Yogurt preserves and enhances nutritional value of milk. In this study, we have compared several strains to determine the physicochemical, sensory, rheological and aroma characteristics of different yogurts. We used Lactobacillus gasseri LGZ 1029 (LG), commercial probiotic L. rhamnosus (LGG) and traditional fermentation strains Streptococcus thermophilus and L. bulgaricus (SL). Results showed that the flavour and texture characteristics of mixed-strain yogurts were obviously better than in single-strain yogurts. Addition of LG increased pseudoplastic behaviour, as shown by Herschel–Bulkley model analysis of rheological behaviour. The LG + SL group also had both the highest viscosity consistency index and thickening ability. In addition, a total of 57 volatile compounds were detected in yogurts and the fermentation with the addition of LG was mainly affected by ketones. Metabolomics focuses on the global study of metabolites in cells, tissues and biofluids. Analytical technologies such as nuclear magnetic resonance (NMR) spectroscopy and hyphenated mass spectrometry (MS) combined with advanced multivariate statistical methods allow us to study perturbations in metabolism. The close link between metabolism and nutrition has seen the application of metabolomics in nutritional research increase in recent times. Such applications can be divided into three main categories, namely (1) the area of dietary biomarker identification, (2) diet‐related diseases and (3) nutritional interventions. A novel microfluidic approach for the quantification of reaction kinetics is presented. A three-dimensional finite difference numerical simulation was developed in order to extract quantitative kinetic information from fluorescence lifetime imaging experimental data. This approach was first utilized for the study of a fluorescence quenching reaction within a microchannel; the lifetime of a fluorophore was used to map the diffusion of a quencher across the microchannel. The approach was then applied to a more complex chemical reaction between a fluorescent amine and an acid chloride, via numerical simulation the bimolecular rate constant for this reaction was obtained. 相似文献

A feedback method for obtaining real-time information on the mechanical disruption of tissue through ultrasound cavitation is presented. This method is based on a substantial reduction in ultrasound imaging backscatter from the target volume as the tissue structure is broken down. Ex-vivo samples of porcine liver were exposed to successive high-intensity ultrasound pulses at a low duty cycle to induce mechanical disruption of tissue parenchyma through cavitation (referred to as histotripsy). At the conclusion of treatment, B-scan imaging backscatter was observed to have decreased by 22.4 +/- 2.3 dB in the target location. Treated samples of tissue were found to contain disrupted tissue corresponding to the imaged hypoechoic volume with no remaining discernable structure and a sharp boundary. The observed, substantial backscatter reduction may be an effective feedback mechanism for assessing treatment efficacy in ultrasound surgery using pulsed ultrasound to create cavitation. 相似文献

Our recent studies have demonstrated that mechanical fractionation of tissue structure with sharply demarcated boundaries can be achieved using short (< 20 micros), high intensity ultrasound pulses delivered at low duty cycles. We have called this technique histotripsy. Histotripsy has potential clinical applications where noninvasive tissue fractionation and/or tissue removal are desired. The primary mechanism of histotripsy is thought to be acoustic cavitation, which is supported by a temporally changing acoustic backscatter observed during the histotripsy process. In this paper, a fast-gated digital camera was used to image the hypothesized cavitating bubble cloud generated by histotripsy pulses. The bubble cloud was produced at a tissue-water interface and inside an optically transparent gelatin phantom which mimics bulk tissue. The imaging shows the following: (1) Initiation of a temporally changing acoustic backscatter was due to the formation of a bubble cloud; (2) The pressure threshold to generate a bubble cloud was lower at a tissue-fluid interface than inside bulk tissue; and (3) at higher pulse pressure, the bubble cloud lasted longer and grew larger. The results add further support to the hypothesis that the histotripsy process is due to a cavitating bubble cloud and may provide insight into the sharp boundaries of histotripsy lesions. 相似文献

A study on gold nanoparticle synthesis using oleylamine as both reducing agent and protecting ligand

The growth kinetics and mechanism of a gold nanoparticle synthesis using water as a single phase solvent and oleylamine as both reducing agent and monolayer protection agent were studied. FT-IR and 1H NMR spectroscopic analysis revealed a conversion of oleylamine ligands to oleylamides when gold(III) was reduced to gold(I) and gold atoms. During the reaction, it was found by UV-Vis absorption spectroscopy and transmission electron microscopic study that oleylamine ligands formed large complex aggregates with gold salt instantly upon mixing these two agents together. At an elevated temperature of 80 degrees C, the complex decomposed first into very small particles and then the small particles recombined together into larger and thermally stable particles with an average core size around 9-10 nm. The oleylamide ligands formed a protecting monolayer around the nanoparticles through a hydrogen bonding network between the amide groups. The recombination of small particles into larger ones was found to follow a logistic model, as confirmed by a nonlinear regression fitting of the UV-Vis absorption data of the reaction solution with the mathematical model. 相似文献

During the early phase following stroke, patients with aphasia and their families are totally involved in the rehabilitation programme, but later, in the chronic phase, after discharge, the family generally has no support and many problems may arise or become more acute and provoke disturbances in this system. The patients with aphasia and their spouses may feel the situation differently according to their own characteristics, including gender. The present study includes 55 spouses of patients with chronic aphasia and 37 controls (spouses of subjects without physical or cognitive impairments) who filled out a questionnaire concerning their respective spouses (European Brain Injury Questionnaire--EBIQ) and some aspects about themselves. It was concluded, from the opinions expressed by the spouses of patients with chronic aphasia that they have problems in several domains not only related to communication or physical impairments. The opinions of husbands and wives of patients with aphasia, but not of the controls, were different, with more references to behaviour changes in women with aphasia. Spouses' responses also show important changes in their own lives. These results stress the importance of adequate attention to the long-term psychosocial problems of patients and relatives. 相似文献

Two techniques for modelling intermodulation-borne spurious components in fractional-N frequency synthesisers are described. The first techniques establishes the potential frequencies of these components, while the second considers a more comprehensive model to predict their distribution in a realistic system as a result of one particular intermodulation mechanism. Good agreement is found and it is apparent that intermodulation is likely to be a major cause of such spurious components. 相似文献
