raw surface redness was evaluated, patties were cooked to internal end-point temperatures of either 66°C or 71°C, and internal cooked color was measured. The incorporation of chitosan increased (P<0.05) the interior redness of patties stored in AP, VP, and LO-OX, but not in HI-OX. The results of the present study suggest that the incorporation of 1% chitosan minimizes premature browning in ground beef patties stored under AP, VP, and LO-OX.  相似文献

Beef strip loins (n=30) were divided into halves, and each half was assigned randomly to one of four injection enhancements: (1) non-enhanced control, (2) 3% pyruvate, (3) 3% succinate, and (4) 3% lactate. Steaks were cut and packaged in either vacuum, high oxygen (80% O(2)/20% CO(2)), or PVC. Color and lipid oxidation were measured on days 0, 5, and 13 of storage at 1°C. Enhancement had a significant effect on steak pH. On day 13 of storage, steaks enhanced with lactate, pyruvate, and succinate were less discolored (P<0.05) than control steaks in PVC and high oxygen. Enhancement darkened steaks (P<0.05) compared with control steaks. Succinate had the greatest and pyruvate had the least metmyoglobin-reducing activity (P<0.05). Lactate and pyruvate decreased the TBARS values of steaks packaged in PVC (P<0.05) whereas pyruvate was most effective for lowering lipid oxidation in high-oxygen packaging.  相似文献

The interconnections between energy, agriculture and environment in rural India are analyzed in this paper using a systems perspective. Rural areas of developing countries use biomass for fuel, fodder, fertilizer and other purposes, and it is necessary to understand the fuel-fodder–fertilizer relationships for optimal biomass allocation. The allocation is explored using a linear programming model. First, the model is validated by simulating it using data for the year 1990–1991. The model is then applied for the year 2000, and several scenarios are generated to obtain answers to various policy questions. The results show that it is necessary to increase fertilizer consumption, to increase efficiencies of cooking stoves, to improve livestock feed, and/or to decrease population growth for maximizing the revenue generated in the rural system of India. It shows that when the prices of fertilizers increase, a large increase in kerosene requirements can be expected. It also points to the necessity to increase kerosene consumption to reduce emissions (due to non-commercial fuels) and soil fertility loss. For example, the carbon dioxide emissions associated with the scenarios range from 137.50 to 62.50 million tons (in carbon equivalent terms) for the high and low cases, respectively. Correspondingly, kerosene consumption ranges from 0.18 to 15.49 kilotons (kT).  相似文献

We present a novel approach to optimally retarget videos for varied displays with differing aspect ratios by preserving salient scene content discovered via eye tracking. Our algorithm performs editing with cut, pan and zoom operations by optimizing the path of a cropping window within the original video while seeking to (i) preserve salient regions, and (ii) adhere to the principles of cinematography. Our approach is (a) content agnostic as the same methodology is employed to re‐edit a wide‐angle video recording or a close‐up movie sequence captured with a static or moving camera, and (b) independent of video length and can in principle re‐edit an entire movie in one shot. Our algorithm consists of two steps. The first step employs gaze transition cues to detect time stamps where new cuts are to be introduced in the original video via dynamic programming. A subsequent step optimizes the cropping window path (to create pan and zoom effects), while accounting for the original and new cuts. The cropping window path is designed to include maximum gaze information, and is composed of piecewise constant, linear and parabolic segments. It is obtained via L(1) regularized convex optimization which ensures a smooth viewing experience. We test our approach on a wide variety of videos and demonstrate significant improvement over the state‐of‐the‐art, both in terms of computational complexity and qualitative aspects. A study performed with 16 users confirms that our approach results in a superior viewing experience as compared to gaze driven re‐editing [ JSSH15 ] and letterboxing methods, especially for wide‐angle static camera recordings.  相似文献

We present a framework for non-asymptotic analysis of real-world multi-hop wireless networks that captures protocol overhead, congestion bottlenecks, traffic heterogeneity and other real-world concerns. The framework introduces the concept of symptotic scalability to determine the number of nodes to which a network scales, and a metric called change impact value for comparing the impact of underlying system parameters on network scalability. A key idea is to divide analysis into generic and specific parts connected via a signature—a set of governing parameters of a network scenario—such that analyzing a new network scenario reduces mainly to identifying its signature. Using this framework, we present the first closed-form symptotic scalability expressions for line, grid, clique, randomized grid and mobile topologies. We model both TDMA and 802.11, as well as unicast and broadcast traffic. We compare the analysis with discrete event simulations and show that the model provides sufficiently accurate estimates of scalability. We show how our impact analysis methodology can be used to progressively tune network features to meet a scaling requirement. We uncover several new insights, for instance, on the limited impact of reducing routing overhead, the differential nature of flooding traffic, and the effect real-world mobility on scalability. Our work is applicable to the design and deployment of real-world multi-hop wireless networks including community mesh networks, military networks, disaster relief networks and sensor networks.  相似文献
