Caffeic acid, a hydroxycinnamic acid common in different vegetable sources, has been employed as a natural antioxidant for inhibiting oxidation of fish lipids present in different food matrices. The aim of this review is to discuss the mechanisms involved in the antioxidative and prooxidative effects of caffeic acid found in different model systems containing fish lipids. These model systems include bulk fish oils, liposomes from cod roe phospholipids, fish oil emulsions, washed cod mince, regular horse mackerel mince and a fish oil fortified fitness bar. The data reported show that the antioxidant activity depends on the physical state of the lipids and the composition of the intrinsic matrix in which they are situated. Caffeic acid significantly prevented rancidity in both unwashed and washed fish mince, the latter which was fortified with haemoglobin. In the unwashed mince, the activity was however clearly dependent on the lipid to antioxidant ratio. In these systems, an important redox cycle between caffeic acid and the endogenous reducing agents ascorbic acid and tocopherol were further thought to play an important role for the protective effects. The effect of caffeic acid was also highly dependent on the storage temperature, showing higher effectiveness above than below 0 °C. Caffeic acid was not able to inhibit oxidation of bulk fish oils, fish oil in water emulsions and the fish-oil enriched fitness bar. In the liposome system, caffeic acid inhibited haemoglobin (Hb)-promoted oxidation but strongly mediated Fe2+ mediated oxidation. In conclusion, caffeic acid can significantly prevent Hb-mediated oxidation in fish muscle foods but its activity in food emulsions and liposomes is highly dependent on the pH, the emulsifier used and the prooxidants present.  相似文献

The objective of this work was to assess the therapeutic efficacy and to lerability of intravenously applied n-3-PUFA in patients with active rheumatoid arthritis (RA). Thirty-four patients with active RA [identified as having a DAS28 (disease activity score including a 28 joint count) >4.0] were enrolled into this 5-wk open pilot study (one group design). From the time of screening (visit 0, or V0), background therapy had to remain unchanged. Patients received 2 mL/kg(=0.1–0.2 g fish oil/kg) fish oil emulsion intravenously on 7 consecutive days (Visit 1–Visit 2, or V1–V2) in addition to their background therapy. A decrease of the DAS28>0.6 at day 8 (Visit 2) was the primary efficacy measure. Moreover, the DAS28 at day 35 (Visit 3, or V3), the modified Health Assessment Questionnaire, the American College of Rheumatology (ACR) response criteria (V2, V3) and the Short Form-36 (V3) were assessed. Thirty-three patients completed the trial. The mean DAS28 at V1 was 5.45; at V2, 4.51 (P<.001 V1–V2) and at V3, 4.73 (P<.001 V1–V3; V2–V3, not significantly different). Of the 34 patients, 56% achieved a reduction of the DAS28>0.6 at V2 (mean 1.52); 27%>1.2. At V3, 41% of the patients showed a DAS28 reduction >0.6 (mean 1.06), and 36%>1.2. ACR 20 and 50% responses at V2 were seen in 29 and 12% of patients, respectively; at V3, the comparable values were 18 and 9%, respectively. Overall tolerability was excellent. Intravenous application of n-3-PUFA (as an add-on therapy) was considerably well tolerated and led to improvement of the disease activity status in a reasonable number of RA patients. Future trials are warranted to answer whether the intravenous application of n-3-PUFA constitutes a therapeutic option in RA patients.  相似文献

The fern Pteris vittata accumulates unusually high levels of arsenic. Using X-ray absorption spectroscopy (XAS) and XAS imaging, we reveal the distribution of arsenic species in vivo. Arsenate is transported through the vascular tissue from the roots to the fronds (leaves), where it is reduced to arsenite and stored at high concentrations. Arsenic-thiolate species surrounding veins may be intermediates in this reduction. In gametophytes, arsenite is compartmentalized within the cell vacuole. Arsenic is excluded from cell walls, rhizoids, and reproductive areas. This study provides important insights into arsenic hyperaccumulation, which may prove useful for phytoremediating arsenic-contaminated sites, and demonstrates the strengths of XAS imaging for distinguishing highly localized species.  相似文献

Driving speed is an important factor in road safety. Speed not only affects the severity of a crash, but is also related to the risk of being involved in a crash. This paper discusses the most important empirical studies into speed and crash rate with an emphasis on the more recent studies. The majority of these studies looked at absolute speed, either at individual vehicle level or at road section level. Respectively, they found evidence for an exponential function and a power function between speed and crash rate. Both types of studies found evidence that crash rate increases faster with an increase in speed on minor roads than on major roads. At a more detailed level, lane width, junction density, and traffic flow were found to interact with the speed-crash rate relation. Other studies looked at speed dispersion and found evidence that this is also an important factor in determining crash rate. Larger differences in speed between vehicles are related to a higher crash rate. Without exception, a vehicle that moved (much) faster than other traffic around it, had a higher crash rate. With regard to the rate of a (much) slower moving vehicle, the evidence is inconclusive.  相似文献

A new generation of platinum nanoelectrodes for constant-distance mode scanning electrochemical microscopy (CD-SECM) has been prepared, characterized, and used for high spatial resolution electrochemical measurements and visualization of electrochemically induced concentration gradients in microcavities. The probes have long (1-2 cm), narrow quartz tips that were conically polished and have a Pt nanoelectrode that is slightly offset from center. Because of the size and location of the electrode on the probe, it does not exhibit SECM feedback while approaching the analyzed sample surfaces even to distances within a few hundred nanometers. The probe was positioned near the surface while scanning and performing electrochemical measurements through use of nonoptical shear force control of the tip-to-sample distance. Test structures consisted of cylindrically shaped microcavities that are 50 microm in diameter with three individually addressable electrodes: a gold disk at 8-microm depth, a crescent-shaped gold ring at 4-microm depth along the wall, and a top gold electrode at the rim. Different electrodes within the microcavity were used to reduce and oxidize redox species in 250 microL of a solution of 5 mM hexaamineruthenium(III) chloride and 0.1 M potassium chloride, protected from evaporation by mineral oil, while the SECM tip followed the topography of the structures and monitored the current from the oxidation of [Ru(NH3)6]2+. Electrochemically generated concentration profiles were obtained from these complex test structures that are not possible with any other SECM technology at this time.  相似文献

ABSTRACT: Edible films can incorporate antimicrobial agents to provide microbiological stability, since they can be used as carriers of a wide number of additives that can extend product shelf life and reduce the risk of pathogenic bacteria growth on food surfaces. Addition of antimicrobial agents to edible films offers advantages such as the use of low antimicrobial concentrations and low diffusion rates. The aim of this study was to evaluate inhibition of Aspergillus niger and Penicillium spp. by selected concentrations of Mexican oregano (Lippia berlandieri Schauer) essential oil added to amaranth, chitosan, or starch edible films. Oregano essential oil was characterized by gas chromatography-mass spectrometry (GC/MS) analysis. Amaranth, chitosan, and starch edible films were formulated with essential oil concentrations of 0%, 0.25%, 0.50%, 0.75%, 1%, 2%, and 4%. Mold radial growth was evaluated inoculating spores in 2 ways: edible films were placed over inoculated agar, Film/Inoculum mode (F/I), or the edible films were first placed in the agar and then films were inoculated, Inoculum/Film mode (I/F). The modified Gompertz model adequately described growth curves. There was no significant difference (P > 0.05) in growth parameters between the 2 modes of inoculation. Antifungal effectiveness of edible films was starch > chitosan > amaranth. In starch edible films, both studied molds were inhibited with 0.50% of essential oil. Edible films added with Mexican oregano essential oil could improve the quality of foods by controlling surface growth of molds.  相似文献

BACKGROUND: The effects of high‐intensity pulsed electric field (HIPEF) processing (35 kV cm?1 for 1500 µs, using 4 µs bipolar pulses at 100 Hz) on the production of volatile compounds and flavour‐related enzymes in tomato juice were investigated and compared with those of thermal processing (90 °C for 30 or 60 s). RESULTS: Tomato juice treated by HIPEF showed lower residual lipoxygenase (LOX) activity (70.2%) than juice heated at 90 °C for 60 s (80.1%) or 30 s (93.2%). In contrast, hydroperoxide lyase (HPL) was almost completely inactivated when the juice was subjected to 90 °C for 60 s, whereas roughly 50% of the control tomato juice was depleted after HIPEF treatment or thermal processing at 90 °C for 30 s. A slight decrease was observed in the initial LOX activity of treated and untreated samples during storage, whereas initial HPL activity was strongly affected over time. CONCLUSION: HIPEF‐treated juice exhibited higher levels of compounds contributing to tomato aroma than untreated and heat‐treated juices throughout storage. The effects of pulse frequency (50-250 Hz), pulse width (1.0-7.0 μs) and polarity (monopolar or bipolar) of high-intensity pulsed electric field (HIPEF) treatments (35 kV/cm and 1000 μs total treatment time) on peroxidase (POD) and lipoxygenase (LOX) activities were evaluated using a response surface methodology. Second-order expressions were accurate enough to fit experimental results. HIPEF bipolar treatments resulted to be more effective than monopolar treatments in reducing POD and LOX activities. Watermelon juice LOX was more resistant to HIPEF than POD within the range of assayed conditions. HIPEF treatments set at 50 Hz for 1.0 μs pulse width could attain minimum residual POD activity values up to 10%, whereas the highest POD activity reduction was reached by combining high frequencies and pulse widths. Thus, POD could be totally inactivated by applying 7.0-μs bipolar pulses at frequencies higher than 114 Hz. In addition, the effect of frequency on the LOX activity was highly affected by the pulse width of the treatment. Thus, treatments conducted at 220 Hz with bipolar pulses of 1.0 μs led to the lowest residual LOX activity (50%).  相似文献

Drying is an important unit operation in processing of foods and other biotechnological products. Vacuum freeze drying is said to be the best drying technology regarding product quality of the end product, but the disadvantages are, among others, expensive operational costs and batch drying. Atmospheric freeze drying was introduced to lower the production costs of high-quality dried foods, and the need of simulation tools became important in estimations of the industrial drying processes.

A simplified mathematical model (AFDsim) is developed based on uniformly retreating ice front (URIF) considerations. The model is used to calculate theoretical drying curves of atmospheric freeze dried foods in a tunnel dryer. Studies of thermal and mass transfer properties during drying are essential for understanding the changes in product quality and for designing and dimensioning the drying process. The model can be used to simulate industrial atmospheric freeze drying of different foodstuff in a tunnel. The results from AFDsim modeling are in good accordance with the experimental results.  相似文献
