Computer-mediated conferencing has been adopted, particularly for purposes of online course provision, as a method that can deliver community. Widespread interest in a communities-of-practice approach within both informal and formal learning has strengthened perceptions of the value of creating a community online. A case study of asynchronous computer conferencing for the purposes of leadership development in schools is the focus for a study of the features and the discursive quality of the online interaction that occurred. Two analytical approaches are used: discourse analysis and social network analysis. These highlighted different aspects of the case, in terms of the role of peers versus the expert moderator (or 'hotseat guest'), the extent of readership versus contribution and the tone and content of the discussion. Evidence that contributors were learning from the interaction was identified and strong links with place-based communities of practice were also evident. Nevertheless, the online interaction could not be said to constitute a community or to be evidently developing in that direction. Its features as a network, where weak links were key to a sharing and knowledge-construction process, were more salient. Networks offer the potential for weak connections that have a particular value for connecting across dispersed practitioners and potentially bridging between communities of practice and other forms of organisation and groupings.  相似文献

The literature reports an optimum NaOH concentration for the alkaline cleaning of whey deposits or gels; at NaOH concentrations higher than this optimum, cleaning proceeds much more slowly. Although this phenomenon is of great importance in the cleaning of dairy equipment, no conclusive physical explanation has yet been presented. In this study, we present strong evidence that the dissolution rate is affected by the equilibrium-swelling ratio in β-lactoglobulin (βLg) gels. The swelling ratio is greatly reduced in the presence of salts due to the polyelectrolyte screening effect of the cations. This has been observed in free-swelling βLg gels using gravimetrical analysis and in the uniaxial swelling of WPC gel deposits using fluid dynamic gauging. At high dissolution pH (>13.3), the high Na+ concentration reduces swelling in spite of the high surface charge of the protein. It is proposed that the reduction of the free volume inside the gel impedes the transport of the protein aggregates out of the NaOH penetration zone. We have also observed that the final dissolution rate of gels pre-soaked in 1 M NaOH or NaCl is similar, despite the difference in pH, and much lower than for untreated gels: the high Na+ concentration in the soaked gels hinders swelling, inhibiting the disentanglement of the protein clusters regardless of the high pH.  相似文献

Quantifying in-use PM measurements for heavy duty diesel vehicles   总被引:3,自引:0,他引:3  
Heavy duty emissions regulations have recently expanded from the laboratory to include in-use requirements. This paradigm shift to in-use testing has forced the development of portable emissions measurement systems (PEMS) for particulate matter (PM). These PM measurements are not trivial for laboratory work, and are even more complex for in-use testing. This study evaluates five PM PEMS in comparison to UCR's mobile reference laboratory under in-use conditions. Three on-highway, heavy-duty trucks were selected to provide PM emissions levels from 0.1 to 0.0003 g/hp-h, with varying compositions of elemental carbon (EC), organic carbon (OC), and sulfate. The on-road driving courses included segments near sea level, at elevations up to 1500 m, and coastal and desert regions. The photoacoustic measurement PEMS performed best for the non-after treatment system (ATS)-equipped engine, where the PM was mostly EC, with a linear regression slope of 0.91 and an R(2) of 0.95. The PEMS did not perform as well for the 2007 modified ATS equipped engines. The best performing PEMS showed a slope of 0.16 for the ATS-equipped engine with predominantly sulfate emissions and 0.89 for the ATS-equipped engine with predominantly OC emissions, with the next best slope at 0.45 for the predominantly OC engine.  相似文献

The relationship between flavor naming and recognition memory was evaluated in groups of children and young adults who either self-generated flavor names or chose flavor names from a list of four alternatives. The adults were more successful at naming and remembering the flavors, with the age differences in naming performance tending to be larger than differences in memory performance. Differences in recognition memory among the age groups were modest, ranging from 3% to 12%. Providing flavor labels improved naming accuracy, but not naming consistency or memory for younger children (4-7 years old). Labels improved naming accuracy and consistency for the older children (8-11 years old), and showed a trend toward improving memory. Labels improved naming accuracy, consistency and recognition memory in adults. Consistent naming was a powerful predictor of recognition memory for each age group and test condition. Consistently named flavors were remembered correctly on 88% of the trials while inconsistently named flavors showed no evidence of memory. It was concluded that flavor recognition memory and naming consistency were both rooted in successfully matching flavor percepts to a multi-dimensional flavor representation that includes semantic information.  相似文献

Beer is an alcoholic beverage made from a cereal grain extract and is widely consumed in sub‐Saharan Africa and the world at large. However, beer consumption could expose consumers to mycotoxins. In this review, we appraised the different mycotoxins associated with beer contamination, elucidating their structures and incidence in cereals involved in beer production. The common mycotoxins that are found within the brewing process are reviewed. These include aflatoxin B1 (AFB1), fumonisin (FB), ochratoxin A (OTA), zearalenone (ZEA) and deoxynivalenol (DON), which are the prime contaminants in beer produced in sub‐Saharan Africa. Residual levels of <20% of AFB1, OTA and FB2 together with the transformation of ZEA (into a less toxic compound β‐zearalenol) can be achieved during the production of beers originating from Europe/America, while >50% of DON and higher ratios of FB1 can be recovered in finished beer. Adsorption is the major means of mycotoxin removal during beer production. In contrast, traditional African beer processes show no significant efficient removal of mycotoxins. This is because the prevailing environmental conditions during beer production are favourable to mycotoxigenic fungal proliferation. This subsequently leads to relatively high concentration of mycotoxins in freshly processed beer, with a possible increase during the beer shelf‐life owing to the absence of appropriate microbial stabilisation treatments in the finished processed beer. © 2019 The Institute of Brewing & Distilling  相似文献

The oxidation of starches of different amylose content with several oxidants has been investigated to maximize carboxyl content, increase water solubility and give products with new and novel properties. Methods of preparation studied were ambient-batch, jet cooking, jet cooking-drum drying, and drum drying alone. Other variables evaluated were reaction pH, jet cooking temperature, and oxidant concentration. Hypochlorite was the most effective oxidant and gave the highest carboxyl content in all preparation methods. Oxidized starches prepared by jet cooking and/or drum drying were of low viscosity and water soluble. SEM's of commercial oxidized starch showed intact granular structure, whereas samples prepared by instantaneous high temperature procedures showed complete gelatinization. Gel permeation chromatography showed structural depolymerization of the starches when high temperature processing was used. Copper binding capacity was evaluated on selected samples.  相似文献

This study aimed to evaluate the effects of PRKAG3 Ile199Val and CAST Arg249Lys and CAST Ser638Arg polymorphisms on the quality traits of the French dry-cured ham Jambon de Bayonne and their interaction with salt reduction. Significant (p<0.05) and suggestive associations (p<0.10) between the polymorphisms and several quality traits of dry-cured ham, mainly related to processing and textural properties, were found. PRKAG3 Ile/Val and CAST 249Lys/638Arg presented the highest scores for sensory and processing properties, whatever the salt content.  相似文献

A high percentage (31%) of groundwater samples from bedrock aquifers in the greater Augusta area, Maine was found to contain greater than 10 μg L(-1) of arsenic. Elevated arsenic concentrations are associated with bedrock geology, and more frequently observed in samples with high pH, low dissolved oxygen, and low nitrate. These associations were quantitatively compared by statistical analysis. Stepwise logistic regression models using bedrock geology and/or water chemistry parameters are developed and tested with external data sets to explore the feasibility of predicting groundwater arsenic occurrence rates (the percentages of arsenic concentrations higher than 10 μg L(-1)) in bedrock aquifers. Despite the under-prediction of high arsenic occurrence rates, models including groundwater geochemistry parameters predict arsenic occurrence rates better than those with bedrock geology only. Such simple models with very few parameters can be applied to obtain a preliminary arsenic risk assessment in bedrock aquifers at local to intermediate scales at other localities with similar geology.  相似文献

This paper evaluates the determinants and impact of adopting the metal silo—a postharvest storage technology for staple grains—which was disseminated by the Swiss Agency for Development and Cooperation (SDC) from 1983 to 2003 in four Central American countries. The aim of the SDC program was to diminish smallholder farmers’ postharvest losses by facilitating the manufacture and dissemination of metal silos and thereby to improve regional food security. Our empirical analysis is based on a unique data set obtained from a survey of 1,600 households from El Salvador, Guatemala, Honduras and Nicaragua. We employed a double-hurdle model to identify factors that contributed to the adoption of metal silos and used Tobit and standard regression models to assess the impact of adopting the silos on food security and well-being of households. Our results show that both the household demand for metal silos and the impact of their adoption varied across the four countries, demonstrating the relevance of regional policies for their adoption, as well as their impact. Furthermore, our results indicate that, in addition to achieving household self-sufficiency in maize, the main determinants of adoption were household socio-economic characteristics such as age, land ownership, completion of a training course and quality of basic infrastructure. Finally, when considering a group of economic and social indicators of household well-being, we found that, compared to the silo non-adopters, the adopter households experienced a significant improvement in their food security and well-being between 2005 and 2009.  相似文献

Although the bioavailability of dietary lipids is of primary importance in human nutrition and health, the mechanisms involved in lipid digestion are not fully understood and are of growing interest. The objective of this study was to determine the effect of the size of milk fat globules and of the composition of their interface on the activity of the human pancreatic lipase (PL). Native milk fat globules of various sizes covered by their biological membrane (MFGM) and homogenized fat globules of various sizes covered by milk proteins were prepared from whole milk and underwent lipolysis by the human PL with colipase and bile salts. A lag phase preceding the hydrolysis of milk TAG occurred with all native milk fat globules samples but not with homogenized milk samples. The kinetic parameters of human PL were determined by measuring the enzyme activity either after the lag phase for native milk fat globules samples or immediately after the addition of the enzyme for homogenized milk samples. The catalytic efficiency of human PL is 4.6-fold higher on small (1.8 μm) than large (6.7 μm) native milk fat globules, related to a 3.6-fold larger available surface. Despite the 25-fold larger available surface, milk TAG from homogenized milk are only 2-fold better hydrolyzed compared to native milk fat globules, as a possible result of a less favourable interface covered by milk proteins. The potential mechanisms involved in native vs. homogenized milk fat globules digestion by the human PL are discussed. Our study highlights the crucial role of the MFGM in the efficient digestion of milk fat globules and brings new insight for the design of dairy products and infant formulas.  相似文献
