The impact of maturation on concentrations of key odour active compounds which determine the aroma of tequila 下载免费PDF全文

Samples of non‐mature and añejo (matured) tequila of the same brand/provenance were analysed using GC–MS and gas chromatography olfactometry (GC‐O)/aroma extract dilution analysis (AEDA) to provide quantitative data on the most odour active compounds that contribute to the aroma of these spirits. Extracts of non‐mature tequila were characterized by 26 odour‐active regions, which included ethyl hexanoate, ethyl octanoate, 2‐phenylethyl acetate, β‐damascenone, isoamyl alcohol and octanoic acid as the most odour‐active compounds (flavour dilution, FD, factor ≥ 6561). In contrast, extracts of the mature spirit showed 36 odour‐active zones, where the compounds with the highest FD factors (6561) were ethyl hexanoate, ethyl octanoate, 2‐phenylethyl acetate, isoamyl alcohol, phenethyl alcohol, guaiacol, 4‐ethyl guaiacol, vanillin, cis/trans whisky lactones, β‐damascenone and octanoic acid. The aromagram of mature tequila was thus differentiated from that of the non‐mature spirit owing to the presence of cask‐extractive compounds and the increased FD factors of certain terpenes, higher alcohols and acetals. This study provides a comprehensive and quantitative understanding of changes in key odourants of tequila as a result of the maturation process and also reveals a further characterization of the likely impact of each compound on overall spirit flavour, in terms of odour activity values. Hydrogen absorption isotherms for Pd thin films were modeled at atomistic scale by Monte Carlo (MC) simulation in the TPμN ensamble and by Molecular Dynamics (MD) simulations at 300 K. The interaction among atoms was modeled by embedded atom method (EAM) potentials. Simulated samples consisted of monocrystalline nanofilms with different thickness (2–8 nm) and two crystallographic surface orientations, (001) and (111). The isotherms were compared to bulk Pd and a few available experimental results. Instead of the plateau corresponding to the α-β PdH equilibrium in the bulk, the isotherms at nano-films show a two-plateaux behavior: a small one corresponding to a surface–subsurface hydride formation, and a larger one for the subsequent bulk hydride formation. This is strongly correlated with the atomic stress distribution induced within the thin film. The equilibrium pressures at the isotherms depend on the thin-film thickness, with pressure being larger for thicker films. Enterococci account for an important fraction of the adventitious microflora of traditional cheeses manufactured in Mediterranean countries from small ruminants' raw milk and play an important role in the development of suitable organoleptic characteristics of the final product. It has been suggested that animals used for food or animals that supply edible products are a reservoir of antibiotic-resistant enterococci. The main purpose of this research effort was thus to identify, to the species level, a total of 73 enterococci with high tolerance to acidic pH and bile salts (as prevailing environmental conditions in the first portion of the gastrointestinal tract), which were previously isolated from the milk feedstock to the final product of Terrincho cheesemaking, and to determine their profiles of antibiotic susceptibility, coupled with the occurrence of specific virulence factors (especially in those that might eventually be claimed to exhibit suitable probiotic and technological performances). Isolates, identified by both API 20 STREP and PCR methods, were found to belong to the following Enterococcus species: E. casseliflavus, E. durans, E. faecalis, E. faecium, and E. gallinarum. Susceptibility of those isolates was observed to most antibiotics tested, whereas none harbored aminoglycoside resistance genes. PCR screenings for cytolysin genes (cylL(L), cylL(s), cylM, cylB, and cylA), surface adhesin genes (efaA(fs), efaA(fm), and esp), the aggregation protein gene (agg), and the extracellular metalloendopeptidase gene (gelE) were performed. All isolates proved negative for cylL(L), cylM, cylB, and agg genes. Both E. faecalis strains were positive for the cell wall-associated protein Esp and the cell wall adhesin efaA(fs), whereas the cell wall adhesin efaA(fm) was detected in 11 of the 12 E. faecium strains. Only one strain possessed the cylL(s) determinant, and another possessed the cylA gene. Incidence of virulence determinants was thus very low; hence, the enterococcal adventitious microflora tested is essentially safe. 相似文献

This paper studies the synthesis of structured triacylglycerols (STAGs) rich in palmitic and docosahexaenoic acids (PA and DHA) at sn-2 position and oleic acid (OA) at sn-1,3 positions by a four step process. First, triacylglycerols (TAGs) were obtained with 63–66 mol PA/100 mol total fatty acids and 10 mol DHA/100 mol by acidolysis of tuna oil and commercial PA, catalyzed by the non-positionally specific lipase Novozym 435. Then these TAGs were purified neutralizing the free fatty acids (FFAs) by KOH hydroethanolic solutions and extracting TAGs with hexane; these TAGs were completely recovered as pure TAGs (without FFAs). The third step involved the displacement of fatty acids located at sn-1,3 positions by acidolysis of PA and DHA enriched TAGs with OA rich FFAs, catalyzed by the sn-1,3 specific lipase DF from Rhizopus oryzae, immobilized on Accurel MP-1000; TAGs with 67 mol OA/100 mol at sn-1,3 positions and 52.1 and 15.4 mol PA and DHA, respectively, per 100 mol at sn-2 position were obtained. Both acidolysis reactions were carried out in stirred tank reactors (STRs) with lipase both dispersed in the reaction medium and contained in a cartridge filter attached to the stirrer rod. The issues related to renewable energy sources is a matter of great worldwide appeal due to the increasing energy demand, instability in oil prices and environmental problems. In this context, the purpose of this study was to prepare self-assembled films of polyallylamine hydrochloride and poly (acrylic acid) supported onto bacterial cellulose membranes by a layer-by-layer approach with titanium dioxide (TiO2) nanoparticles and different concentrations of gold for application in hydrogen gas (H2) production by photocatalysis. The influence of the gold concentration and the presence and size of the gold nanoparticles (Au NPs), as well as the surface and thickness of the films on H2 production was investigated. The results showed that the film, prepared with a lower concentration of gold, presented the smallest Au NPs and, therefore, greater contact with the TiO2 nanoparticle surfaces, producing more H2. By analyzing the variation in all the experimental parameters used in the preparation of the films, it can be concluded that the best H2 production achieved was 29.12 μmol h?1 cm2. 相似文献

The levels of polycyclic aromatic hydrocarbons (PAHs) were determined by reversed-phase high-performance liquid chromatography with fluorescence detection in different fatty foods from a Spanish market. The average concentration of the sum of total PAHs in edible vegetable oils was below 25 ng/g, whereas the sum of heavy PAHs did not surpass 5 ng/g. Olive pomace oils obtained before the summer of 2001 were an exception because they were highly contaminated. The effects of different technological processes, such as bleaching, deodorization, and hydrogenation, on PAH concentration in edible oils have been studied. purification of SA, EPA, and DHA was achieved with reverse-phase C18 columns. These isolations were scaled up to a semi-preparative column. A PUFA concentrate was isolated fromI. galbana with methanol/water (80:20, w/w) or ethanol/water (70:30, w/w). With methanol/water, a 96% EPA fraction with 100% yield was

The heap leaching of oxide copper ores with copper cathode recovery by solvent extraction and electrowinning is now well established as a low-cost method of copper recovery. This technology has recently been applied successfully to mixed oxide and chalcocite ores, notably in Chile at Cerro Colorado, Quebrada Blanca and Zaldivar.Currently, there are significant development efforts underway to try to extend heap leaching to chalcopyrite ores.The success of heap leaching/SX/EW has also led to a revival in the development of hydrometallurgical processes to recover copper from chalcopyrite and other copper concentrates. The current status of copper hydrometallurgy is reviewed and the most commercially attractive potential applications are explored. The advantages and disadvantages of the hydrometallurgical treatment of chalcopyrite concentrates and its preliminary economics are compared with those for the current best practices in copper smelting and refining. 相似文献
