Is there a direct relationship between oral astringency and human salivary protein binding? 总被引:1,自引:0,他引:1
For decades, it is believed that astringency is due to the polyphenol-induced complexation of proline-rich salivary proteins
in the oral cavity. In order to compare for the first time the human sensory threshold concentrations and the salivary protein
binding activity of a series of astringent stimuli, human saliva protein was incubated for 5 min at 37 °C in the presence
of astringent food-derived compounds and, after micro-centrifugation, the amount of the target molecules in the supernatant
was quantitatively determined by HPLC-UV/Vis. Significant protein binding was observed for (−)-epigallocatechin-3-gallate,
(−)-gallocatechin-3-gallate, (+)-gallocatechin, and (−)-catechin-3-gallate, all of which containing at least one galloyl moiety
in the molecule and exhibiting rather high sensory thresholds of more than 200 μmol/L. In comparison, (+)-catechin and procyanidin
B2, both lacking in any galloyl function, showed only comparatively low binding activity and, most interestingly, quercetin-3-O-α-l-rhamnopyranosyl-(1 → 6)-β-d-glucopyranoside and 3-carboxymethyl-indole-1-N-β-d-glucopyranoside did not show any protein binding at all, although the later N- and O-glycosides exhibited extraordinarily low sensory threshold concentrations of less than 0.001 and 0.0003 μmol/L, respectively.
The data give some first evidence that the quantity of the non-bound, “free” astringent stimulus in the saliva liquid might
be more closely related to the sensory perception of astringency than the amount complexed or precipitated by proteins. It
is therefore questionable as to whether oral perception of astringency is related to the complexation and/or precipitation

Copper slag is a by‐product generated during smelting to extract copper metal from the ore. The copper slag obtained may exhibit pozzolanic activity and may therefore be used in the manufacture of addition‐containing cements. In this paper the effect of the incorporation of the copper slag in cement is measured. Blends of copper slag with Portland cement generally possess properties equivalent to Portland cement containing fly ash, but very different to the silica fume incorporation. Copper slag and fly ash reduce the heat of hydration more effectively than silica fume in mortars. The replacement of 30% cement by copper slag reduces the flexural and compressive strength in a similar way to fly ash; however, after 28 days, the reduction is less than the percentage of substitution. Hydrated calcium aluminate phases were analysed using scanning electron microscopy (SEM) and X‐ray diffraction (XRD) techniques. The pozzolanic activity of copper slag is similar to that of fly ash and higher than silica fume. In the presence of low water/cement ratios, certain pozzolanic materials produce a very compact cement paste that limits the space available for hydration products, a determining factor in the formation of hydrated calcium aluminates. Thomas Fincke (January 6th, 1561–April 24th, 1656), born in Flensburg (Germany), was one of the very most important and significant scientists in Denmark during the
seventeenth century, a mathematician and astrologer and physician in the beginning of modern science, a representative of
humanism and an influentual academic organizer. He studied in Strasbourg (since 1577) and Padua (since 1583) and received
his M.D. in Basel (1587), he practised as a physician throughout his life (since 1587 or 1590) and became a professor at Copenhagen
(1591). But he was best known because of his Geometriae rotundi libri XIIII (1583), a famous book on plane and spherical trigonometry, based not on Euclid but on Petrus Ramus. In this influentual work,
in which Fincke introduced the terms tangent and secant and probable first noticed the Law of Tangents and the so-called Newton-Oppel-Mauduit-Simpson-Mollweide-Gauss-formula,
he showed himself to be „abreast of the mathematics of his time“.

Measuring techniques for characterizing gas/liquid reactors . The article considers measuring techniques for the characterization of the phases in gas/liquid reactors. These include the velocity profile and turbulence in the continuous phase as well as holdup, size, and velocity of the dispersed phase. Also, methods for the determination of the specific interfacial area and the volumetric mass transfer coefficients are discussed. Measuring methods have made enormous advances in recent years. In spite of this, there is a lack of reliable methods, especially for use during reactions without disturbing the state of the reactor. It is suspected that probe technique will gradually fall into disuse and more and more attention will be focussed on contractless methods. Planning is an essential function of project management. Yet, many small- and medium-sized contractors do a relatively poor job of operational planning. Better prebid plans will reduce costs, shorten schedules, and improve labor productivity. Unfortunately, the published literature offers little guidance for smaller contractors on what constitutes effective planning. Most papers describe planning as a macrolevel process for owners. Most emphasize scope definition for industrial projects. This paper describes a microlevel planning process for contractors. It consists of eight steps which are: (1) assess contract risks; (2) develop a preliminary execution plan; (3) develop site layout plans; (4) identify the sequences that are essential-to-success; (5) develop detailed operational plans; (6) develop proactive strategies to assure construction input into design; (7) revise the preliminary plan; and (8) communicate and enforce the plan. The entire process is illustrated with a case study project and is fully illustrated with figures which show how to integrate the work of multiple contractors, keep key resources (crews or equipment) fully engaged with no downtime, provide time buffers so the work of follow on crews can be efficiently done, expedite the schedule using multiple work stations and concurrent work, ways to communicate the work plan to the superintendent and foremen, and how to assess the feasibility of various work methods.
