A previously characterized rice hull smoke extract (RHSE) was tested for bactericidal activity against Salmonella Typhimurium using the disc-diffusion method. The minimum inhibitory concentration (MIC) value of RHSE was 0.822% (v/v). The in vivo antibacterial activity of RHSE (1.0%, v/v) was also examined in a Salmonella-infected Balb/c mouse model. Mice infected with a sublethal dose of the pathogens were administered intraperitoneally a 1.0% solution of RHSE at four 12-h intervals during the 48-h experimental period. The results showed that RHSE inhibited bacterial growth by 59.4%, 51.4%, 39.6%, and 28.3% compared to 78.7%, 64.6%, 59.2%, and 43.2% inhibition with the medicinal antibiotic vancomycin (20 mg/mL). By contrast, 4 consecutive administrations at 12-h intervals elicited the most effective antibacterial effect of 75.0% and 85.5% growth reduction of the bacteria by RHSE and vancomycin, respectively. The combination of RHSE and vancomycin acted synergistically against the pathogen. The inclusion of RHSE (1.0% v/w) as part of a standard mouse diet fed for 2 wk decreased mortality of 10 mice infected with lethal doses of the Salmonella. Photomicrographs of histological changes in liver tissues show that RHSE also protected the liver against Salmonella-induced pathological necrosis lesions. These beneficial results suggest that the RHSE has the potential to complement wood-derived smokes as antimicrobial flavor formulations for application to human foods and animal feeds. PRACTICAL APPLICATION: The new antimicrobial and anti-inflammatory rice hull derived liquid smoke has the potential to complement widely used wood-derived liquid smokes as an antimicrobial flavor and health-promoting formulation for application to foods.  相似文献

Pinolenic acid (PLA) concentrate in fatty acid ethyl ester (FAEE) was efficiently produced from pine nut oil via lipase-catalyzed ethanolysis using a recirculating packed bed reactor (RPBR). The effects of reaction temperature, molar ratio, and residence time on the concentration of PLA were explored. Novozym 435 lipase from Candida antarctica showed less selectivity toward PLA esterified at the sn-3 position when temperature was increased from 45 to 55 °C. For the trials of molar ratio between 1: 50 and 1: 100 (pine nut oil to ethanol), there were no significant differences in the yield of PLA. Residence time of substrate in a RPBR affected significantly the PLA content as well as the yield of PLA. Optimal temperature, molar ratio (pine nut oil to ethanol), and residence time for production of PLA concentrate via lipase-catalyzed ethanolysis in a RPBR were 45 °C, 1: 50, and 3 min, respectively. Under these conditions, the maximal PLA content (36.1 mol%) in the concentrate was obtained during the initial 10 min of reaction.  相似文献

Effects of ultra high pressure (UHP), pressing time and HCl concentration on non‐thermal starch hydrolysis using ultra high pressure were investigated. As regards ultra high pressure, starch granules maintained their structure up to 450 MPa and were partially disintegrated at 600 MPa. Degree of hydrolysis did not change up to 450 MPa and dramatically increased at 600 MPa indicating that starch hydrolysis increased with increasing destruction of starch granules. Pressing time did not affect the degree of hydrolysis. However, degree of hydrolysis and destruction of starch granules increased with increasing HCl concentration up to 4 M. Gel permeation chromatography showed that the soluble fraction of starch formed by hydrolysis mainly consisted of maltooligomers and maltose. X‐ray diffraction pattern changed from A type to C type upon hydrolysis, otherwise it remained as A type. This work provides fundamental information of UHP processing for starch and shows a potential of non‐thermal UHP processing for a new starch hydrolysis method.  相似文献

A microbial time-temperature integrator (TTI) system was developed using lactic acid bacteria (Weissella koreensis) obtained from baechukimchi. Activation energy (Ea), which represents the temperature dependence of the TTI response, was calculated using the Arrhenius equation. Ea values for the color change (ΔE value), maximum specific growth rate (μmax), and pH change of the TTI measured under different isothermal conditions (5, 10, 15 and 20°C) were 99.88, 95.91, and 93.38 kJ/mol, respectively. According to the time taken to reach the TTI endpoint by the initial inoculum level of W. koreensis (6.2, 5.5, 4.5, and 3.4 log CFU/mL), a negative correlation was observed in 63.5, 101.8, 115.1 and 166.6 h. In addition, initial bacterial counts decreased significantly up to almost 4% at 20°C in 3 months when W. koreensis viability was measured at the freezing point of the microbial TTI system (20 and ?80°C) for 1 week, 1 month, 2 months, and 3 months. However, viability was about 95% at 80°C. This microbial TTI system would be useful to monitor the quality of food with similar Ea values during storage or distribution.  相似文献

Anthocyanin‐rich acetone extracts of barley grain of four hulless pigmented genotypes were investigated to determine their potential as functional food ingredients. The purple barley cultivar contained 11 anthocyanins, whereas only one anthocyanin, peonidin derivative, was observed in blue, black and yellow barley. The total anthocyanin content of pigmented barley genotypes ranged from 3.2 to 678.5 mg kg?1 in whole grain and from 4.5 to 1654.6 mg kg?1 in bran. The purple barley bran extract gave the highest DPPH radical scavenging capacity, superoxide radical scavenging capacity and total antioxidant activity. The half maximal inhibitory concentration (IC50) of angiotensin I‐converting enzyme (ACE) of anthocyanin‐rich extract of purple barley grain and bran was 8.77 and 4.54 mg mL?1, respectively. Purple barley appears to have great potential uses for the promotion of human health and development of nutraceuticals and functional foods.  相似文献

Pepsin-solubilised collagen (PSC) from Red Sea cucumber (Stichopus japonicus) was studied with respect to its wound-healing effects on a human keratinocyte (HaCaT) cell line. Disaggregated collagen fibres were treated with 0.1 M NaOH for 24 h and digested with pepsin for 72 h to reach maximum yield of 26.6%. The results of an in vitro wound-healing test showed that migration of HaCaT cells was 1.5-fold faster on PSC-coated plates than on untreated plates. The migration rate of sea cucumber PSC was similar to that of rat PSC, but five times higher than that of bovine gelatin. HaCaT cells grown on PSC-coated plates revealed increased fibronectin synthesis (6-fold and 3-fold compared to gelatin and rat PSC, respectively). Additionally, sea cucumber PSCs induced HaCaT cell proliferation by decreasing the G1 phase by 5% and maintaining a larger population (8%) of cells in mitosis. Collagen from Red Sea cucumber might be useful as an alternative to mammalian collagen in the nutraceutical and pharmaceutical industries.  相似文献

The objectives of this study were to identify the potential function of microwave-discharged cold plasma (MCP) treatment in preparing starch citrate (SC) non-thermally and to investigate the physicochemical properties of MCP-induced starch citrates. SCs were prepared by either dry heating in a convection oven (as a reaction control; COV) or MCP treatment using N2 (N2-MCP) and N2–O2 (N2/O2-MCP). Fourier transform-infrared spectra of the MCP-induced SCs revealed new peaks indicating ester bonds. The molar degree of substation was 0.013–0.015 depending on the reaction conditions. The plasma-formed dents were observed more on the surfaces of granular starch citrates (GSCs) treated with N2/O2-MCP than N2-MCP. Relative to COV, MCP-induced GSCs possessed lower resistant starch content, solubility, and gelatinization temperatures and higher swelling power. The pasting viscosities were higher with N2-MCP GSCs and lower with N2/O2-MCP GSCs. The results suggest that MCP can be used as a novel catalyst for non-thermal starch citration.  相似文献
