A new method was developed to assess the texture of crispy-crusted foods with a soft, high-moisture core. This method, applied to commercial pre-cooked chicken nuggets, combines characteristics derived from the force/displacement curves of the whole sample with characteristics of the simultaneously emitted sound. The use of a not-sharp blade probe to perform the test proved to be an effective technique for characterizing the texture of chicken nuggets after different final cooking processes. The force curves of the samples differed with the cooking process. Deep-fried samples and those cooked in a conventional oven presented jagged force curves and acoustic signals with many peaks, both characteristics of crispy products. The curve profiles of microwaved samples were drastically different and typical of tough, gummy products. The use of a susceptor package in microwave heating improved the crispness of the samples. The number of sound peaks was the acoustic parameter that best discriminated between the samples. It was found that although the moisture and fat contents of the core and crust are closely related to the texture characteristics, samples with similar water contents can have very dissimilar crispness characteristics. The fat content of the core did not change significantly with the final cooking process in any of the samples.  相似文献

In several European countries clawed lobsters, such as the European (Homarus gammarus) and American (H. americanus) ones are widely consumed. Yet, information about essential elements and contaminants in both species is still scarce. Therefore, the aim of this work was to characterise the elemental content in the edible part (muscle, hepatopancreas, gonads and roe) of both homarids and to compare them with the daily intake recommendations and maximum allowed levels. Two techniques were employed: energy-dispersive X-ray fluorescence (EDXRF) to quantify Cl, S, K, Ca, Fe, Cu, Zn, As, Se, Br and Sr; and flame atomic-absorption spectrometry (FAAS) to analyse Na, Mg, Mn, Cd, Hg and Pb. Significant differences were found in the elemental composition of edible tissues of both species, likely reflecting the distinct physiological role of those tissues: muscle (higher: Na, Mg, Ca and Sr; lower: Fe, Se, Cd); hepatopancreas (higher: Fe, Cu, Br and Cd); gonads (lower: Cl, Ca, Zn and Hg); and roe (higher: Na and Br; lower: K and As). Statistical differences in the elemental composition of each tissue were found between both homarids: Muscle (Na, Se, As and Hg); Hepatopancreas (Na, Mg, Fe, Cu, Se, Br and Hg); and gonads (S and Zn). Since the geographical distribution of both species is different, the differences likely reflect distinct elemental composition in the aquatic environment and, consequently in the feed chain. Both lobster species were rich sources of Na, Cl, Cu, Zn and Se for human consumption. Regarding contaminants, only Cd was detected at high concentrations in the hepatopancreas of both homarids. Despite Cd values were well above the maximum allowed level set by the European Commission for crustaceans’ muscle, so far any limit value was set for crustaceans’ hepatopancreas. Nonetheless, the present study recommends avoiding or moderately consuming this tissue in homarids.  相似文献

Highly reactive SnO2-doped nanocrystalline powders with average particle size of 20 nm and specific surface areas above 30 m2/g were obtained through the polymeric precursor method with tin oxalate (SnC2O4) as a chloride-free precursor for SnO2. Powders and sintered discs were characterized by means of X-ray powder diffraction (XRD), SEM and TEM. The influence of Co and Fe on the microstructure development and on the electrical properties of dense SnO2-based ceramics was studied. Co and Fe species were found to decrease in more than 70 °C the sintering temperature of SnO2 with respect to mixed oxide procedures. Secondary phases enriched in Co and Fe were detected and identified in sintered samples with XRD. Current-voltage curves were registered for electrical characterization. Doping with iron increased the electrical breakdown field and a nonlinearity coefficient of 20 was achieved.  相似文献

Small grid‐connected photovoltaic (PV) facilities in Spain receive either a premium of 0.36€ kWh?1 over the average price on the power market or a fixed price of 0.40€ kWh?1. However, legislation on this matter (Royal Decree 2818/98) requires a periodic review of these figures. The basis of on‐going revision of these prices has been their profitability. However, the economic success of such PV facilities is clearly affected by the amount of solar radiation at the site where they are located. Since Spain is between latitudes 44 and 36° in the northern hemisphere, the feasibility of these systems must be analysed for different regions. Two different models have been used to produce the required input data for such an analysis: a model that generates typical solar radiation years and temperatures taken from satellite images and an empirical model for the prediction of daily power produced by a grid‐connected photovoltaic system. From the results of this regional economic analysis, it may be concluded that the existing prices are insufficient in and of themselves to make these small grid‐connected systems profitable anywhere in Spain. To guarantee the economic feasibility of these PV installations in any given location, the fixed price paid for the electricity should be around 0.93€ kWh?1. Nevertheless, if the Government were to double the current fixed price, in consideration of the slow increase in the PV market in recent years, this would mean that small grid‐connected installations would become profitable in at least 77% of the Spanish territory. Significant antiproliferative effects against various tumor cell lines were observed with novel ampicillin salts as ionic liquids. The combination of anionic ampicillin with appropriate ammonium, imidazolium, phosphonium, and pyridinium cations yielded active pharmaceutical ingredient ionic liquids (API‐ILs) that show potent antiproliferative activities against five different human cancer cell lines: T47D (breast), PC3 (prostate), HepG2 (liver), MG63 (osteosarcoma), and RKO (colon). Some API‐ILs showed IC50 values between 5 and 42 nM , activities that stand in dramatic contrast to the negligible cytotoxic activity level shown by the ampicillin sodium salt. Moreover, very low cytotoxicity against two primary cell lines—skin (SF) and gingival fibroblasts (GF)—indicates that the majority of these API‐ILs are nontoxic to normal human cell lines. The most promising combination of antitumor activity and low toxicity toward healthy cells was observed for the 1‐hydroxyethyl‐3‐methylimidazolium–ampicillin pair ([C2OHMIM][Amp]), making this the most suitable lead API‐IL for future studies.  相似文献

The present study evaluated whether the changes in the labeling pattern of cytoskeletal proteins in osteogenic cells cultured on bioactive glass‐based materials are due to altered mRNA and protein levels. Primary rat‐derived osteogenic cells were plated on Bioglass® 45S5, Biosilicate®, and borosilicate (bioinert control). The following parameters were assayed: (i) qualitative epifluorescence analysis of actin and tubulin; (ii) quantitative mRNA and protein expression for actin and tubulin by real‐time PCR and ELISA, respectively, and (iii) qualitative analysis of cell morphology by scanning electron microscopy (SEM). At days 3 and 7, the cells grown on borosilicate showed typical actin and tubulin labeling patterns, whereas those on the bioactive materials showed roundish areas devoid of fluorescence signals. The cultures grown on bioactive materials showed significant changes in actin and tubulin mRNA expression that were not reflected in the corresponding protein levels. A positive correlation between the mRNA and protein as well as an association between epifluorescence imaging and quantitative data were only detected for the borosilicate. SEM imaging of the cultures on the bioactive surfaces revealed cells partly or totally coated with material aggregates, whose characteristics resembled the substrate topography. The culturing of osteogenic cells on Bioglass® 45S5 and Biosilicate® affect actin and tubulin mRNA expression but not the corresponding protein levels. Changes in the labeling pattern of these proteins should then be attributed, at least in part, to the presence of a physical barrier on the cell surface as a result of the material surface reactions, thus limiting fluorescence signals.
