Dry-salted mackerel and pink perch were stored at two temperatures: ambient (26·8 ± 3·3°C) and 2·5 ± 1°C. Changes in moisture content, salt content, water activity (aw), peroxide value (PV), free fatty acid content (FFA), total volatile base nitrogen (TVBN) content, halophilic bacterial count and sensory scores for overall acceptability were studied. Loss of moisture and absorption of salt were considerably higher in the products stored at ambient temperature. The decrease in aw was more pronounced at ambient temperature than at the lower temperature. Although the chemical indices of freshness (PV, FFA and TVBN) and the halophilic counts showed increasing trends, they were considerably lower in the products stored at the lower temperature. Sensory evaluation for overall acceptability indicated that storage at the lower temperature could considerably extend the shelf-life of salted fish.  相似文献

Radiocarbon analysis of atmospheric polycyclic aromatic hydrocarbons (PAHs) from three background areas in Sweden, Croatia, and Greece was performed to apportion their origin between fossil and biomass combustion. Diagnostic ratios of PAHs implied that wood and coal combustion was relatively more important in the northern European site, while combustion of fossil fuels was the dominant source of PAHs to the two central-southern European background sites. The radiocarbon content (delta14C) of atmospheric PAHs in Sweden ranged between -388 per thousand and -381 per thousand, while more depleted values were observed for Greece (-914 per thousand) and Croatia (-888 per thousand). Using a 14C isotopic mass balance model it was calculated that biomass burning contributes nearly 10% of the total PAH burden in the studied southern European atmosphere with fossil fuel combustion making up the 90% balance. In contrast, biomass burning contributes about 50% of total PAHs in the atmosphere at the Swedish site. Our results suggest that the relative contributions of biomass burning and fossil fuels to atmospheric PAHs may differ considerably between countries, and therefore, different national control strategies might be needed if a further reduction of these pollutants is to be achieved on a continental-global scale.  相似文献

Malaysian population widely consumes the cereal-based foods, oilseeds, nuts, and spices in their daily diet. Mycotoxigenic fungi are well known to invade food products under storage conditions and produce mycotoxins that have threat to human and animal health. Therefore, determining toxigenic fungi and aflatoxin B(1) (AFB1) in foods used for human consumption is of prime importance to develop suitable management strategies and to minimize risk. Ninety-five food products marketed in Penang, Malaysia were randomly collected from different supermarkets and were analyzed for presence of Aspergillus spp. by agar plate assay and AFB1 by enzyme-linked immunosorbent assay (ELISA). A. flavus was the dominant fungi in all foods followed by A. niger. Fifty-five A. flavus strains were tested for their ability to produce aflatoxins on rice grain substrate. Thirty-six (65.4%) strains out of 55 produced AFB1 ranging from 1700 to 4400 μg/kg and 17 strains (31%) produced AFB2 ranging from 620 to 1670 μg/kg. Natural occurrence of AFB1 could be detected in 72.6% food products ranging from 0.54 to 15.33 μg/kg with a mean of 1.95 μg/kg. Maximum AFB1 levels were detected in peanut products ranging from 1.47 to 15.33 μg/kg. AFB1 levels detected in all food products were below the Malaysian permissible limits (<35 μg/kg). Aspergillus spp. and AFB1 was not detected in any cookies tested. Although this survey was not comprehensive, it provides valuable information on aflatoxin levels in foods marketed in Malaysia.  相似文献

The optimum conditions for the production of coprecipitate from sheep milk were studied. The best percentage of calcium chloride added to milk was 0.2%, which resulted in a recovery of 97.5% of milk proteins. At low pH (4.5–5), the recovery of protein was low, but it increased at higher pH values (5.5–6.5); recovery was greatest at pH 6.5. The optimum heating temperature to obtain coprecipitate from sheep milk was 85–95°C. The functional properties of the sheep milk coprecipitate were studied. At pH values higher than 6, there were no differences between the solubility of sheep milk coprecipitate and sheep milk sodium caseinate, but the solubility of coprecipitate at pH values lower than 5 was relatively higher than those of the caseinate. At pH ≥6, the emulsion activity index (EAI) for emulsions of sheep milk coprecipitate and caseinate increased as pH increased; at all pH values, the EAI of the coprecipitate was higher than that of the caseinate. Sheep milk coprecipitate showed higher foaming ability and stability than sheep milk sodium caseinate.  相似文献

Moisture sorption data are useful in choosing suitable packaging material having a desirable water vapour barrier property in addition to determining the stability of the product. The sorption isotherms of milk burfi, one of the important Indian traditional milk-based sweets, using sugar and sugar substitutes were determined. The product was prepared replacing sugar with sorbitol, maltodextrin (MD)+polydextrose (PD), and PD alone, along with aspartame to give an equi-sweetness level compared to sugar. The isotherms followed typical sigmoidal shape, characteristic of sugar-rich products. The curve for burfi with sorbitol shifted to the left compared to that of sugar, whereas for those prepared with MD+PD or PD, the curves are similar to that of burfi made with sugar. Several models were chosen to fit sorption behaviour and the Guggenheim-Anderson-De Boer model showed a better fit compared to other models.  相似文献

Analyzing the radiocarbon ((14)C) content of polycyclic aromatic hydrocarbons (PAHs) in atmospheric particulate matter can provide estimates on the source contributions from biomass burning versus fossil fuel. The relative importance of these two sources to ambient PAHs varies considerably across regions and even countries, and hence there is a pressing need to apportion these sources. In this study, we advanced the radiocarbon analysis from bulk carbon to compound class specific radiocarbon analysis (CCSRA) to determine Δ(14)C and δ(13)C values of PAHs in PM(2.5) samples for investigating biomass burning and fossil fuel source contributions to PAHs from one of the Southeastern Aerosol Research and Characterization (SEARCH) sites in North Birmingham (BHM), Alabama during winter (December 2004-February 2005) and summer (June-August 2005) by accelerator mass spectrometry. To compare our ambient samples to known sources, we collected and analyzed fenceline samples from the vicinity of a coke plant in BHM. As expected, PAHs from the coke plant fenceline samples had very low radiocarbon levels. Its Δ(14)C varied from -990 to -970‰, indicating that 97 to 99% were of fossil source. PAHs in the ambient PM(2.5) had Δ(14)C from -968 to -911 ‰, indicating that 92-97% of PAHs were from fossil fuel combustion. These levels indicated the dominance of fossil sources of ambient PAHs. The radiocarbon level of ambient PAHs was higher in winter than in summer. Winter samples exhibited depleted δ(13)C value and enriched Δ(14)C value because of the increased contribution of PAHs from biomass burning source. However, biomass burning contributed more to heavier PAHs (modern source accounting for 6-8%) than lighter ones with a modern contribution of 3%.  相似文献

Diabetes mellitus is normally characterized by chronic hyperglycemia associated with disturbances in the fat, carbohydrate, and protein metabolism. There is an increasing trend of using natural products instead of synthetic agents as alternative therapy for disorders due to their fewer side effects. In this study, antidiabetic and antioxidant activities of different Melicope lunu‐ankenda (ML) ethanolic extracts were evaluated using inhibition of α‐glucosidase and 2,2‐diphenyl‐l‐picrylhydrazyl (DPPH) radicals scavenging activity, respectively; whereas, proton nuclear magnetic resonance (1H NMR) and ultra‐high performance liquid chromatography‐tandem mass spectrometric (UHPLC‐MS/MS) techniques were used for metabolite profiling of ML leaf extracts at different concentrations of ethanol and water. Sixty percent of ethanolic ML extract showed highest inhibitory effect against α‐glucosidase enzyme (IC50 of 37 μg/mL) and DPPH scavenging activity (IC50 of 48 μg/mL). Antidiabetic effect of ML extracts was also evaluated in vivo and it was found that the high doses (400 mg/Kg BW) of ML extract exhibited high suppression in fasting blood glucose level by 62.75%. The metabolites responsible for variation among ML samples with variable ethanolic levels have been evaluated successfully using 1H‐NMR–based metabolomics. The principal component analysis (PCA) and partial least squares(PLS) analysis scores depicted clear and distinct separations into 4 clusters representing the 4 ethanolic concentrations by PC1 and PC2, with an eigenvalue of 69.9%. Various 1H‐NMR chemical shifts related to the metabolites responsible for sample difference were also ascribed. The main bioactive compounds identified attributing toward the separation included: isorhamnetin, skimmianine, scopoletin, and melicarpinone. Hence, ML may be used as promising medicinal plant for the development of new functional foods, new generation antidiabetic drugs, as a single entity phytomedicine or in combinational therapy.  相似文献
