The present investigation was developed as a contribution to Guatemalan's elderly food and nutrition. Its main objective was to evaluate the chemical, nutritional and sensory quality of bread prepared from the partial substitution of wheat flour with rice flour. Wheat flour substitutions with rice flour in the order of 15, 20, 30, 40, 50 and 60% were evaluated. Differences with the control (100% wheat bread) were found during the process of preparation, as well as texture, volume, height, weight and specific volume. Important effects in dough handling were noted specifically in the 40, 50 and 60% rice bread. Thus, a sandy texture was found in breads of higher rice levels. The bread protein quality increased with the level of substitution; however the protein quality difference between the wheat bread and the bread with 60% rice flour did not achieve statistical significance. Based on a statistical analysis of the physical properties the bread with 30 and 40% rice flour was selected, and through a preference test between these last two, the 30% rice flour bread was selected as the sample best suited to the present study's purposes. This bread was not different to wheat bread in many nutritional parameters, although in others it showed to be superior. Each serving size of bread has a weight of 80 grams (2 slices) that contributes adequate quantity of calories, protein and sodium, although a little less dietary fiber than 100% wheat bread. 相似文献

The increasing wind power penetration in power systems represents a techno‐economic challenge for power producers and system operators. Because of the variability and uncertainty of wind power, system operators require new solutions to increase the controllability of wind farm output. On the other hand, producers that include wind farms in their portfolio need to find new ways to boost their profits in electricity markets. This can be done by optimizing the combination of wind farms and storage so as to make larger profits when selling power (trading) and reduce penalties from imbalances in the operation. The present work describes a new integrated approach for analysing wind‐storage solutions that make use of probabilistic forecasts and optimization techniques to aid decision making on operating such systems. The approach includes a set of three complementary functions suitable for use in current systems. A real‐life system is studied, comprising two wind farms and a large hydro station with pumping capacity. Economic profits and better operational features can be obtained from the proposed cooperation between the wind farms and storage. The revenues are function of the type of hydro storage used and the market characteristics, and several options are compared in this study. The results show that the use of a storage device can lead to a significant increase in revenue, up to 11% (2010 data, Iberian market). Supply chain networks need to respond efficiently to operation disruptions, as one of their aims is to guarantee the on time delivery of products. Hence, robustness has become one of the important issues to consider when designing supply networks. There are alternative ways to measure what robustness means in this context. In this paper, we propose a new metric based on the effect on service level of the collapse of active transportation links. Numerical experiments are carried out to understand how different design factors affect robustness. Robustness under a targeted attack is compared with robustness to random failures. Results show that flow complexity (i.e. the number of potential transportation links between supply network nodes) is the most influential factor affecting supply network and its robustness, as well as the service level that can be maintained after disruptions. The objective of this study was to determine the evolution of physicochemical and flow properties of a yoghurt‐type beverage partially replaced with a chickpea extract over a period of 22 days. From two chickpea extracts, Blanco Noroeste was selected for its higher protein content. Six yoghurt‐type formulations were prepared, stored at 4 °C and analysed on days 1, 8, 15 and 22. pH was 4.24–4.75, while brightness was 81.7–94.5. Flow properties of the yoghurt‐type exhibited a non‐Newtonian behaviour. From three formulations that underwent sensory evaluation, the 30:70 mix obtained the highest acceptation. Recent advances in the field of flow cytometry (FCM) have highlighted the importance of incorporating it as a basic analysis tool in laboratories. FCM not only allows the identification of cell subpopulations by detecting the expression of molecules in the cell membrane or cytoplasm, but it can also quantify and identify soluble molecules. The proper functioning of the FCM requires six fundamental systems, from those related to the transport of events to the systems dedicated to the analysis of information. In this review, we have identified the main considerations that every FCM user must know for an optimal antibody panel design, the quality systems that must govern the FCM protocols to guarantee reproducible results in research or clinical laboratories. Finally, we have introduced the current evidence that highlights the relevance of FCM in the investigation and clinical diagnosis of respiratory diseases, establishing important advances in the basic and clinical study of diseases as old as Tuberculosis along with the recent proposals for the monitoring and classification of patients infected with the new SARS-CoV2 virus. 相似文献

In the present study, the production of a reduced-sugar pomegranate juice jelly supplemented with an aqueous extract of pomegranate peel (PE) is described. Influence of different carbohydrate polymers (guar (G), xanthan (X) and tragacanth (T) gums) on rheological properties was studied. Combination GXT presented the most similar rheological behaviour to commercial jelly. Jelly (J) and jelly with PE (JE) were stored at 4 °C over an 8 week period for physical, chemical, antioxidant, microbiological and sensory analysis. J and JE showed similar values for °Brix, colour and Aw, though the pH of JE was lower than J. Thiol and phenolic compounds were higher in JE than in J. Antioxidant activity (radical scavenging activity and autoxidation of linoleic acid) was higher in JE than in J at 0 weeks, and were decreasing with time.
