Use of Soy Protein and Microbial Transglutaminase as a Binder in Low-sodium Restructured Meats 总被引:1,自引:0,他引:1
ABSTRACT: Pork sticks were prepared by mixing pork chucks with various amounts of bisulfite-treated soy protein and microbial transglutaminase (MTGase) to evaluate the potential of using soy protein as meat binders. According to tensile strength, the favorable conditions for binding the restructured pork chunks were 5% soy protein containing 0.2% NaHSO3 and 20 unit MTGase/g, and the setting condition was 60 min at 40°C. The tensile strength and cooking yield of restructured pork sticks made with bisulfite-treated soy protein and MTGase were much higher than those of using salt, suggesting the high potential of using soy protein and MTGase as binders in products where NaCl reduction is desired. 相似文献

Hibiscus sabdariffa L extract (HSE) is an aqueous extract of Hibiscus sabdariffa L flowers that is used as a local soft drink and medical herb in Taiwan. Oxidation of low‐density lipoprotein (LDL) has been shown to increase the incidence of atherosclerosis. In this study, we determined the antioxidative activity of HSE on LDL oxidation by examining relative electrophoretic mobilities (REM) and thiobarbituric acid‐reactive substances (TBARS). The data revealed an inhibitory effect of HSE on Cu2+‐mediated REM and TBARS. HSE exhibited a remarkable ability to reduce cholesterol degradation and ApoB fragmentation. Overall, HSE showed a high potency to inhibit the production of oxidized LDL induced by copper and, specifically, to reduce serum triglycerides in high‐fructose diet (HFD) fed rats and serum cholesterol in high‐cholesterol diet (HCD) fed animals. The levels of LDL and the ratio of LDL‐cholesterol (LDL‐C) to HDL‐cholesterol (HDL‐C) were reduced by HSE in both hyperlipidaemia models. Based on these findings, we suggest that HSE may be used to inhibit LDL oxidation and to prevent various types of hyperlipidaemia in HFD‐ or HCD‐fed rats. Chemical characterization of the mutagenic neutral aromatic polar fractions of petroleum substitutes
The constituents of the neutral aromatic polar subfractions of two coal-derived oils, a shale-derived oil and a petroleum oil were analysed and compared. Chemical ionization mass spectra, using methanol and ammonia as reagent gases, were used to characterize the oxygen-and nitrogen-containing constituents, respectively. The compositions of the petroleum substitutes were found to differ from those of petroleum in containing primary polycyclic aromatic amines, azaarenes, polycyclic hydroxyaromatics and, in one case, aromatic ketones. 相似文献

本文在前期魔芋葡甘聚糖(KGM)与乙基纤维素(EC)复合膜的研究基础上,将玉米醇溶蛋白(zein)添加到KGM/EC复合膜液中,以流延方式制备了KGM/EC/zein三元复合膜。通过固定总固形物和较强疏水性成分EC的含量,研究了zein和KGM的含量变化对复合膜的微观结构、力学性能和耐水性能的影响。激光共聚焦显微镜、扫描电镜和显微红外结果表明,当zein添加量为总固形物含量的3%~9%时(对应KGM含量为67%~61%),成膜液和复合膜中各组分分布较为均匀,相容性较好,制备的复合膜微观结构致密。与K70E30复合膜相比,其耐水性能显著提高(P<0.05)。当KGM:EC:zein的固形物比例为64:30:6时,制备的复合膜性质最佳,其拉伸强度、断裂伸长率、水接触角、溶胀率和可溶性固体损失率分别为72.93 MPa、16.39%、104.2°、502.21%、15.50%。本研究为多糖/蛋白基复合可食膜的开发提供了参考。 相似文献
