The effect on the wine protein haze potential of five organic acids commonly encountered in wines (l(+)-tartaric, l(−)-malic, citric, succinic and gluconic acids) was assessed. All five acids, tested at 20 mM, reduced dramatically the haze potential of proteins, either in wine or dissolved in water, throughout the range of pH values typical of wines (i.e., from 2.8 through 3.8). Subtle differences among the acid effects did not correlate with the number of their carboxyl groups, but were attributed to electrostatic interactions that depend upon the acid pKa values, the protein pI values and the medium pH. These results invalidate or question the validity of all experiments on wine proteins involving wine model solutions containing organic acids. Overall, the results obtained in the present work clearly indicate that organic acids with a common occurrence in wines exhibit a stabilising effect upon the haze potential of the wine proteins.  相似文献

We report on the photoelectrochemical performances of a nanocomposite photoactive material made of copper tungstate (CuWO4) and multi-wall carbon nanotubes (MWCNT). The purpose of this work was to create a light absorber/charge collector composite material with tunable electronic transport properties to minimize the bulk resistance of CuWO4 material class. Nanocomposite thin films (typically 2.0 ± 0.1 μm) were fabricated by means of spray pyrolysis using solutions containing copper acetate, ammonium metatungstate and MWCNT. Spray-deposited polycrystalline CuWO4 films were found to be porous, though crack-free, and made of CuWO4 nanoparticles with dimensions in the 10–50 nm range. Tauc plots derived from UV–visible and photocurrent spectroscopy techniques led to a consistent band gap value of 2.20 (±0.05) eV. Electrochemical impedance spectroscopy performed in pH10 buffer solution under Air Mass 1.5 global (AM1.5G) at 0.8 V vs. saturated calomel electrode (1.63V vs. reversible hydrogen electrode) pointed out a bulk resistance reduction by 30% on nanocomposites photoanodes when compared to un-modified CuWO4 control samples. It is worth mentioning that the reduction in bulk resistance was achieved with an extremely low MWCNT:CuWO4 weight ratio (1:10,000), in which MWCNT absorbed less than 2% of incoming light. Subsequent linear scan voltammetry (LSV) performed in the same conditions revealed a photocurrent density increase of 26% at 0.8 VSCE (1.63 VRHE) compared to control samples. Additional LSV and incident photon-to-current efficiency measurements demonstrated that MWCNT served as effective electron collectors distributed throughout the entire CuWO4 bulk.  相似文献

Experiments were conducted to investigate the biochemistry of digestion of the major storage proteins from soya bean, pea, faba bean, blue lupin, and chickpea seeds in the ileum of piglets. Hyperimmune plasmas against the crude protein extracts and the purified 11S and 7S globulin fractions of each legume seed and an anti‐pea albumin PA2 and lectin antibody were used. They served to probe immunoblots of feed protein extracts and ileal digesta samples. Globally, the recognition by plasmas of intact or partially digested proteins in ileal digesta was rather faint, in agreement with the fairly high in vivo digestibility data obtained with these legume seed proteins. Nevertheless, immunoreactive polypeptides found in digesta of piglets fed pea, faba bean and chickpea belonged mainly to proteins of the 7S family, and to other proteins including low‐molecular weight components such as PA2 albumin and lectin in the case of pea. In piglets fed lupin, nearly intact polypeptides from the 11S family were detected. To conclude, the present immunochemical study conducted on ileal digesta of piglets revealed a few dietary legume proteins of the vicilin and albumin families. A new contact acoustic emission detector (CAED) was developed for the instrumental texture evaluation of apples. The goal of this work was to determine the relations between instrumental parameters and sensory texture attributes, and to develop calibration models for prediction of the sensory texture of apples with CAED. Seven apple cultivars were used for the construction and validation of the models. CAED is particularly useful for evaluation of sensory crispness, crunchiness and hardness. There is also a significant correlation of acoustic emission counts with juiciness, mealiness and overall texture. Validation of the models indicates better prediction of these sensory attributes by total acoustic emission counts than prediction by puncture firmness in terms of variance explained, root-mean-square of a model prediction, and bias.  相似文献

The article is an attempt to compile the results of CFD liquid flow simulation through pipeline section containing hydraulic elbow with the results of ultrasonic flow measurements. To carry out the measurements behind the flow disturbing element (hydraulic elbow), an ultrasonic flowmeter with applied head set in accordance with the Z-type system was used. For comparative purposes, a flow simulation for 3 different turbulence models (k-epsilon, SST and SSG) was performed. It was found that with a proper ultrasonic flowmeter heads configurations, it is possible to measure the flow rate disturbed by the hydraulic elbow at any distance from the source of the disturbance. It has to use appropriate correction factor that can be determined by knowing the flow velocity profile equation. Based on comparison of CFD simulation results with experimental data, the accuracy/ purposefulness of using individual turbulence models in the case of discussed hydraulic installation was evaluated.  相似文献

The aim of this research was to study high hydrostatic pressure inactivation of two strains of Escherichia coli (E. coli O59:H21 [CECT 405] and E. coli O157:H7 [CECT 5947]) inoculated in washed-curd model cheese elaborated with and without starter and the ability of these strains for survival, recovery, and growth. Samples were treated at 300, 400, and 500 MPa for 10 min at 20 degrees C and analyzed after the treatment and after 1, 7, and 15 days of storage at 8 degrees C to study the behavior of Escherichia populations. Cheeses elaborated with starter showed the maximum lethality at 400 and 500 MPa, and no significant differences in the baroresistant behavior of either strains were detected, except for E. coli O157:H7 at 400 MPa in cell counts obtained with thin agar layer method medium, where the decrease value was significantly lower. In cheese elaborated without starter, the highest decrease value was observed at 500 MPa, except for E. coli O59:H21 in cell counts obtained with selective culture medium, where the highest decrease value was also found at 400 MPa. The ability to repair and grow was not observed in model cheese elaborated with starter, as cell counts of treated samples decreased after 15 days of storage at 8 degrees C. By contrast, in cheese elaborated without starter, all pressurized samples showed the trend to repair and grow during the storage period in both strains. These results suggest that the presence of starter and low pH values are the main factors that control the ability of Escherichia strains inoculated in this type of cheese and treated by high hydrostatic pressure to recover and grow.  相似文献

In the present work, the heat transfer study focuses on assessment of the impact of bed temperature on the local heat transfer characteristic between a fluidized bed and vertical rifled tubes (38mm-O.D.) in a commercial circulating fluidized bed (CFB) boiler. Heat transfer behavior in a 1296t/h supercritical CFB furnace has been analyzed for Geldart B particle with Sauter mean diameter of 0.219 and 0.246mm. The heat transfer experiments were conducted for the active heat transfer surface in the form of membrane tube with a longitudinal fin at the tube crest under the normal operating conditions of CFB boiler. A heat transfer analysis of CFB boiler with detailed consideration of the bed-to-wall heat transfer coefficient and the contribution of heat transfer mechanisms inside furnace chamber were investigated using mechanistic heat transfer model based on cluster renewal approach. The predicted values of heat transfer coefficient are compared with empirical correlation for CFB units in large-scale.  相似文献

This paper demonstrates the plane stress state and the stress free thermo-elastic deformation of FGM thick plate under thermal loading. First, the Sneddon-Lockett theorem on the plane stress state in an isotropic infinite thick plate is generalized for a case of FGM problem in which all thermo-mechanical properties are optional functions of depth co-ordinate. The proof is based on application of the Iljushin thermo-elastic potential to displacement type system of equations that reduces it to the plane stress state problem. Then an existence of the purely thermal deformation is proved in two ways: first, it is shown that the unique solution fulfils conditions of simultaneous constant temperature and linear gradation of thermal expansion coefficient, second, proof is based directly on stress type system of equations which straightforwardly reduces to compatibility equations for purely thermal deformation if only stress field is homogeneous in domain and at boundary. Finally, couple examples of application to an engineering problem are presented.  相似文献
