Fourteen different starter cultures containing one strain of Saccharomyces cerevisiae with and without individual or combinations of lactic acid bacteria (Lactobacillus plantarum, Lact. sanfrancisco, Enterococcus faecium, Leuconostoc mesenteroides) were employed to investigate the role of leavening microflora on the properties of pizza doughs. Microbiological, chemical and physical characteristics of doughs prepared with the same flour and under the same processing conditions were determined. Leavening times and acidification properties depended on the microbial association used. The proportions of lactic and acetic acid produced by lactic acid bacteria were consistent with the metabolic properties of the strains employed. The bacteria/yeast ratios arising from microbial counts at the end of the leavening process were always lower in comparison to sour- or bread-doughs. The size of the yeast population did not change much, while bacteria showed from one to four duplications. Rheologically, the fermented doughs could only be significantly distinguished from the control dough with regard to the elastic modulus. Principal Component Analysis was applied to the acidimetric data. The scattergram of the two principal components effectively discriminated 13 of the 14 pizza dough types.  相似文献

Within a research program aimed to utilize natural zeolites for pedotechnical purposes, such as to rebuild degraded soils, to improve soil fertility and to remove soil pollutants, the adsorption process of humic acids (HAs) on untreated Neapolitan Yellow Tuff and on Ca2+-enriched samples was investigated in the temperature range 1–45°C. Experimental data showed a negligible temperature effect indicating that ΔH ≈ 0. Moreover, Scatchard-like plots suggested the occurrence of more than one adsorption sites for both samples. A good fit of the adsorption isotherms was obtained by two-site Langmuir equation. For both sites the HAs affinity was not modified by Ca2+-enrichment and ΔS° was >0. The adsorption of HAs on tuff is an entropy-driven process.  相似文献

This paper describes the possibility of employing a digital holographic microscope (DHM) to carry out a noncontact and nondestructive characterization of a microheater integrated on a silicon nitride membrane and subjected to a high thermal load. Microheaters can be affected by the presence of the residual stress due to the technological processes appearing in the form of undesired bowing of the membrane. Moreover, when the temperature of the microheater increases, a further warpage of the structure can be induced. A DHM allows for evaluation, with high accuracy, the deformations due to the residual stress and how these deformations are affected by the thermal loads due to the microheater operating mode. In particular, this dynamic analysis is made possible by measuring the unwanted longitudinal displacement induced by the thermal expansion of both the device and its mechanical support. Taking into account this displacement, it is possible to have a continuous monitoring of profile deformation induced by the working condition of the microheater.  相似文献

Small-angle neutron scattering (SANS) is a powerful experimental tool to investigate the microstructural evolution under irradiation in steels for fission and future fusion reactor systems. We present recent SANS results concerning the modelling of helium bubble growth in F82H-mod. steel implanted with α-particles and the dose dependence of microstructural radiation damage in Eurofer-97 steel for fusion reactors irradiated at 250 °C. The discussion of these results is focussed on the quality of the metallurgical information obtained by such SANS measurements and consequently on their usefulness also for engineering and design purposes.  相似文献

Activation of innate immunity and low-grade inflammation contributes to hyperglycemia and an onset of Type 2 Diabetes Mellitus (T2DM). Interleukin-2 (IL-2), leptin, High Mobility Group Box-1 (HMGB-1), and increased glucose concentrations are mediators of these processes also by modulating peripheral blood mononuclear cells (PBMCs) response. The aim of this study was to investigate if HMGB-1 and IL-2 turn on PBMCs and their leptin secretion. In isolated human PBMCs and their subpopulations from healthy individuals and naïve T2DM patients, leptin release, pro-inflammatory response and Toll-like Receptors (TLRs) activation was measured. After treatment with IL-2 and HMGB1, NK (Natural Killer) have the highest amount of leptin secretion, whilst NK-T have the maximal release in basal conditions. TLR4 (TAK242) and/or TLR2 (TLR2-IgA) inhibitors decreased leptin secretion after IL-2 and HMGB1 treatment. A further non-significant increase in leptin secretion was reported in PBMCs of naive T2DM patients in response to IL-2 and HMGB-1 stimulation. Finally, hyperglycemia or hyperinsulinemia might stimulate leptin secretion from PBMCs. The amount of leptin released from PBMCs after the different treatments was enough to stimulate the secretion of IL-1β from monocytes. Targeting leptin sera levels and secretion from PBMCs could represent a new therapeutic strategy to counteract metabolic diseases such as T2DM.  相似文献

A finite difference procedure that can account for strain-rate effects, both shear and flexural deformations, permits variations in cross-section geometry and strength and loading over the length of a component is proposed to accurately and efficiently analyze the dynamic response of a simply supported structural member under blast loads. A section-based layered analysis model that accommodates varying strain rates across a member’s cross-section is used to derive sectional moment–curvature relationships. A formula is derived to estimate the distribution of strain rate over the depth of a cross-section along the length of the member, and the corresponding strain rate effects are incorporated into the section-based layered analysis model. The Timoshenko beam equations that include both shear deformations and rotational inertia are solved numerically using an explicit finite difference scheme. The accuracy of the proposed finite difference analysis model is part validated using results of blast testing of reinforced concrete slabs with combinations of explosive weights and standoff distances. The results are also compared with those obtained by conventional single-degree-of-freedom (SDOF) analysis and finite element (FE) analysis using solid elements. The finite difference analysis procedure is both fast-running and accurate and most suitable for design office application, combining the speed of SDOF analysis and the detail and accuracy of FE analysis.  相似文献

Staphylococcus xylosus1E, isolated from Italian sausages, produced a substance with antagonistic activity againstListeria monocytogenesand other gram-positive bacteria during growth on a solid medium. Inhibitory activity in cell-free supernatant fluids of cultures in various broths was unsuccessfully researched. An active preparation of the inhibitory substance was obtained from the cells of the producer strain by desorption with 9moll−1urea. The inhibitor was not affected by autoclaving (121°C for 15 min), whereas 50% activity remained after pronase and esterase treatment. SDS-PAGE allowed a diffuse smear of stainable material with inhibitory activity to be detected. The 1E inhibitor exhibited a bactericidal mode of action through adsorption to the cells and leakage of nucleic acids. The inhibition ofL. monocytogenesbyS. xylosus1E was also observed in Naples-type sausages. After 21 days of maturation, in salami in whichL. monocytogeneswas challenged withS. xylosus1E, the viable counts of the pathogen were reduced by approximately 2 log cycles, whereas 0.5 log reduction occurred in sausages with the pathogen alone. NoL. monocytogeneswere recovered after 75 days in sausages inoculated withS. xylosus1E, while the pathogen was still present at this time in control sausages.  相似文献
