In recent years, there has been an increasing interest in investigating the carcinogenicity of mycotoxins in humans. This systematic review aims to provide an overview of data linking exposure to different mycotoxins with human cancer risk. Publications (2019 and earlier) of case–control or longitudinal cohort studies were identified in PubMed and EMBASE. These articles were then screened by independent reviewers and their quality was assessed according to the Newcastle–Ottawa scale. Animal, cross‐sectional, and molecular studies satisfied criteria for exclusion. In total, 14 articles were included: 13 case–control studies and 1 longitudinal cohort study. Included articles focused on associations of mycotoxin exposure with primary liver, breast, and cervical cancer. Overall, a positive association between the consumption of aflatoxin‐contaminated foods and primary liver cancer risk was verified. Two case–control studies in Africa investigated the relationship between zearalenone and its metabolites and breast cancer risk, though conflicting results were reported. Two case–control studies investigated the association between hepatocellular carcinoma and fumonisin B1 exposure, but no significant associations were observed. This systematic review incorporates several clear observations of dose‐dependent associations between aflatoxins and liver cancer risk, in keeping with IARC Monograph conclusions. Only few human epidemiological studies investigated the associations between mycotoxin exposures and cancer risk. To close this gap, more in‐depth research is needed to unravel evidence for other common mycotoxins, such as deoxynivalenol and ochratoxin A. The link between mycotoxin exposures and cancer risk has mainly been established in experimental studies, and needs to be confirmed in human epidemiological studies to support the evidence‐based public health strategies.  相似文献

Mycenarubin C, a previously unknown red pyrroloquinoline alkaloid, was isolated from fruiting bodies of the mushroom Mycena rosea and its structure was elucidated mainly by NMR spectroscopy and mass spectrometry. Unlike mycenarubin A, the major pyrroloquinoline alkaloid in fruiting bodies of M. rosea, mycenarubin C, contains an eight-membered ring with an additional C1 unit that is hitherto unprecedented for pyrroloquinoline alkaloids known in nature. Incubation of mycenarubin A with an excess of formaldehyde revealed that mycenarubin C was generated nearly quantitatively from mycenarubin A. An investigation into the formaldehyde content of fresh fruiting bodies of M. rosea showed the presence of considerable amounts of formaldehyde, with values of 5 μg per gram of fresh weight in fresh fruiting bodies. Although mycenarubin C did not show bioactivity against selected bacteria and fungi, formaldehyde inhibits the growth of the mycoparasite Spinellus fusiger at concentrations present in fruiting bodies of M. rosea. Therefore, formaldehyde might play an ecological role in the chemical defence of M. rosea against S. fusiger. In turn, S. fusiger produces gallic acid—presumably to detoxify formaldehyde by reaction of this aldehyde with amino acids and gallic acid to Mannich adducts.  相似文献

Several hop derived compounds in wort are known to be converted by yeast during fermentation, influencing the overall perception of the beer. A deeper understanding of such metabolic processes during fermentation is needed to achieve better control of the outcome. Here, the interaction between hop derived compounds and the yeast genera Brettanomyces was studied. Several Brettanomyces strains with different genomic backgrounds were selected, focusing on two traits: beta-glucosidase activity and nitrate assimilation. The role of three beta-glucosidases present in Brettanomyces bruxellensis and Brettanomyces anomalus and their impact on the final monoterpene alcohol profile was analysed. The beta-glucosidase activity was highly strain dependent, with B. anomalus CRL-49 exhibiting the highest conversion. Such activity could not be related to the release of aglycones from hops during fermentation, as a substantial part of such activity was intracellular. Nevertheless, the reduction of geraniol to β-citronellol was remarkably efficient for all Brettanomyces strains during fermentation, and it is suggested that two oxidoreductases BbHye2 and BbHye3 may have an influence. Moreover, the transfer of nitrate from hops to wort and its further assimilation by Brettanomyces species was analysed. The amount of nitrate in wort proved to be linearly proportional to the contact time of the hops with the wort. The level of nitrate assimilation by yeast was shown to be dependent on the nitrate assimilation cluster (YNR, YNI, YNT). Hence, the desired yeast strains may be selected according to the genetic make-up. © 2020 The Authors. Different countries have tried to define guidelines to quantify what levels of fungi are considered as inappropriate for housing. This retrospective study analyzes indoor fungi by cultures of airborne samples from 1012 dwellings. Altogether, 908 patients suffering from rhinitis, conjunctivitis, and asthma were compared to 104 controls free of allergies. Portuguese decree law no 118/2013 (PDL118), ANSES (a French environmental and health agency) recommendations, and health regulations of Besançon University Hospital were applied to determine the rates of non‐conforming dwellings, which were respectively 55.2%, 5.2%, and 19%. Environmental microbiological results and medical data were compared. The whole number of colonies per cubic meter of air was correlated with asthma (P < 0.001) and rhinitis (P = 0.002). Sixty‐seven genera and species were detected in bedrooms. Asthma was correlated to Aspergillus versicolor (P = 0.004) and Cladosporium spp. (P = 0.02). Thresholds of 300 cfu/m3 for A. versicolor or 495 cfu/m3 for Cladosporium spp. are able to discriminate 90% of the asthmatic dwellings. We propose a new protocol to obtain an optimal cost for indoor fungi surveys, excluding surface analyses, and a new guideline to interpret the results based on >1000 cfu/m3 of whole colonies and/or above threshold levels for A. versicolor or Cladosporium spp.  相似文献

The present study addressed the need for furan mitigation measures at the level of food production, where the effects of extrinsic (process-related) and intrinsic (product-related) properties on furan formation in vegetable-based systems were investigated. For the first time in the literature, the effect of high-pressure high-temperature (HPHT) processing on the formation of furan was demonstrated. HPHT processing was proven to be an interesting alternative for furan reduction in vegetable-based systems, when aiming for sterilization intensities. Following HPHT treatment, the furan concentrations of a wide range of individual vegetable purées dropped to levels close to the analytical limits (1–2 ng/g purée). A higher processing cost might limit the use of HPHT processing to high-value added products, which means that for many other conduction-heated food products, conventional heating would remain the standard technology. As a first step towards control of furan formation in the latter products, a mixed model regression was used to identify the major precursors in vegetable-based systems. Significant correlations were observed for vitamin C and sugars, which were attributed to the efficiency of the conversion and high concentrations, respectively. Next to furan, the HPHT- and thermally treated purées were analyzed for 2- and 3-methylfuran, which are likely to undergo the same metabolic fate as furan. For most of the vegetables tested, the total amount of methylfuran found in the thermally treated purées could not be ignored. Similarly to furan, there was a clear reduction in the concentrations found in the HPHT-treated purées.  相似文献

Application of principal component regression (PCR) was proposed for the development of a prediction equation of forage composition by near infra-red spectroscopy. PCR involves two steps: (a) the creation of new synthetic variables by principal component analysis (PCA) of spectral data, and (b) multiple linear regression with these new variables. Results obtained by this procedure have been compared with those generated by the conventional application of multiple linear regression (MLR) on spectral data. The comparison used the determination of protein content and in vitro dry matter digestibility (IVDMD) in 345 samples of lucerne forages. For protein determination, results of both procedures were quite similar (correlation coefficients: 0.978 and 0.980; standard errors of calibration: 0.86 and 0.84% DM; standard errors of prediction: 0.81 and 0.80% DM respectively for MLR and PCR prediction equations). The same was observed for IVDMD determination (correlation coefficients: 0.942 and 0.951; standard errors of calibration: 1.89 and 1.71% DM; standard errors of prediction: 2.22 and 2.22% DM, respectively). A large number of PCA variables were necessary for an accurate prediction of both constituents. The influence of the number of regression terms introduced in the PCR equation has been studied. The criterion for stopping the introduction of new terms in PCR did not seem as critical as in MLR.  相似文献
