Meat carcasses must be chilled to below 7 °C before leaving the slaughterhouse. Typically this is done by passing cold air over the surfaces of eviscerated and de-hided carcasses. This surface cooling can take many hours to reduce centre temperatures to below 7 °C. In vascular perfusion chilling (VPC), a cold fluid is circulated through the intact vascular system, offering significant reductions in cooling time.This paper describes a small feasibility study to evaluate vascular perfusion techniques for rapid chilling of lamb carcasses using a proprietary Flo-ice™ system. This produces pumpable ice slurries containing very fine ice particles, suitable for circulating through vascular systems.VPC was found to be capable of rapid initial reduction of carcass temperatures in comparison with air chilling (mean times to 20 °C in deep legs were reduced from 2.6 to 1.3 h, which was significantly different at P < 0.05). In all cases however, uptake of perfusate into the carcasses occurred. This limited the duration of the perfusion treatment and as a result restricted the period of enhanced cooling. Samples from carcasses treated with VPC were lighter (P < 0.05, with mean measured L value increasing from 43.4 to 46.8) and more yellow (P < 0.05, with mean measured b value increasing from 6.7 to 7.9) than samples from conventionally chilled carcasses, and had lower shear force values when cooked (P < 0.05, with mean force reducing from 10.0 to 6.8 kg). This was most probably due to the added water in the meat. Microbial quality of the meat was not significantly affected by the perfusion treatments. 相似文献

Epilepsy has widespread direct and indirect effects on the patient's quality of life. These patients generally have neuropsychological impairments that lower their educational and occupational levels of achievement, and many have additional emotional and/or behavioral disorders. Multiple factors underlie the cognitive changes associated with epilepsy, including the effect of antiepileptic drug (AED) therapy itself. Although it is recognized that the beneficial results of reduced seizure frequency may compensate at least in part for detrimental cognitive AED side effects, polypharmacy and higher AED blood levels can shift this balance. Further, there is much debate concerning the existence and clinical importance of differential AED cognitive side effects. While all the major AEDs can produce cognitive side effects, more recent research indicates that the magnitude of these effects may not be clinically significant with monotherapy within standard therapeutic range. The impact of AED differential cognitive side effects on the patient's quality of life is only beginning to be appreciated as research focuses on this important aspect of patient management. The information gained from such investigations will influence not only current therapeutic decisions, but also the development of future anticonvulsants. 相似文献

Drowning and near drowning remain a common cause of childhood death and disability. Toddlers aged one through four drown in private swimming pools. Submersions greater than 10 minutes and lack of CPR at the scene or the need for greater than 20 minutes of resuscitation portends a poor prognosis. Management of respiratory failure without neurologic impairment has the most successful outcome. Integration of holograms into multimode waveguides allows the implementation of arbitrary unitary mode transformations and unitary matrix-vector multiplication. Theoretical analysis is used to justify a design approach to implement specific functions in these devices. Based on this approach, a compact mode-order converter, a Hadamard transformer, and a spatial pattern generator-correlator are proposed and analyzed. Beam propagation simulations are used to verify the theoretical calculations and to address bandwidth, scalability, and fabrication criteria. Consumers are becoming more aware of the relationships between diet and health and this has increased consumer interest in the nutritional value of foods. This is impacting on the demand for foods which contain functional components that play important roles in health maintenance and disease prevention. For beef, much attention has been given to lipids. This paper reviews strategies for increasing the content of beneficial omega-3 polyunsaturated fatty acids (PUFA) and conjugated linoleic acid (CLA) and reducing saturated fatty acids (SFA) in beef. Particular attention is given to intramuscular fat (IMF) and the relationships between fatty acid composition and key meat quality parameters including colour shelf life and sensory attributes. Despite the high levels of ruminal biohydrogenation of dietary PUFA, nutrition is the major route for increasing the content of beneficial fatty acids in beef. Feeding grass or concentrates containing linseed (rich in α-linolenic acid, 18:3n-3) in the diet increases the content of 18:3n-3 and its longer chain derivative eicosapentaenoic acid (EPA, 20:5n-3) in beef muscle and adipose tissue, resulting in a lower n-6:n-3 ratio. Grass feeding also increases docasahexaenoic acid (DHA, 22:6n-3). Feeding PUFA rich lipids which are protected from ruminal biohydrogenation result in further enhancement of the PUFA in meat with concomitant beneficial improvements in the ratio of polyunsaturated:saturated fatty acids (P:S ratio) and n-6:n-3 ratio. The main CLA isomer in beef is CLA cis-9, trans-11 and it is mainly associated with the triacylglycerol lipid fraction and therefore is positively correlated with level of fatness. The level of CLA cis-9, trans-11 in beef is related to (1) the amount of this isomer produced in the rumen and (2) synthesis in the tissue, by delta-9 desaturase, from ruminally produced trans vaccenic acid (18:1 trans-11; TVA). Feeding PUFA-rich diets increases the content of CLA cis-9, trans-11 in beef. Trans-fatty acids in foods are of rising importance and knowledge of the differential effects of the individual trans isomers is increasing. TVA is the major trans 18:1 isomer in beef and as the precursor for tissue CLA in both animals and man should be considered as a neutral or beneficial trans-isomer. Increasing the content of n-3 PUFA in beef can influence colour shelf life and sensory attributes of the meat. As the content of n-3 PUFA increases then sensory attributes such as "greasy" and "fishy" score higher and colour shelf life may be reduced. Under these situations, high levels of vitamin E are necessary to help stabilise the effects of incorporating high levels of long chain PUFA into meat. However, grass feeding not only increases n-3 PUFA and CLA but, due to its high content of vitamin E, colour shelf life is improved. It is evident that opportunities exist to enhance the content of health promoting fatty acids in beef and beef products offering opportunities to add value and contribute to market differentiation. The DNA-binding preferences of two oligopeptide amides, (His-Pro-Arg-Lys)(3)NH(2) (HR-12) and (Ser-Pro-Arg-Lys)(3)NH(2) (SP-12), have been examined by quantitative DNase I footprinting studies. Two different DNA fragments were investigated: a pair of 5'-(32)P-labeled duplexes from pBR322 with one or other of the complementary strands labeled and a corresponding pair of 5'-(32)P-labeled duplexes representing fragments of the latent membrane protein (LMP-1) gene from a pathogenic Epstein-Barr virus variant derived from nasopharyngeal carcinoma. The major objective was to examine molecular recognition and cooperative features associated with sequence-selective binding of synthetic peptides to the LMP-1 fragments. At various binding sites on the pBR322 fragments, Hill coefficients (n(H)) ranging from 1.9-2.2 were observed; these results indicate modest positive cooperativity between binding sites for both peptides. By contrast, unusually high values of n(H), ranging from 4.0-9.3, were observed at various binding sites on the LMP-1 fragments. Allosteric models can be constructed to interpret the observed cooperative interactions between different DNA recognition sites in the LMP-1 gene upon binding of the peptide ligands. It is noteworthy that these models feature a novel network of cooperativity interconnecting multiple DNA allosteric sites. The evidence of sequence selectivity and strong cooperativity discovered in this work may prove to be a general feature of peptide interactions with some nucleic acids. 相似文献

Bulk superconducting samples of type GdBa2Cu3?x Ru x O7?δ phase, Gd-123, with?x ranging from 0.0 to 0.15 were prepared by the conventional solid-state reaction technique. X-ray powder diffraction (XRD) and the electrical resistivity measurements were performed in order to investigate the effect of Ru4+ ions substitution on Gd-123 phase. Enhancement of the phase formation and the superconducting transition temperature T c for GdBa2Cu3?x Ru x O7?δ phase up to x=0.05 was observed. The effect of magnetic field up to 4.4?kG on the electrical resistivity behavior of the prepared samples was studied to investigate the flux motion of this phase. The derived flux pinning energy?U, based on the thermally activated flux creep TAFC model, decreased with increasing the magnetic field?B. The flux pinning energy followed the exponent behavior as U(B)~B ?β . The superconducting transition width ΔT increased as the magnetic field increased, showing the scaling relation as ΔT~B n . Using Ambegaokar and Halperin AH theory, the magnetic field and temperature dependence of U was found to be U(B,T)~ΔTB ?η , η=β+n. An individual's health status immediately following a disaster may predict long-term morbidity and mortality. However, relative to the growing literature on postdisaster mental health, less is known about physical health outcomes, particularly in developing countries. Unlike most studies, the current investigation obtained physical health data both before and after Typhoon Xangsane, which struck the Da Nang province of Vietnam in 2006, and related these predisaster data to postdisaster health functioning, among other factors. Specifically, a sample of 795 randomly selected adults was interviewed both prior to, and after the typhoon. Results indicated that participants with symptoms of major depressive disorder and panic disorder, older participants, and participants who reported high distress during the actual typhoon were most at-risk for lower self-rated health postdisaster compared to those without these risk factors. Given that Vietnam is still designated a developing country, the present study enhances the literature on postdisaster physical health correlates in developing nations. The scalar mixing time scale, a key quantity in many turbulent combustion models, is investigated for reactive scalars in premixed combustion. Direct numerical simulations (DNS) of three-dimensional, turbulent Bunsen flames with reduced methane–air chemistry have been analyzed in the thin reaction zones regime. Previous conclusions from single step chemistry DNS studies are confirmed regarding the role of dilatation and turbulence–chemistry interactions on the progress variable dissipation rate. Compared to the progress variable, the mixing rates of intermediate species is found to be several times greater. The variation of species mixing rates are explained with reference to the structure of one-dimensional premixed laminar flames. According to this analysis, mixing rates are governed by the strong gradients which are imposed by flamelet structures at high Damköhler numbers. This suggests a modeling approach to estimate the mixing rate of individual species which can be applied, for example, in transported probability density function simulations.
