ABSTRACT: Yogurt base was prepared from reconstituted skim milk powder (SMP) with 2.5% protein and fortified with additional 1% protein (wt/wt) from 4 different milk protein sources: SMP, milk protein isolate (MPI), micellar casein (MC), and sodium caseinate (NaCN). Heat‐treated yogurt mixes were fermented at 40 °C with a commercial yogurt culture until pH 4.6. During fermentation pH was monitored, and storage modulus (G′) and loss tangent (LT) were measured using dynamic oscillatory rheology. Yield stress (σyield) and permeability of gels were analyzed at pH 4.6. Addition of NaCN significantly reduced buffering capacity of yogurt mix by apparently solubilizing part of the indigenous colloidal calcium phosphate (CCP) in reconstituted SMP. Use of different types of milk protein did not affect pH development except for MC, which had the slowest fermentation due to its very high buffering. NaCN‐fortified yogurt had the highest G′ and σyield values at pH 4.6, as well as maximum LT values. Partial removal of CCP by NaCN before fermentation may have increased rearrangements in yogurt gel. Soluble casein molecules in NaCN‐fortified milks may have helped to increase G′ and LT values of yogurt gels by increasing the number of cross‐links between strands. Use of MC increased the CCP content but resulted in low G′ and σyield at pH 4.6, high LT and high permeability. The G′ value at pH 4.6 of yogurts increased in the order: SMP = MC < MPI < NaCN. Type of milk protein used to standardize the protein content had a significant impact on physical properties of yogurt. Practical Application: In yogurt processing, it is common to add additional milk solids to improve viscosity and textural attributes. There are many different types of milk protein powders that could potentially be used for fortification purposes. This study suggests that the type of milk protein used for fortification impacts yogurt properties and sodium caseinate gave the best textural results. 相似文献

A small library of cyclic RGD pentapeptide mimics, including benzyl-substituted azabicycloalkane amino acids, was synthesized with the aim of developing active and selective integrin antagonists. In vitro binding assays established one particular compound with affinity for both the alpha(v)beta(3) and the alpha(v)beta(5) integrins. Poly(vinylidene fluoride)/Pb(Zr0.53Ti0.47)O3([PVDF]1 ? x/[PZT]x ) composites of volume fractions x and (0?C3) type connectivity were prepared in the form of thin films. The films were prepared by solvent casting with PZT powder of 0.84, 1.86, and 2.35???m average size with filler contents up to 40?% volume. The crystalline phase of the polymer matrix was the nonpolar ??-phase and the polar ??-phase. Dielectric measurements were performed in order to evaluate the influence of the filler size and content as well as the effect of the polymer matrix in the overall response of the material. No nucleation effect of any of the phases was observed for the used fillers. The spherulitic structure of the pure ??-PVDF and the characteristic porosity of the ??-phase material are destroyed for high PZT volume fractions. The inclusion of ceramic particles in the PVDF polymer matrix increases the complex dielectric constant of the composites independently of the PVDF polymer matrix. The dielectric properties of the composites are mainly affected by the amount of the ceramic particles. With respect to the relaxation processes of the polymer, the activation energy of the ??a-relaxation increases and the glass transition temperature decreases with increasing particle size and content. The high-temperature conductivity decreases with increasing filler content and there is an important contribution of the Maxwell-Wagner-Sillars effect to the overall dielectric response. 相似文献

Well-defined multiarm star copolymer poly(glycidol)-b-poly(styrene) (PGOH-b-PS) with an average number of PS arms per molecule of 85 has been prepared. The core first approach has been selected as the methodology using atom transfer radical polymerization (ATRP) of styrene to grow the arms from an activated hyperbranched poly(glycidol) as core. This activated hyperbranched macroinitiator was prepared by esterification of hyperbranched poly(glycidol) (PGOH) with 2-bromoisobutyryl bromide.PGOH-b-PS was used to modify diglycidylether of bisphenol A coatings cured by anionic ring-opening mechanism using 1-methyl imidazole as the initiator. The kinetics of the curing process, studied by dynamic scanning calorimetry (DSC), was not much affected when PGOH-b-PS was added to the formulation. By rheometry the effect of this new polymer topology on the complex viscosity (η*) of the reactive mixture was analyzed. The phase-separation of the modified coatings was proved by dynamic thermomechanical analysis (DMTA) and electronic microscopy (SEM and TEM) showing nano- or microphase separation as a function of the modifier content. The addition of this star polymer led to increase in the rigidity in terms of Young's modulus and in the microhardness in comparison to neat DGEBA. 相似文献

Ethylene vinyl acetate copolymer, a thermoplastic semicrystalline polymer, has been blended with barium titanate submicrometric particles (BaTiO3) by means of high‐energy ball milling (HEBM) for obtaining composites in the form of films by hot pressing. Two different milling conditions have been considered: (i) milling at room temperature and (ii) milling under the temperature of the liquid nitrogen (cryomilling). The resulting composites have been fully characterized by spectroscopic and microscopic techniques to study the structure and morphology as a function of the processing conditions. A very good dispersion of the particles is attained under cryogenic conditions and, irrespective of the milling method, structural modifications were not observed in any of the materials used. Cross‐contamination of iron from the milling tools is also reduced to acceptable values for HEBM standards, especially in the case of cryomilling, an important issue for the use of these composites in electrical applications. Nanosized platinum-gold alloys clusters have been deposited on gas diffusion electrode by sputter deposition. The deposits were characterized by FE-SEM, TEM and XPS in order to verify the formation of alloy nanoparticles and to study the influence of deposition technique on the nanomorphology. The deposition by sputtering process allowed a uniform distribution of metal particles on porous surface of carbon supports. Typical island growth mode was observed with the formation of a dispersed metal nanoclusters (mean size about 5 nm). Cyclic voltammetry was used to determine the electrochemical active surface and the electrocatalytic performance of the PtAu electrocatalysts for methanol oxidation reaction. The data were re-calculated in the form of mass specific activity (MSA). The sputter-catalyzed electrodes showed higher performance and stability compared to commercial catalysts. 相似文献

This paper discusses the importance of flavour profiling in detecting indicative parameters for quality control of fresh and heated honey. Flavour compounds of six unifloral honeys (Lavandula stoechas, Castanea sativa, Dorycnium pentaphyllum, Rosmarinus officinalis, Eucalyptus sp and Robinia pseudoacacia) were investigated. The aroma extracts were obtained by a two‐step procedure involving (i) preliminary steam distillation under reduced pressure to evaluate the methylpyrazines generated in heated honeys by spectrophotometry (flavour index) and (ii) Likens–Nickerson's simultaneous steam distillation and solvent extraction (SDE) method with added NaCl. A combined total of 64 compounds were detected by gas chromatography/mass spectrometry (GC/MS), 58 of which were identified. Some compounds appeared to be characteristic of the floral source, particularly in Spanish lavender (methylated aliphatic acids and aromatic esters), eucalyptus (2,3‐pentanedione, acetoin, 1‐hexyl alcohol, 2‐acetyl‐5‐methylfuran, furfuryl propionate, 2‐phenylacetaldehyde and nerolidol), chestnut (acetophenone and 2‐aminoacetophenone), rosemary and D pentaphyllum (aromatic acids and esters, 2‐phenylacetaldehyde, farnesol and thymol) honeys. Robinia honey samples were characterised by very low levels of aromatic compounds. Twenty‐six flavour compounds were statistically closely related to the floral origin of the honeys (P ≤ 0.05). Seventy-four young bulls of the Bruna dels Pirineus beef cattle breed were reared in a typical production system and slaughtered at an average age of 381 days and live weight of 541 kg. The animals were evaluated for productive traits, carcass quality, meat quality, eating quality and biochemical characteristics of m. longissimus thoracis (LT). Biochemical measurements included intramuscular fat (IMF) and collagen proportion, haem pigment concentration, lactate dehydrogenase and isocitrate dehydrogenase activities and type I (MHC I) fibre percentage determined by ELISA. Bruna dels Pirineus bulls achieved high growth rates during the fattening period (1.63 kg/day) and showed good carcass quality, with a high dressing-out proportion (607 g/kg, hot carcass), a good conformation score (U; EUROP) and a moderate fatness score (3;1-5). Carcass composition was estimated from the sixth rib joint dissection (682 g/kg lean proportion, 127 g/kg total dissectable fat and 163 g/kg bone). IMF (24.3 g/kg) and MHC I (27.9%) showed high variabilities (CV>30%). Sensory analysis of LT included beef and livery odour and flavour intensity, and overall tenderness and juiciness assessment of loin samples (14-day ageing). Beef odour and flavour were slightly positively correlated with IMF and carcass fatness score (P<0.05). Fatness, MHC I, insoluble collagen and cooking losses tended to affect the livery flavour intensity positively. This variable was significantly higher in meat from bulls of lower carcass quality (i.e. lower conformation score, lower lean proportion; P<0.05) and higher type I fibre percentage. Loin overall tenderness and juiciness were not affected by the biochemical traits studied, however, they were negatively affected by cooking loss (P<0.05). 相似文献

Vacuum-sealed cavities featuring diamond membranes are fabricated using plasma-activated direct bonding technology. A chemical mechanical polished (CMP) silicon dioxide interlayer, deposited on diamond with a high temperature oxide (HTO) process at 850 °C in a low pressure chemical vapor deposition (LPCVD) furnace, is employed for successful direct bonding and vacuum cavity formation. The circular cavities are defined on the thermally grown oxide of the phosphorus-doped Si wafer (4-in, < 100>, 1.2 Ω/sq) using reactive ion etching (RIE). The same microfabrication steps are applied for low residual stress (i.e. < 50 MPa) nanocrystalline (NCD) and ultrananocrystalline (UNCD) diamonds to determine and compare membrane characteristics. For both diamond types, successful microfabrication of membranes is demonstrated using the optimized process flow. Profilometer measurements of membrane deflection are compared with finite element modeling (FEM), and indicate a Young's modulus of 1000 GPa for NCD and 850 GPa for UNCD. Furthermore, FEM analysis suggests the residual stress of UNCD membrane is approximately 100 MPa tensile, whereas NCD one does not show any significant residual stress (< 50 MPa). Our results show that NCD is a more promising choice than UNCD as a membrane material for electromechanical transducers. 相似文献
