Microbial levels were significantly (P < 0.05) affected by the temperature‐time treatments used during in‐container heat treatment of the curd, brine concentration and storage duration. A heat treatment of 115 °C × 2 min, in the absence of NaCl, was sufficient to eliminate Mesophilic micro‐organisms, Coliforms, Staphylococcus aureus and Yeast and Moulds for the duration of 1 year of storage. Sensory scores for colour, appearance and texture increased significantly (P < 0.05) with the increase in the NaCl in brine concentration regardless of the temperature‐time treatment. 相似文献

The present study aimed to evaluate the bacteriological quality of beef (n = 52), lamb (n = 52) and beef offal (n = 52) marketed in Casablanca, Morocco. Meat and offal samples (n = 156), were collected randomly from butcheries, supermarkets, and slaughterhouses. Two sampling periods were considered, one during the hot season and the second one during the cold season. The samples were analyzed for the presence of the following bacteria: Escherichia coli, coagulase-positive Staphylococcus, Clostridium perfringens, Salmonella, and Listeria monocytogenes. Results indicated that counts of the aerobic plate count, and fecal coliforms were particularly high in all the samples analyzed. E. coli, coagulase-positive Staphylococcus and C. perfringens were detected in 37.8, 16, and 4.5% of the meat samples, respectively. Neither Salmonella nor L. monocytogenes were isolated from meat samples. Approximately 26.9% of beef, 34.6% of lamb and 28.8% of beef offal samples contained bacteria above the maximum limits established by the Moroccan regulatory standards for meat and meat products. Seasonality and the distribution location significantly (p < 0.05) affected bacterial populations: the hot season and butcheries appeared to be cases where the highest populations of bacteria in meat were observed. These high levels of microbiological contamination attest the poor hygienic quality of meat and offal, possibly due to uncontrolled processing, storage, and handling of these products. 相似文献

Fertilisation of herbage with Na can increase acceptability to cows, but the influence of fertiliser rate and fertilisation by K is unknown. In experiment 1, ten cows were grazed on pasture plots that had just been fertilised with 0–132 kg-Na ha−1 (current Na) and had received 0–64 kg-Na ha−1 in the previous grazing season (residual Na). Herbage Na concentration increased in proportion to current Na from 2·7 to 4·9 g-Na kg−1 dry matter (DM) and also increased with increasing residual Na from 2·2 to 4·5 g-Na kg−1 DM. Herbage K concentrations were low (10 g kg−1 DM at 0 kg-Na ha−1) and were only slightly reduced by Na fertiliser. Herbage Mg and Ca concentrations and DM digestibility were maximum at 66–99 kg-current-Na ha−1. Cows grazed current-Na-fertilised plots to a lower height and spent more time grazing them. In experiment 2, pasture plots received no fertiliser, low and high isomolar and independent applications of Na and K or a combination of the two. The herbage was more mature than in experiment 1 and Na concentration of the herbage without Na fertilizer was high (5 g kg−1 DM). Na fertiliser, therefore, only slightly increased Na concentration, more in clover than in grass, and had little effect on K concentration. K fertiliser increased K concentration from 16 to 20 g kg−1 DM and reduced Na concentration to 3·5 g kg−1 DM. The cooling curve method used for the measurement of freezing point of food is further analyzed to explore whether it can be used to identify the end point of freezing or glass transition. In this method, slope of the cooling curve is determined and plotted as a function of time to identify the end point of freezing (T′m). Initially, the slope is decreased and then reached a minimum value, which is identified as the nucleation of ice. Then the slope is increased until the end point of freezing. The end point of freezing is identified when the slope starts to decrease from its highest value or plateau. Sucrose solutions and starch gels were used to measure its T′m in identifying validity of the proposed method. The measured values of T′m by the proposed method is very close to the literature values. 相似文献

Three galactopoietic stimuli, frequent milking (4X), bovine somatotrophin (bST) and thyroxine (T4) were used in an additive stair-step design to achieve maximum output (metabolic capacity) in six peak-lactation cows of high genetic merit (HT) and six of low genetic merit (LT). A further six of each merit were untreated controls (HC, LC). Milk yield was increased significantly by 4X, increased further by the combination of 4X and bST and increased further still and significantly by the full combination of 4X, bST and T4. The magnitude of the yield response to the sequence of treatments did not differ significantly between HT and LT. The yield response to 4X and bST was sustainable without significant loss of body weight or body condition score for the 6 weeks during which these stimuli were administered. The response to the full combination, which included T4, was accompanied by significantly elevated heart rate and significant loss of body weight and condition compared with the combination of 4X and bST. As a result, treatments were discontinued, on an individual cow basis, before completion of this 6-week phase. Time on experiment did not differ between HT and LT. The results do not support the commonly held belief that selective breeding of dairy cows for high milk production has rendered them markedly more susceptible to metabolic disturbances. 相似文献

Starch granules from Round leaf yellow yam, Negro yam, Sweet yam, Bitter yam and Chinese yam grown in Jamaica were isolated and characterized. The amylose content, granular size, crystallinity, and digestibility by α‐amylase were determined. The granules obtained were of three crystalline types. Round leaf yellow yam, Negro yam and Sweet yam were found to be type‐B, while Chinese yam and Bitter yam were type‐C and type‐A, respectively. Round leaf yellow yam had the highest amylose content (26.5%) while Chinese yam had the lowest (11.1%). The granule size varied between 1–3 μm for Chinese yam and 16–42 μm for Round leaf yellow yam. Significant variations in digestibility of the granules were observed. Raw starches from Chinese yam and Bitter yam were the most susceptible to α‐amylase digestion (porcine pancreatic α‐amylase, pH 5.5, 0.02% CaCl2, 40°C, 24 h) with 21.27 ± 0.01% and 18.11 ± 0.02% degradation, respectively, while Round leaf yellow yam, Negro yam and Sweet yam starches were the least susceptible, with 13.74 ± 0.03%, 14.98 ± 0.08%, and 15.32 ± 0.04% enzymatic degradation, respectively. 相似文献

Since years, serine proteases and their inhibitors were an enigma to meat scientists. They were indeed considered to be extracellular and to play no role in postmortem muscle proteolysis. In the 1990's, we observed that protease inhibitors levels in muscles are a better predictor of meat tenderness than their target enzymes. From a practical point of view, we therefore choose to look for serine protease inhibitors rather than their target enzymes, i.e. serine proteases and the purpose of this report was to overview the findings obtained. Fractionation of a muscle crude extract by gel filtration revealed three major trypsin inhibitory fractions designed as F1 (Mr:50–70 kDa), F2 (Mr:40–60 kDa) and F3 (Mr:10–15kD) which were analyzed separately. Besides antithrombin III, an heparin dependent thrombin inhibitor, F1 and F2 comprised a large set of closely related trypsin inhibitors encoded by at least 8 genes bovSERPINA3-1 to A3-8 and able to inhibit also strongly initiator and effector caspases. They all belong to the serpin superfamily, known to form covalent complexes with their target enzymes, were located within muscle cells and found in all tissues and fluids examined irrespective of the animal species. Potential biological functions in living and postmortem muscle were proposed for all of them. In contrast to F1 and F2 which have been more extensively investigated only preliminary findings were provided for F3. Taken together, these results tend to ascertain the onset of apoptosis in postmortem muscle. The methanol extract from mature fruits of Aristotelia chilensis (Mol) Stuntz (Elaeocarpaceae) showed antioxidant activities and cardioprotective effects on acute ischemia/reperfusion performed in rat heart in vivo. This extract protected animals from heart damage by the incidence of reperfusion dysrythmias, and the no-recovery of sinus rhythm. On the other hand, the MeOH extract of the fruit was able to prevent these harmful events in the animal’s heart by diminishing lipid oxidation and reducing the concentration of thiobarbituric acid reactive substances (TBARS), a lipid peroxidation index. In addition, MeOH extract of A. chilensis was evaluated for DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging, crocin radical scavenging, oxygen radical absorption capacity (ORAC), ferric reducing antioxidant power (FRAP), an estimation of lipid peroxidation in liposomes through the inhibition of formation of TBARS. MeOH extract was found to have IC50 of 1.62 ppm against DPPH and 2.51 ppm against TBARS, compared with the juice, whose IC50 was 12.1 ppm and 9.58 ppm against DPPH and TBARS formation, respectively. Antioxidant activities of MeOH extract were strongly correlated with total polyphenol content. Consistent with this finding, MeOH had the greatest ORAC and FRAP values as percentage of activity. These results show that these fruits could be useful as antioxidant, cardioprotective and nutraceutical sources. 相似文献
