The effect of dietary lipid sources (animal fat, AF vs. vegetable oil, VO) was investigated on the phospholipid (PL) fraction
of raw chicken meat and pre-cooked chicken patties. PL classes were determined on extracted lipids by high-performance liquid
chromatography (HPLC) connected with an evaporative light-scattering detector (ELSD). The HPLC-ELSD method showed good intraday
repeatability (less than 5% for different PL) and limits of detection ranging from 0.006 mg/mL (phosphatidylethanolamine)
to 0.045 mg/mL (sphingomyelin). Diet did not consistently influence PL in chicken breast. A significant difference was assessed
in meat batter where total PL were at levels of 349.0 and 388.2 mg/100 g of product in batter from broilers fed AF and VO
diet, respectively. Cooking oil absorption caused an important decrease in PL (lower than 300 mg/100 g of product in pre-fried
patties). Diet was an effective means to control the PL fatty acid profile in chicken, particularly the levels of polyunsaturated
fatty acids (PUFA). In minced breast and thigh and meat batter from birds fed a VO-supplemented diet, the relative amount
of PUFA was 46, 81 and 28% higher than that determined in the corresponding samples obtained from broilers fed an AF-based

According to FAO statistics, in 2000, Italy was the second largest hazelnut (Corylus avellana, L. 1753) producer in the world. The price of the stock depends on the nut quality (kernel/nut ratio, nut and seed defect, percentage of peeling, and taste panel scores). The evaluation of peeling efficiency after toasting is generally conducted by trained operators in sight on 100 kernels. This work tests two alternative objective methods of after toasting peeling evaluation based on image analysis. Eleven hazelnut cultivars were analyzed and results were compared with the ones assessed by trained operators. Images were analyzed with two statistical approaches: fixed values of RGB thresholding and trained K Nearest Neighbors (KNN). Root mean squared error (RMSE), estimating the comparison between operators and the two image analysis-based techniques, shows better results for KNN (6.6) with respect to fixed threshold (15.9). 相似文献

The actual Italian production of clams is chiefly sustained by the native Tapes decussatus and the fortuitously imported Tapes philippinarum. Both species are commercialized as “Vongola verace”, but the commercial value of T. philippinarum is lower. The discrimination of species by sight is usually difficult and it cannot be done by observation based on shell
morphology but only when animals open their valves hence displaying the two siphons. In this study, we propose a new, noninvasive
method to discriminate individuals of both species based on the analysis of the external shape of their shells. Accordingly,
in sympatric populations at two sites of the Po river outlet, we have chosen individuals (63 for T. decussatus and 57 for T. philippinarum) of comparable commercial size for which a certain genetic discrimination was previously done. Pictures of the left side
valve were taken for all specimens. Their profiles were analyzed with the elliptic Fourier analysis. The mean outline for
each species was graphically extracted. The coefficients of the harmonic equations were analyzed by multivariate classification
(partial least squares discriminant analysis [PLSDA]). Results showed a high percentage of correct classification of individuals
of both species (96.6%). Contour analysis reflected the overall shell shape and thus identified morphological aspects that
were difficult to recognize and quantify in sight. The high percentage of correct classifications obtained by combining the
analysis of elliptic Fourier harmonics with PLSDA demonstrated the feasibility of this method to discriminate species with

Fruit maturity indexes are crucial in harvest time determination and commercial context. The harvest time of apples, matching
the desired commercial characteristics, is assessed through starch–iodine test in practice. Fruit halves are dipped into iodine
solution and patterns are visually evaluated by experts comparing them to reference charts. Aim of the work was to study the
relationships of near infrared (NIR) spectral images (1,000–1,700 nm), starch/starch-free patterns visually assessed and RGB
color images. Spectral images of 88 Golden Delicious Klon B apples were sampled at seven different maturity stages. Partial
least-squares discriminant analysis (PLSDA) technique was used on hyper-spectral NIR images to classify single pixels using
its NIR reflectance spectrum. The response variable (i.e. the classification for each pixel) was identified through the matching
of single pixel obtained with the color images, segmented in two classes (starch and starch-free), and the NIR hyper-spectral
matrix. Mean hyper-spectral classification obtained through PLSDA modeling on individual apple correctly classified 80.81%
of the total pixels, while the unique model, i.e. a single model including all the fruits, resulted in 66.33%. In the latter
case, the relationship with the RGB classification showed high values (Pearson correlation coefficient r = 0.95). The present work shows the feasibility of NIR imaging spectroscopy as a tool for apple fruit maturity determination,
avoiding expert’s subjective interpretation by traditional starch index assignments. 相似文献

This paper focuses on comparing the main chemical characteristics of 16 fresh commercial samples of extra virgin olive oil obtained from four harvest years (1999–2002) and derived from both stoned and whole fruits. The qualitative and quantitative contents of minor polar compounds (MPCs) together with other reference analytical parameters (acidity, peroxides, UV absorption values and Rancimat test) were evaluated. An investigation of the MPCs and oil composition obtained from only stoned olives was also carried out. The acidity values of the oils from stoned fruits were always similar to or lower than those of the corresponding oils from whole fruits. For almost all the samples from stoned olives a better resistance to oxidation was revealed in comparison with the corresponding traditional oils. Five pairs obtained from the 2000 and 2001 harvests showed higher concentrations of both MPCs and hydroxytyrosol derivatives in the oils from stoned fruits, in agreement with their higher Rancimat values. Overall, our findings with regard to acidity values, % hydrolysis, the Rancimat test and the qualitative and quantitative distribution of MPCs suggest a higher antioxidant capacity of the oils from stoned olives. This study investigated lipid oxidation in spaghetti enriched in long chain n−3 polyunsaturated fatty acids (LC n−3 PUFA) by the addition to semolina of an integrator containing eicosapentaenoic acid and docosahexaenoic acid. Two oxidative parameters were evaluated: peroxide value (PV), to assess primary oxidation and oxidised fatty acids to quantify secondary oxidation products. Functional spaghetti had a shelf life comparable to control pasta. LC n−3 PUFA were not significantly implicated in the onset of oxidation in spaghetti stored under daylight and accelerated oxidation in a laboratory heater. Storage decidedly affected shelf life: PV in functional spaghetti increased from 7.1 to 43.4 meq O2/kg of fat under light exposure over 12 months, and from 7.1 to 16.2 meq O2/kg under accelerated ageing at 55 °C for 27 days, reproducing about 18 months at room temperature. Oxidised fatty acids increased in fortified spaghetti from 4.8 to 13.8 g/100 g of fat under light exposure over 12 months and from 4.8 to 7.8 g/100 g of fat at 55 °C in 27 days. The high sensitivity of spectrophotometric and chromatographic analytical methods permitted the evaluation of primary and secondary oxidative derivatives in small amounts of fat. 相似文献

Abstract: Bioactive compounds from natural plant sources are becoming increasingly important to the food industry. Ilex paraguariensis is used in the preparation of a widely popular tea beverage (Yerba Mate) in the countries of Uruguay, Paraguay, Argentina, and Brazil. In this study, extracts of 4 brands of commercial tea, derived from the holly plant species, Ilex paraguariensis, were evaluated for their ability to inhibit or inactivate bacterial foodborne pathogens. The ultimate goal was to evaluate potential use of the extracts in commercial applications. Dialyzed aqueous extracts were screened for antimicrobial activity against Escherichia coli O157:H7 and Staphylococcus aureus. S. aureus was found to be the more sensitive to extracts than E. coli O157:H7. Minimum bactericidal concentrations (MBCs) were determined to be approximately 150 to 800 μg/mL and 25 to 50 μg/mL against E. coli O157:H7 and S. aureus, respectively. A Uruguayan brand had reduced activity against E. coli O157:H7 compared to the Argentinean brands tested. It was concluded that Yerba Mate could be used as a potential antimicrobial in foods and beverages against these pathogenic bacteria. Practical Application: Soluble extracts from Yerba Mate are natural antimicrobials that can be incorporated into food products to achieve longer shelf life. 相似文献

Ostreopsis cf. ovata, a benthic dinoflagellate often blooming along the Mediterranean coasts, has been associated with toxic events ranging from dyspnea to mild dermatitis. In late September 2009, an Ostreopsis cf. ovata bloom occurred in the Gulf of Trieste (Northern Adriatic Sea; Italy), causing pruritus and mild dermatitis in beachgoers. An integrated study was initiated to characterize Ostreopsis cells by light and confocal microscopy, PCR techniques, immunocytochemistry, and high resolution liquid chromatography-mass spectrometry (HR LC-MS). The presence of Ostreopsis cf. ovata of the Atlantic/Mediterranean clade was unambiguously established by morphological and genetic analyses in field samples. Several palytoxin-like compounds (ovatoxin-a,-b,-c,-d,-e) were identified by HR LC-MS, ovatoxin-a being the most abundant (45-64 pg/cell). Surprisingly, no palytoxin was detected. For the first time, monoclonal and polyclonal antipalytoxin antibodies revealed the intracellular cytoplasmic localization of ovatoxins, suggesting their cross-reactivity with these antibodies. Since harmful dinoflagellates do not always produce toxins, the immunocytochemical localization of ovatoxins, although qualitative, can provide an early warning for toxic Ostreopsis cells before their massive diffusion and/or concentration in seafood. 相似文献
