Low-fat pork was produced at extrusion temperatures (ET) of 25, 32.2,43.3,54.4, or 65.6°C with addition of soy protein isolate (SPI) at 0,1.5, or 3% and evaluated by measuring chemical and physical properties of low-fat pork sausage links. ET and SPI addition influenced moisture retention and fat reduction. The highest ET(65.5°C) gave the highest fat reduction in extrudates. TBARS decreased as ET and SPI increased. Extrudates at higher ET made darker and redder sausages. The hardness value of the control was not different from that of sausages from 65.6°C ET extrudates. The fat-reduced sausages were more springy and cohesive than the control. Depending on fat reduction, twin-screw extrusion influenced sausage color, texture, and lipid oxidation. The sausage links from 65.6°C ET extrudates with 1.5% SPI had the lowest fat, lowest TBARS, least cooking loss and were not different in hardness from control high-fat sausages.  相似文献

Frequently unwanted and dangerous surrogate contaminants may be present as reaction impurities, or are formed during synthesis of other compounds. In some instances these impurities are more toxic than the compounds they contaminate. The total environment suffers — from single‐celled living matter to man. Continued widespread use of chemicals not analytically categorized must be re‐evaluated. The ivory-tower image stems from the image of a removed community consciously isolated, an institution emphasizing reflection rather than action. However, changes in technology, demographics, competition and pedagogical approaches are transforming the way universities operate. One of the most extensive heat tracing monitoring systems ever installed is examined. Over 400 circuits in a crude oil separation facility are independently and individually monitored. The results of the initial construction commissioning and the first six months of operation are reported. Analysis of cost-effectiveness and engineering lessons learned about electrical heat tracing systems operations are examined in detail. The results of an operational system are examined. The general philosophy and the physical hardware and software of the heat tracing monitoring system are discussed. In response to an increasing concern on the part of the library staff over the role of the departmental libraries at The Milton S. Hershey Medical Center of The Pennsylvania State University, a questionnaire was developed by the George T. Harrel Library and sent to departmental libraries. From the analyzed responses, the authors were able to define the role of departmental libraries in a medical school/hospital situation, to analyze the Hershey Medical Center situation in an objective manner, to outline areas of possible cooperation between the main and departmental libraries, and to delineate some trends which appear to result from inadequate finding of a central library. Overall, the library found that departmental libraries at Hershey are currently maintaining collections consistent with the functional role of a departmental library.  相似文献

WD-repeat proteins contain four to eight copies of a conserved motif that usually ends with a tryptophan-aspartate (WD) dipeptide. The Saccharomyces cerevisiae PWP2 gene, identified by sequencing of chromosome III, is predicted to contain eight so-called WD-repeats, flanked by nonhomologous extensions. This gene is expressed as a 3.2-kb mRNA in all cell types and encodes a protein of 104 kDa. The PWP2 gene is essential for growth because spores carrying the pwp2 delta 1::HIS3 disruption germinate before arresting growth with one or two large buds. The growth defect of pwp2 delta 1::HIS3 cells was rescued by expression of PWP2 or epitope-tagged HA-PWP2 using the galactose-inducible GALI promoter. In the absence of galactose, depletion of Pwp2p resulted in multibudded cells with defects in bud site selection, cytokinesis, and hydrolysis of the septal junction between mother and daughter cells. In cell fractionation studies, HA-Pwp2p was localized in the particulate component of cell lysates, from which it would be solubulized by high salt and alkaline buffer but not by nonionic detergents or urea. Indirect immunofluorescence microscopy indicated that HA-Pwp2p was clustered at multiple points in the cytoplasm. These results suggest that Pwp2p exists in a proteinaceous complex, possibly associated with the cytoskeleton, where it functions in control of cell growth and separation.  相似文献
