At frying temperature, antioxidants are lost not only by reaction with radicals formed by oil oxidation but also by decomposition and evaporation before they are able to exert antioxidant activity. In this study, it was hypothesized that an additive that can bind or interact with an antioxidant could reduce volatility of the antioxidant at frying temperature. Three synthetic antioxidants, tert‐butylhydroquinone (TBHQ), butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT), which have relatively high volatility, were used as antioxidants in this study to examine the hypothesis. Thermogravimetric analysis (TGA) experiments showed that all 22 additives tested in this study effectively reduced volatility of the antioxidants. An NMR study showed that signals of BHT shifted by addition of an additive, evidencing the interaction between the two substances in the chloroform solution. To examine the effect of these interactions on antioxidant activity, heating tests were conducted with soybean oil (SBO) containing 200 ppm antioxidants at 180 °C. Oxidation was monitored with 1H NMR for loss of olefinic protons and bisallylic protons in SBO and with gel permeation chromatography (GPC) for polymerized triacylglycerols (PTAG). Improved antioxidant activity of the antioxidants were observed when combined with several additives tested in this study, and HPLC analysis showed that the antioxidants were effectively reserved by the additives in SBO during the heating process. The concentrations of the antioxidants retained in SBO were relatively well correlated with the antioxidant activity.  相似文献

Lipid ingredients that demonstrate high stability and positive health profiles without the use of trans‐fats are needed in the food supply. Rice bran oil can be fractionated at low temperatures to create a series of spreads that show promise as functional ingredients. A rice bran oil‐derived spread can extend the fry life of soybean oil and can also be incorporated into baked goods such as bread and granola as a trans‐fat free alternative to butter or shortening.  相似文献

Preparative Scale Supercritical Fluid Chromatography is emerging as a powerful alternative to HPLC for the purification and separation of complex chemical reaction mixtures. Advantages include greatly reduced solvent usage (and thus lower cost and environmental impact), higher throughput, and in some cases higher resolution. While there are commercially available prep SFC instruments, none currently offer all the features desired by many medicinal chemists engaged in the drug discovery process. These include: the ability to collect an unlimited number of fractions per sample with high recovery and negligible carryover, fully automated capacity to collect several hundred fractions, and the ability to collect fractions into the same disposable test tubes and racks which are already employed in HPLC. This article describes the customization of a preparatory scale SFC system purchased from Berger Instruments, Inc., Newark, DE. (a subsidiary Mettler-Toledo International, Inc., of Greifensee, Switzerland) in order to provide these capabilities.  相似文献

Since 2002, the Royal Air Force (RAF) has been working towards developing role-related physical tests for use as an operational fitness test (OFT). The purpose of this study was to establish reliability of the OFT (comprising four tests), investigate gym-based tests as predictors of performance and establish performance standards. Fifty-eight RAF personnel performed the OFT on three occasions. A separate cohort carried out fitness and anthropometric tests before performing the OFT, by way of establishing performance predictors. Documented evidence and views of an expert panel were used to determine OFT standards. Reliability ranged from moderate to good for three tests, with one test (Dig) showing poor reliability. The 95% limits of agreement for the prediction models ranged from good to poor (6.7-34.2%). The prediction models were not sufficiently accurate to estimate confidently OFT performance, but could be used as a guide to quantify likely outcome and training needs.  相似文献

General equilibrium moels are usually represented as a system of levels equations (e.g., in North America) or a system of linearized equations (e.g., in Australia). Either representation can be used to obtain accurate solutions. General-purpose software is available in both cases-GAMS or MPS/GE is typically used by levels modellers and GEMPACK by linearizers. Some equations (notably accounting identities) are naturally expressed in the levels while others (especially behavioural equations) are naturally expressed in a linearized form. This paper describes the new GEMPACK facility for solving models represented as a mixture of levels and linearized equations and discusses the advantages to modellers of using such a representation.  相似文献

Profits can persist in the resource-based view (RBV) of the firm because of heterogeneity of inputs combined with resource immobility. The firm-efficiency interpretation of the RBV posits that heterogeneity in, for example, technology or know-how, leads to inter-firm efficiency differences which can persist because of imperfect imitability. Thus the persistence of efficiency leads to the persistence of profitability. There has been no empirical research into the firm-efficiency view, and this paper therefore fills that gap by utilizing a panel of 4280 firms in the manufacturing sector over the period 1983–2003. Efficiency scores are derived using data envelopment analysis (DEA) and these are then modelled in a random parameter framework where one determinant of current period efficiency is the firm’s own lagged efficiency. The estimated coefficient of efficiency persistence is found to be around 0.7, thereby offering support for the firm-efficiency view, and this varies by country and by industry.  相似文献

Sonoran Desert bighorn sheep (Ovis canadensis mexicana) occupy rugged upland areas that experience irregular periods of vegetation growth associated with precipitation events. These episodic and often spatially limited events provide important forage and preformed water resources that may be important drivers of animal movement and habitat use. Habitat-use models that incorporate forage phenology would broaden our understanding of desert bighorn ecology and have considerable potential to inform conservation efforts for the species. Field-based methods are of limited utility to characterize vegetation phenology across large areas. Vegetation indices (VI) derived from satellite imagery are a viable alternative, but may be confounded by areas of high relief and shadow effects that can degrade VI values. The varying spatial and temporal resolutions of readily available satellite sensors, such as the Landsat thematic mapper (TM) and moderate-resolution imaging spectrometer (MODIS), present additional challenges. In this study, we sought to minimize degrading effects of terrain on TM- and MODIS-based estimates of vegetation phenology. We compared effects of high topographic relief on time series MODIS- and TM-based VI such as the normalized difference vegetation index (NDVI) and enhanced vegetation index (EVI) using VI departures from average (DA) in shaded and unshaded areas. Sun elevation angle negatively impacted TM-derived NDVI and EVI values in areas of steep terrain. In contrast, MODIS-derived NDVI values were insensitive to sun elevation and terrain effects, whereas MODIS-derived EVI was degraded in areas of steep terrain. Time series MODIS NDVI and EVI DA values differed significantly during months of low sun elevation angle. Average MODIS EVI departure values were ≥20% lower than NDVI under these conditions, confounding time series estimates of plant phenology. Our best results were obtained from MODIS 16-day composited NDVI. These remote-sensing-based VI estimates of seasonal plant phenology and productivity can be used to inform models of habitat use and movements of desert bighorn over large areas.  相似文献

This study examined business students’ perceptions of four objectives (i.e., Enjoyment, Learning, Motivation, and Career Application) across five teaching technologies (i.e., Projector, PowerPoint, Video, the Internet, and Lecture), business professors’ effective application of technologies, and students’ academic performance. We collected data from 215 students at a regional state university in the USA. We developed Students’ Perceptions of Technology Scale, SPOTS, specifically for the present study, used the most rigorous criteria, and investigated reliability, convergent and discriminant validity, exploratory and confirmatory factor analysis, and measurement invariance of this scale. Mean scores revealed that Video conveyed the highest amount of Enjoyment. PowerPoint provided the highest amount of Learning and Motivation. The Internet provided the highest Career Application for future jobs. Younger students preferred Video, whereas older students favored Lecture. Regression results showed that the use of Video for Learning, Projector and Lecture for Enjoyment, PowerPoint for career and Motivation, and the Internet for Learning contributed to professors’ teaching effectiveness. Students’ high ratings for professors’ effective use of the Lecture method and low expectation for the use of a Projector predicted their self-reported GPA (academic performance). Professors may use a different mix of technologies in the classroom and use them creatively in order to promote the most Learning for students and satisfy students’ Learning needs and objectives.  相似文献

In 5 studies, the authors investigated the effects of self-guide importance, domain centrality to self-definition, and self-domain relevance of testing location on relationships between actual–ideal (AI) and actual–ought (AO) discrepancies and emotions. Although no unique relationships occurred for self discrepancies, moderating effects were found for social self-domains. Location relevance overshadowed other moderator effects. In less relevant locations, AI discrepancies were smaller and AO discrepancy–emotion relationships were moderated by self-guide importance. For more important self-domains, AI discrepancies were smaller and AO discrepancies were unrelated to agitation. For less important self-domains, agitation was related to the AO discrepancy and self-guide importance interaction. By suggesting that different self-regulatory strategies minimize the consequences of AI and AO discrepancies, evidence for distinct ideal and ought self-regulation is provided.
