Phytosterols can be of value in decreasing cardiovascular risk of coronary heart disease. β‐Sitosterol was the most abundant sterol in the three oils studied (sunflower, olive and ‘4 oil mixture’). The total phytosterol level was the highest in the ‘4 oil mixture’ compared with the other oils studied. Tests performed on the effect of aging (heating at 50 °C for several weeks and at 100 °C for 1 h) did not show any significant variation in the phytosterol content. In contrast, heating at 200 °C for 1 h led to a 50–60% decrease of phytosterol in the oils studied and in the standard solutions. Copyright © 2005 Society of Chemical Industry  相似文献

The adenovirus E3-13.7 protein interferes with endosomal protein sorting to down-regulate the epidermal growth factor receptor and related tyrosine kinase receptors. The cytoplasmic C terminus of this protein contains three protein sorting motifs which are related to the function of E3-13.7. In this study, the structure of a 23-residue polypeptide corresponding to this domain was examined using solution NMR and CD spectroscopic methods. The peptide was observed to exist in a mostly random structural state in aqueous solution but underwent high affinity association with dodecylphosphocholine micelles, where it adopted an ordered structure. The affinity of this peptide for the micellar surface and the structure of the bound peptide were independent of pH variation, surface charge, or attachment of a myristoyl anchor to the N-terminal. Studies with phospholipid vesicles suggested that the micellar structural results can be extrapolated to a true lipid bilayer. On the micellar surface all three sorting motifs are closely associated with the water/apolar interface: 72-YLRH and 87-LL lie within interfacial amphipathic helices, while 76-HPQY is non-helical and dimples just above the surface. These results contribute to the development of an understanding of the basis for specificity in recognition of sorting motifs by components of the cellular protein trafficking machinery.  相似文献

An 18-year-old male presented with persistent vomiting and epigastric fullness of 8 months' duration. Barium examination revealed an abrupt cutoff at the third part of the duodenum. Duodenotomy revealed a web at the third part of the duodenum. Following web excision, the patient experienced marked symptomatic relief and remains well 6 months after surgery.  相似文献

An understanding of the origins of dental diamonds and the issues facing manufacturers transforms the dentist from a simple user into an informed consumer. The growth rates of strains covering the seven major phylogenetic groups of Bacillus cereus sensu lato (as defined by Guinebretiere et al., 2008) at a range of temperature (7 °C–55 °C), pH (4.6–7.5) and aw (0.929–0.996, with 0.5%–10% NaCl as humectant) were determined. Growth rates were fitted by non-linear regression to determine the cardinal parameters Tmin, Topt, Tmax, pHmin, pHopt, awmin and μopt. We showed that cardinal parameters reflected the differences in the temperature adaptation observed between B. cereus phylogenetic groups I to VII. The ability of growing at low pH (up to 4.3) or low aw (from aw 0.929 and up to 10% NaCl) varied among strains. The strains of groups III and VII, the most tolerant to heat, were also the most adapted to high NaCl (all strains growing at 8% NaCl) and the ones of groups I and VI the least adapted (no growth at 7% NaCl). All strains of groups II and VII were able to grow at pH 4.6, and only a few strains of group VI. Phenotypic differences between the two psychrotrophic groups II and VI were revealed by contrasted acid and salt tolerance. The cardinal values determined in this work were validated by comparing with cardinal parameters of a panel of strains published elsewhere and with predictions of growth in a range of foods.  相似文献

Authentication of a food product is the procedure by which it is verified that the product matches the statements on the label, and that it conforms to what is established by regulations. This testing process includes analysis of the ingredients, determination of the geographical origin, and examination of the production methods. In particular, the use of rapid, effective and reliable analytical methods, when correctly applied to verify the authenticity and the traceability of the product, represents a valuable and irreplaceable tool for the authorities to carry out control functions. Tools and methodologies from scientific innovation and technological evolution can help to quickly locate particularly sophisticated frauds and adulterations. The feeding regime of livestock is a fundamental issue for the properties and safety of animal origin food, but this regime is often hidden from the consumer, making the zootechnical sector more prone to fraudulent practices. This review reports the results recently obtained in authentication of animal origin food by the application of stable‐isotope ratio analysis, the most promising analytical technique in this field.© 2012 Society of Chemical Industry  相似文献

Pulsed Light (PL) uses intense flashes of white light rich in ultraviolet (UV) light for decontamination. A log-reduction higher than 5 was obtained in one flash and at fluences lower than 1.8 J/cm2 on spores of a range of spore-forming bacteria, of vegetative cells of non-spore-forming bacteria and on yeasts spread on agar media. Vegetative cells were more sensitive than spores. The inactivation by PL of Bacillus subtilis, B. atrophaeus, B. cereus, Geobacillus stearothermophilus, and Aspergillus niger spores sprayed on polystyrene was similar. The inactivation by PL of B. subtilis and A. niger spores sprayed on glass was slightly lower than on polystyrene. No alteration of the spore structures was detected by scanning electron microscopy for both PL treated B. subtilis and A. niger spores. The inactivation of spores of B. subtilis, B. atrophaeus, B. cereus and B. pumilus by PL or by continuous UV-C at identical fluences was not different, and was much higher by PL for A. niger spores. The increase in the input voltage of the lamps (which also increases the UV-C %) resulted in a higher inactivation. There was no correlation between the resistance to heat and the resistance to PL. The relative effect of UV-C radiations and light thermal energy on PL inactivation was discussed.  相似文献

Age is a major risk factor for severe outcome of the 2019 coronavirus disease (COVID-19). In this study, we followed the hypothesis that particularly patients with accelerated epigenetic age are affected by severe outcomes of COVID-19. We investigated various DNA methylation datasets of blood samples with epigenetic aging signatures and performed targeted bisulfite amplicon sequencing. Overall, epigenetic clocks closely correlated with the chronological age of patients, either with or without acute respiratory distress syndrome. Furthermore, lymphocytes did not reveal significantly accelerated telomere attrition. Thus, these biomarkers cannot reliably predict higher risk for severe COVID-19 infection in elderly patients.  相似文献
