Abstract: Deep‐fat frying is an important method of food preparation in which foods are immersed in hot oil. Repeated use of frying oils is a common practice, and in the presence of atmospheric oxygen it produces various undesirable reactions in used oils. Stable frying oils usually require low linolenic acid (LnA < 3%), increased oleic acid (OA > 40%), and decreased linoleic acid (LA < 50%). The aim of this study was to establish the behavior of palm superolein (PSO) (OA 45%; LA 12.5%; LnA 0.2%) and olive oil (OO) during repeated, discontinuous deep frying of French fries. The behavior of the oils under controlled heating conditions was also studied by maintaining all of the process variables the same as those in deep frying, except that there was no food in the oil. The PSO selected to be tested in this study may represent an alternative to OO as a frying medium. Although PSO presented a faster increase in some oxidation indices, such as free fatty acid and total polar compounds, for other indicators, PSO showed better behavior than OO (less formation of C8:0 and lower peroxide value). Practical Application: The super palm olein selected for use in this study can be suggested as a suitable replacement for olive oil for frying and cooking purposes because it provides higher oxidative stability besides the beneficial effects of olive oil on human health. In fact, several studies have indicated that palm oil exhibits similar frying performance to high‐oleic oils, with the advantages of greater availability in the market and a lower price.  相似文献

Abstract: The availability of rapid and accurate methods to assess fruit flavor is of utmost importance to support quality control especially in the breeding phase. Breeders need more information and analytical tools to facilitate selection for complex multigenic traits such as flavor quality. In this study, it is shown that proton‐transfer reaction mass spectrometry (PTR‐MS) is a suitable method to monitor at high sensitivity the emission of volatiles determining the tomato aromatic profile such as hexanal, hexenals, methanol, ethanol, and acetaldehyde. The volatiles emitted by 14 tomato varieties (at red stage) were analyzed by 2 solvent‐free headspace methods: solid‐phase microextraction/gas chromatography MS and PTR‐MS. Multivariate statistics (principal component analysis and cluster analysis) of the PTR‐MS results allow an unambiguous separation between varieties, especially with a clear fingerprinting separation between the different tomato types: round truss, cocktail, and cherry tomatoes. PTR‐MS was also successfully used to monitor the changes in volatile profiles during postharvest ripening and storage. Practical Application: These results show that proton‐transfer reaction mass spectrometry (PTR‐MS) is suited to monitor at high sensitivity the emission of a large number of volatiles that describe the tomato aroma profile. This technology can easily monitor and quantify compounds related to ripening and/or senescence so that it can be used to improve the breeding of new fruit and vegetable cultivars based on volatiles. Moreover, PTR‐MS can be used to monitor changes in volatile profile during ripening and storage.  相似文献

Root herbivores are notoriously difficult to study, as they feed hidden in the soil. However, root herbivores may be traced by analyzing specific volatile organic compounds (VOCs) that are produced by damaged roots. These VOCs not only support parasitoids in the localization of their host, but also may help scientists study belowground plant-herbivore interactions. Herbivore-induced VOCs are usually analyzed by gas-chromatography mass spectrometry (GC-MS), but with this off-line method, the gases of interest need to be preconcentrated, and destructive sampling is required to assess the level of damage to the roots. In contrast to this, proton-transfer-reaction mass spectrometry (PTR-MS) is a very sensitive on-line, non-invasive method. PTR-MS already has been successfully applied to analyze VOCs produced by aboveground (infested) plant parts. In this review, we provide a brief overview of PTR-MS and illustrate how this technology can be applied to detect specific root-herbivore induced VOCs from Brassica plants. We also specify the advantages and disadvantages of PTR-MS analyses and new technological developments to overcome their limitations.  相似文献

An optimized microwave-assisted extraction (MAE) method was evaluated through repeatability, recovery and efficiency testing. The repeatability tests, performed by three users over time, were not significantly different. The recovery of lignan throughout the extraction, preparation and analysis steps is 97.5% with a coefficient of variation <1%. The MAE method is efficient for extracting lignans from the plant matrix, and it achieves significantly higher extraction yields than the two established reference methods. The applicability of the MAE method was demonstrated by extracting lignans from a variety of plant samples. The secoisolariciresinol diglucoside (SDG) content of seven flaxseed cultivars grown in Saint-Mathieu-de-Beloeil, QC, in 2009 ranged from 14.6 to 18.9 mg SDG per gram of seed. Flax hulls produced in Winchester, ON, in 2010 were very rich in lignan; their SDG content was 40.0 mg/g of flax hull. Sesame seeds contained 0.18–1.89 mg SECO (aglycone of SDG) per gram of seed, with significant differences among black, white and brown sesame seed. Chia seeds contained 0.99–1.29 mg SECO per gram of seed, with significant differences among batches of seeds. Sunflower seeds had 0.046 mg SECO per gram of sample and almonds had 0.029 mg SDG per gram of sample. The optimized and evaluated MAE method is recommended for the general analytical quantification of lignans in plant samples.  相似文献

A new biocatalyst was prepared by the immobilization of a Trametes pubescens laccase, into a wide-pore poly(vinyl alcohol) cryogel. The known enzyme was produced and purified by the previously described procedure. The resulted laccase (yield 40%) has an activity of 46.4 U mg−1 and 12.51 mg mL−1 protein content. The enzyme was subsequently immobilized in a functionalized macroporous cryogel beads by a covalent immobilization technique. The time dependence of the immobilization process and the enzyme loading of the carrier material (5.2 mg g−1 cryogel) were determined by measuring the decrease of protein amount in the enzyme solution. In conversion experiments, a higher stability of the immobilized biocatalyst compared to the free enzyme was evidenced. Steady-state kinetic characterization of four phenols (catechol, caffeic and chlorogenic acids, and catechin) has been performed with free and immobilized laccase, the catalytic parameters being determined and compared. The effect of both laccases (free and immobilized) on the phenol content of retailed apple juice samples, having the same initial composition, was also investigated by working in batch conversion. The variation in phenolic compound content has been compared with that of an untreated apple juice sample having initially the same content of phenolic compounds. A number of advantages resulted in using the immobilized laccase for the apple juice treatment (conservation to some extent of enzyme activity, higher content of phenols preserved, easy separation of the enzyme from the apple juice, therefore avoiding the possible unhealthy effects due to the remaining protein, etc.).  相似文献

This paper describes the results of an intercomparison of spectroradiometers for global and direct normal incidence irradiance in the visible and near‐infrared spectral regions together with an assessment of the impact these results may have on the estimation of the short‐circuit current (ISC) calibration of photovoltaic devices and on the spectral mismatch calculation. The intercomparison was conducted in the framework of the European project Apollon with the additional participation of external partners from the Italian project for the long‐term monitoring of solar radiation for photovoltaics. Six institutions and six spectroradiometer systems, representing different technologies and manufacturers, were involved. Prior to the intercomparison, all participating partners calibrated their own instrument(s) according to their usual procedures in order to verify the entire measuring and traceability chain. The difference in measured spectra shape and amplitude showed to have an impact on ISC calculation of less than 3% and less than 6% for single‐junction and multi‐junction devices, respectively. When only the shape of the spectra is considered, the spectral mismatch ranges from 1.7% to 4.7% depending on the spectral response of the device. Copyright © 2013 John Wiley & Sons, Ltd.  相似文献

A phenotypic and genotypic characterization of 84 Oenococcus oeni isolates from Italian wines of different oenological areas was carried out. Numerical analysis of fatty acid profiles grouped the isolates into two clusters at low level of similarity (63%), the minor cluster containing seven isolates besides the type and the reference strains. Forthy-eight O. oeni isolates, representative of the two clusters, showed no differences in their metabolic properties (heterolactic fermentation pattern, citrate degradation capability and formation of some secondary metabolites). Moreover, the analysis of species-specific randomly amplified polymorphic DNA and 16S-23S rDNA intergenic spacer region polymorphism as well as the sequence-specific separation of V3 region from 16S rDNA by denaturing gradient gel electrophoresis demonstrated a substantial homogeneity among the isolates. On the basis of ApaI Pulsed Field Gel Electrophoresis (PFGE) restriction patterns, the 84 isolates were grouped into five different clusters at 70% similarity, but no correlation with the phenotypic groups could be demonstrated. However, by combining phenotypic and genotypic data, the 84 O. oeni isolates grouped into eight phenotypic-genotypic combined profiles and a relationship between the origin of the isolates and their combined profile became evident, so that a sort of strain specificity can be envisaged for each wine-producing area.  相似文献

To date, research on the motor control of hand function in cerebral palsy has focused on children with hemiplegia, although many persons with diplegic cerebral palsy (dCP) have asymmetrically decreased hand function. We explored the predictive capabilities of the motor system in a simple motor task of lifting a series of virtual objects for five persons with spastic dCP and five age-matched controls. When a person lifts an object, s/he uses an expectation of the weight of the object to generate a motor command. We asked the study subjects to lift a series of increasing weights and determined whether they extrapolated from past experience to predict the next weight in the series, even though that weight had never been experienced. Planning of precision grasp was assessed by measurement of the grip force at the beginning of the lifting task and by estimating the motor command. Execution of precision grasp was assessed by measurement of the time interval between the onset of grip and the onset of movement. We found that persons with dCP demonstrated a lack of predictive feed-forward control in their lifting movements: they exhibited a significantly longer time between onset of grip and onset of movement than the control subjects and they did not predict the weight of the next object in the lifting task. In addition, for subjects with dCP, the time between the onset of grip and the onset of movement of the dominant hand correlated strongly with the outcome of a hand function test. We postulate that a higher-order motor planning deficit in addition to execution deficit are evident in the subjects with spastic diplegic.  相似文献

A total of 139 lactic acid bacterium (LAB) strains isolated from Romanian traditionally fermented vegetables were screened for the ability to produce exopolysaccharides and for their antagonistic activity against a set of nine LAB strains, three Bacillus strains, and four Gram-negative bacteria. Eighty-five of the tested strains showed a variable antimicrobial activity against Listeria monocytogenes ATCC 1911, 35 of the strains showed a limited inhibition zone against Escherichia coli ATCC25922, and 26 strains against Salmonella enterica ATCC 14024, while 19 strains showed inhibition against one or all three Bacillus strains used as indicators. None of the tested strains showed an antimicrobial activity against Staphylococcus aureus ATCC 25923. Several strains showed antibacterial activity against more than one indicator strain. For instance, Lactobacillus plantarum 307, Lactobacillus brevis 308, and Lactobacillus plantarum/pentosus 358 were active against five of the indicator strains used, while other 23 LAB were active against three indicator strains. In the case of two strains, namely Leuconostoc citreum 344 and Lactobacillus brevis 183, the activity was maintained after neutralizing the pH of the cell-free supernatant likely due to the production of bacteriocins. The gel permeation chromatography-based screening revealed seven EPS-producing LAB strains. Two of the positive strains, namely Leuconostoc citreum 177 and Leuconostoc citreum 52, have been shown to produce large amounts of EPS, of about 20 g/L. All isolated EPS have a high molecular mass, of above 1400 KDa, and a monomer composition dominated by the presence of glucose.  相似文献

The pulp polyphenol composition of some Italian ancient apple cultivars, Dominici, Giachetta, Grigia di Torriana, Pom d'Aram, Ronzè, and Ros Borsetta, was studied in comparison with a Golden Delicious commercial variety, over a three-year period. Polyphenols were analyzed by liquid chromatography coupled with diode array and mass spectrometer detectors. The results showed that ancient varieties, such as Grigia di Torriana, Ros Borsetta, and Giachetta, constitute good sources of polyphenols, even without the peel. It was demonstrated that some representative apple phenolics, such as chlorogenic acid and phloridzin, were clearly affected by the harvesting year, whereas others, such as catechins and procyanidins, did not.  相似文献
