The effects of changes in atmospheric mercury (Hg) deposition on aquatic ecosystems are poorly understood. In this study, we examined the biogeochemical cycling of Hg in littoral mesocosms receiving different loading rates (7-107 microg Hg m(-2) year(-1)). We added a 202Hg-enriched preparation to differentiate the experimentally added Hg from the ambient Hg in the environment. This approach allowed us to follow the distribution and methylation of the isotopically enriched ("spike") Hg in the mesocosms. Within 3 weeks, spike Hg was distributed throughout the main environmental compartments (water, particles, periphyton, and sediments) and began to be converted to methylmercury (MeHg). Concentrations of spike total Hg and MeHg in these compartments, measured after 8 weeks, were directly proportional to loading rates. Thus, Hg(II) availability was the limiting factor for the major processes of the biogeochemical Hg cycle, including methylation. This is the first study to demonstrate a proportional response of in situ MeHg production to atmospherically relevant loading levels. On the basis of mass balances, we conclude that loading rate had no effect on the relative distribution of spike Hg among the main compartments or on the fraction of spike Hg converted to MeHg. Therefore, loading rate did not change the relative magnitude of biogeochemical pathways competing for Hg within the mesocosms. The present study was undertaken to evaluate the role of individual flavanols in the antimutagenic potential of green tea. Aqueous extracts of green tea were fractionated into four fractions, each of which was fully defined with respect to its content of (-)-epigallocatechin gallate, (-)-epicatechin gallate, (-)-epigallocatechin, (-)-epicatechin and gallic acid. The ability of each fraction to antagonize the mutagenicity of four model mutagens, namely N-nitrosopyrrolidine, benzo(a)pyrene, 2-aminoanthracene and Glu-P-1 (2-amino-6-methyldipyrido[1,2-a: 3,2-d]imidazole), was investigated in the Ames test. No correlation could be established between any of the flavanols and antimutagenic potential. Similarly, no correlation was evident between the flavanol content of each fraction and its ability to inhibit CYP1A, as exemplified by the O-dealkylations of methoxy- and ethoxy-resorufin. Furthermore, no relationship could be established between CYP2B activity, as exemplified by the O-depentylation of pentoxyresorufin and the antimutagenic potential of green tea. Using a modified Ames test procedure, the ability of each tea fraction to scavenge the metabolically generated reactive intermediates of the model mutagens was investigated, this being an additional mechanism of the antimutagenic potential of green tea. Generally, fractions with high flavanol content were more effective scavengers. The only current effective treatment for coeliac disease (CD) is a lifelong diet that is as free from gluten as possible. This study provides baseline evidence to inform future interventions of benefit to CD sufferers by examining awareness of CD issues by food servers and preparation staff, assessing their claims to provide gluten‐free foods by analysis of a meal concurrently sampled. While the majority of attempts to purchase a ‘gluten‐free’ meal on request in restaurants were successful, some 10% of all samples contained gluten, 2.7% between 21 and 100 mg kg?1, and 7.7% >100 mg kg?1 and two unsatisfactory samples were purchased from so‐called coeliac‐friendly restaurants. These findings were consistent with those obtained previously by Collin et al. [Alimentary Pharmacology & Therapeutics 19 (2004) 1277], Størsrud et al. [European Food Research & Technology 217 (2003) 481], Gélinas et al. [International Journal of Food Science & Technology 43 (2008) 1245] for cross contamination with gluten. Staff confidence, ‘gluten‐free’ notices, signs and menu choices were no guarantee of risk‐free dining for CD sufferers. We present N2O emission data from 11 sites in the Neuse River watershed. Emissions were measured using a static surface enclosure technique deployed on eight sites on the main river channel and three tributary sites. Ancillary data collected included dissolved oxygen, nitrate, total nitrogen, ammonium, dissolved organic carbon, total phosphorus, and temperature. Analysis using standard linear models, and classification and regression trees (CART), indicated nitrate to be the primary driving variable associated with N2O emission, although dissolved organic carbon concentration and water temperature were positively related with N2O emission as well. Relationships between nitrate concentration and N2O emission were consistent with those found in previous studies, although the data presented here represent the lower end of the range for both variables among published studies. Using our measured N2O emission rates along with literature values for the ratio of nitrogen gas to N2O produced during denitrification, we estimate N loss via denitrification in the Neuse River is approximately 17% of the annual N load delivered to the estuary. 相似文献

Influence of Zinc on Distiller's Yeast: Cellular Accumulation of Zinc and Impact on Spirit Congeners

Accumulation of zinc by a whisky distilling yeast strain of Saccharomyces cerevisiae was studied during fermentation of malt wort and synthetic defined medium. Zinc uptake by yeast cells was very rapid in malt wort, as zinc (0.32 μg/mL) was completely removed from the fermentation medium within one hour. The type of fermentable carbohydrate had an impact on the kinetics of zinc accumulation, with maltose most effective at enhancing metal uptake at zinc concentrations above 3.2 μg/mL. Enriching yeast cells with zinc by “preconditioning” impacted on the production of flavour congeners in the distillates produced from fermented cultures. Such distillates were characterised by an altered flavour and aroma profile. In particular, the production of some higher alcohols increased when yeast cells were preconditioned with zinc. This phenomenon is yeast strain related. Industrial fermentation processes, including brewing and distilling, may benefit from optimization of zinc bioavailability in yeast cultures resulting in more efficient fermentations and improved product quality. 相似文献

Food allergy has a forensic context. The authors describe eight cases in the UK courts involving fatalities, personal injury or criminal non‐compliance with food law from mainly ‘grey’ literature sources. The potentially severe consequences for people with food allergy of contraventions of labelling law have led to enforcement action up to criminal prosecution for what might otherwise be regarded as ‘trivial’ non‐compliance. The authors suggest there should be central collation of such cases. Non‐compliances should be followed up in a more rapid and robust manner. Evidence of fraud in the catering supply chain supports recent calls for zero tolerance of food fraud. Businesses must guard against gaps in allergen management, for which there are readily available sources of training and guidance, but also against fraudulent substitution in the supply chain, about which training and guidance should be developed. New allergen labelling legislation and case law appear to place responsibility on food businesses even for the forensically problematic area of allergen cross‐contamination. The courts can be an effective last resort for vulnerable consumers; however, there is evidence of knowledge and skill gaps in both the investigation and prosecution of potentially serious incidents of food allergen mismanagement and mislabelling. Thorough investigation of food allergy deaths is required with a tenacious and skilled approach, including early realisation that samples of the food and/or stomach contents from a post mortem examination should be retained and analysed. Peanuts are classified into four market-types (Runners, Spanish, Virginia and Valencia). Studies on their phytochemical composition have focused mainly on market-types other than Valencia. The objectives of this study are to evaluate the phytochemical composition of cultivars of Valencia and Runner market-types. Extracts of 25 peanut cultivars of Runner and Valencia market-types were analysed using HPLC-DAD-MS analysis. Results showed major differences in UV profile of the market-types. A major peak with m/z 317 identified as isorhamnetin was present only in Valencia cultivars while its glycoside (isorhamnetin-3-O-rutinoside) having m/z 625 was identified in both market-types. Genistein, daidzein, rutin, quercetin and trans-resveratrol were also identified and quantified. Genistein and daidzein concentrations (0.03 mg/100 g) were similar in both market-types. trans-Resveratrol and rutin were significantly (p < 0.05) higher in Runner cultivars while quercetin was 10-fold higher (0.60 ± 0.04 mg/100 g) in Valencia cultivars making them a better source of this phytochemical. 相似文献

The objective of this research was development of a quantitative model of simultaneous contrast (induction) to aid selection of sets of easily identified map colors. The model is an extension of R. W. G. Hunt's model of color appearance. Contrasts between central and proximal colors were used to adjust Hunt's lightness, relative redness-greenness, and relative yellowness-blueness measures. Human subject responses to CRT displays in an experiment were analyzed to produce a set of rules for selecting map colors. Rather than predict average perceptions for central/proximal color combinations, acknowledgment was made of the inherent variability in map readers' perceptions of color by developing generalized perception buffers that accounted for at least 90% of test subject responses. The task of selecting colors that will not be confused once they appear with numerous proximal colors on a map thus becomes a task of selecting colors that do not have buffers that overlap in color space. © 1996 John Wiley & Sons, Inc. 相似文献
