Additives stabilize or improve the organoleptic or functional properties (or both) of many dairy products including whipping cream. Their influence on the metabolic effect of dairy cream is scarcely known. We tested the hypothesis that added emulsifier (lactic acid esters of mono- and diglycerides; MAG/DAG), thickener (carrageenan, CGN), or both, could modify the metabolic effect, notably in the intestine and liver. Nine-week-old male C57Bl/6J mice were fed UHT cream (indirect treatment) mixed with nonlipidic powder (final: 13% milkfat) for 1 or 4 wk. We compared creams (1) without additive (Ctl), (2) with thickener (Th), 0.02% of κ-CGN, and (3) with both thickener and emulsifier, 0.1% of MAG/DAG esters (Th/Em). We analyzed plasma parameters, intestine, and liver. Fasting glycemia, insulinemia, triglyceridemia, nonesterified fatty acids, body weight gain, and liver weight did not differ among groups. After 1 wk, Th/Em had higher expression in the duodenum of some of the genes involved in (1) intestinal lipid absorption and (2) tight junction proteins versus Ctl and Th. After 4 wk, mucus cell number in the small intestine was higher in Th/Em versus Ctl and Th. Genes involved in endoplasmic reticulum (ER) stress in the duodenum were more expressed in Th/Em after 1 wk. After 4 wk, in the colon, a higher expression of ER stress genes was observed for Th versus Th/Em and Ctl. Liver damage score was not altered by additives. Adding both CGN (0.02%) and MAG/DAG esters (0.1%) in dairy cream did not result in deleterious outcomes in mice after 4 wk regarding lipid metabolism, intestinal permeability, and liver disorders. The longer term effect of intestinal ER stress modulation deserves further investigation.  相似文献

Lupinus, like Glycine max (soybean), is an ancient leguminous plant. It has been used as a food by people living around the Mediterranean Sea and in the Andean Highlands. This legume contains quinolizidine alkaloids (Qas), oligosaccharides (OGS) and phenolic compounds (PC). The objective of this study was to evaluate the effect of the growth of Rhizopus oligosporus on the levels of Qas, OGS and PC from L. mutabilis, L. campestris and G. max through tempeh elaboration. The results showed that the soaking and cooking processes of legume seeds diminished the Qas content of L. mutabilis and L. campestris by 50%, and after 48 h of fermentation these compounds decreased by more than 90% in total. OGS diminished by more than 90% in the lupin seeds. The PC content of the three seed species subjected to these processes increased their absorbance value, probably due to the enzymatic action of a fungal tannase. These results suggested that the L. mutabilis, L. campestris and G. max fermentation with R. oligosporus is an efficient method for diminishing antinutritional factors and for obtaining a product with optimal nutritional value. The total solids required for yogurt preparation were obtained by soy milk microfiltration and ultrafiltration. Inulin was incorporated at the level of 20–70 g/L, and the soy milk containing inulin was fermented using conventional microorganisms. The chemical, physical and sensory properties of the products were evaluated. The membrane concentration of soy proteins leads to yogurts with an increase of 59 g/L of proteins and 15 g/L of vegetable fats, reducing ash and anti-nutrients content. The clot had high stability and protein concentration generated a buffer effect smoothing the acidity and the flavor obtained is more agreeable. In addition, the proteins were concentrated without thermal treatment. As the inulin content increased, creaminess and viscosity increased as well. The products prepared presented nice smell, flavor and color, being the sample with higher global acceptability the yogurt with 50 g/L of inulin (P < 0.05).  相似文献

The antioxidant activity and phytochemical composition (ascorbic acid, free sugars and phenolic compounds) of decoctions and infusions of wild and commercial samples of Tuberaria lignosa (Sweet) Samp. Aerial parts were evaluated and compared. Among wild samples, the effects of the drying method (freeze or shade-drying) on those parameters were studied. Infusion of the freeze-dried wild sample gave the highest levels of sugars, while infusion of shade-dried wild sample and decoction of the freeze-dried sample presented higher ascorbic acid and phenolic compounds content (including ellagitannins and flavonoids) than the other samples. The last two samples also revealed higher antioxidant activity, in some cases even higher than Trolox. Decoctions gave lower amounts of disaccharides than infusions, which seemed to be hydrolysed, increasing the content of monosaccharides. Commercial samples showed the lowest content in phenolic compounds, mainly in ellagitannins and flavonoids, and also the lowest antioxidant activity. This work gives scientific evidence to the traditional medicinal uses of wild Tuberaria lignosa, highlighting the interest of its decoctions and infusions as a source of bioactive compounds and functional beverages.  相似文献

Highly purified allergens namely cow's milk alpha-lactalbumin (ALA). (Bos d 4), beta-lactoglobulin (BLG) (Bos d 5) and casein (Bos d 8) and goat's milk casein were prepared from the raw milk from a single animal with a known genetic background. Consequently the natural isoforms are limited, constant and characterized. Purification included selective precipitations and chromatographical steps. Characterization of structure and allergenic activity assessment of milk allergens were carried out using physicochemical and immunochemical methods. Taken together data demonstrated the absence of impurities and of contamination by other milk allergens in each preparation. NMR and circular dichroism analyses confirmed the native conformation and proper folding of ALA and BLG and the expected absence of folding of bovine and caprine casein. Enzyme immuno assays confirmed the native conformation of BLG and the purity and immunoreactivity of all the proteins. The allergenic activity, e. g. the IgE binding capacity, of purified proteins was identical as that of those proteins when present in milk. The purified proteins also demonstrated the ability to provoke the degranulation of humanized rat basophilic leukaemia cells. All the data thus confirm the purity, identity, structural conformation and functionality of the prepared milk allergens.  相似文献

Ti‐BEA and Ti‐FAU, obtained by post‐synthesis treatment, and TS‐1, obtained by direct hydrothermal synthesis, have been tested as catalysts for the Ruff oxidative degradation of calcium d‐gluconate to d‐arabinose using diluted hydrogen peroxide as oxidant. Only large‐pore zeolites Ti‐BEA and Ti‐FAU were found to be active. It was shown, in particular, that a very rapid leaching of titanium occurred and that the titanium species present in the solution were responsible for the catalytic activity observed. A mathematical model of wire-coating based on Giesekus constitutive equation is analyzed under isothermal conditions. It is desired to see the functional dependence of Giesekus model parameters on the important operating variables in the wire-coating process, which include volumetric flow rate (later referred to as flow rate), shear stress at the wire surface (later referred to as shear stress), force required for pulling the wire (later referred to as force), and radius of the coated wire (later referred to as coated wire thickness). To this end, the equation governing the laminar, incompressible, and rectilinear flow is first derived and then solved analytically for the case of vanishing axial pressure gradient. A numerical procedure is described to obtain the solution for the case of nonvanishing pressure gradient. Our results indicate that the magnitude of shear stress and force follow a decreasing trend with increasing Giesekus model parameters in both cases. The flow rate and coated wire thickness decrease on increasing the Giesekus model parameters when there is no imposed pressure gradient. However, in the presence of pressure gradient these variables first decrease with increasing Giesekus model parameters and then follow an increasing trend.  相似文献

Desiccant cooling is an alternative technique to vapour compression systems. When thermally driven at moderate temperatures, it can be coupled to solar collectors. The use of flat-plate collectors and air collectors has demonstrated low efficiency in the coupling process and so a low potential of solar energy use in desiccant cooling. In this paper the use of heat pipe vacuum tube (HPVT) collectors in a solar desiccant cooling set up is investigated. First, a model for the collectors is proposed and experimentally validated under various operating conditions. A model of the storage tank taking into account thermal stratification is also validated. The experimentally evaluated efficiency of the HPVT collectors for one operating day varies between 0.6 and 0.7. Finally, simulation of the solar desiccant plant cooling a building is performed for different climates over a summer season. The solar fraction and the overall efficiency of the solar plant are calculated for this period and the potential of the vacuum tube collectors is evaluated for application to the desiccant cooling process.  相似文献

In this study, we present the experimental results for the crosslinking process of a commercial polyester resin based on measurements of the spin lattice relaxation time T1 of protons, as function of the crosslinking time evolution. Multiexponential decomposition of the evolution of magnetization measured in inversion‐recovery experiments is performed. The population of “rigid” and “mobile” nuclear spin sites was estimated as function of time evolution. In analogy to the usual monomer conversion u, site conversion from “mobile” to “rigid” sites uM were also estimated as a function of time evolution and initial concentrations of the reagents.
