Abstract Microorganisms grow in tuna during drying at low temperatures. The drying temperature of 50°C or below is not lethal to the microflora. The decimal reduction time (D-value) varied from 12.66 to 2.63 hr when drying temperature increased from 60 to 100°C, respectively. These values can be used to estimate the lethal effect of drying on the natural microflora in tuna. 相似文献

Due to its numerous benefits, including health-promoting characteristics, there is increasing interest in finding product applications for mares' milk. In the present study, the physicochemical properties, turbidity and conductivity of Arabian mares' milk were studied during acidification by fermentation at 30 °C and compared with those of bovine milk. The data for the acidification rate were modelled using a logistic equation. Mares' milk showed a longer latency phase (284 min) and lower acidification rate (μmax = 0.0052 dpH min?1) compared with bovine milk (194 min and 0.0098 dpH min?1 respectively). The general shape of the curves of the turbidity versus time and pH were similar in nature for the acidification of both milks. However, the characteristic points were different, due to the differences in casein micelle composition. Measurement of electrical conductivity during acidification showed that maximum demineralization of casein micelles started around pH 6.09 and 5.31, for mares' and bovine milk, respectively. In conclusion, the technological characteristics of mares' milk were very different from those of bovine milk, due to intrinsic physicochemical properties of both milks. 相似文献

The aim of the paper is to present the influence of the solar radiation variation on the performances of a stand alone photovoltaic pumping system which consists of photovoltaic generator, dc-dc converter, dc-ac inverter, an immersed group motor-pump and a storage tank that serves a similar purpose to battery storage. Hence a theoretical analysis (modelling and control) of the system is needed. Attention has been paid to the command of the power converters using MPPT and variable laws. The MPPT control allows the extraction of the maximal output power delivered by the PV generator. The inverter ensures the PWM control of the asynchronous motor and a sine wave form of output signals. From the obtained simulation results, we will show that the decrease of the solar radiation degrades performances (the global efficiency and the flow rate) of the PV pumping system. The analysis is validated by simulation and experimental results. 相似文献

The slow growth of computer-integrated manufacturing is attributed to the complexity of designing and implementing their control and integration software. This article expands on a methodology for designing and implementing this software that was introduced in [16]. The goal of this methodology is to build flexible and resuable control and integration software for computer-integrated manufacturing systems. It hinges upon the concepts of software/hardware components, their assemblages, a distributed common language environment, formal models, and generic controllers. Major sources of flexibility are obtained by decoupling process plan models from the model of the factory floor and by using a generic controller. Reusability is achieved by building selfcontained software/hardware components with general, possibly parametrized, interfaces. The interplay between simulated and actual hardware internals of software/hardware components is used as the basis of a testing strategy that performs off-line simulation followed by on-line testing.The methodology has been applied in designing and implementing the control and integration software of an actual Prismatic Machining Cell. In recent years, researchers have been developing algorithms for the automatic mapping and merging of ontologies to meet the demands of interoperability between heterogeneous and distributed information systems. But, still state-of-the-art ontology mapping and merging systems is semi-automatic that reduces the burden of manual creation and maintenance of mappings, and need human intervention for their validation. The contribution presented in this paper makes human intervention one step more down by automatically identifying semantic inconsistencies in the early stages of ontology merging. We are detecting semantic heterogeneities that occur due to conflicts among the set of Generalized Concept Inclusions, Property Subsumption Criteria, and Constraint Satisfaction Mechanism in local heterogeneous ontologies, which become obstacles for the generation of semantically consistent global merged ontology. We present several algorithms to detect such semantic inconsistencies based on subsumption analysis of concepts and properties in local ontologies from the list of initial mappings. We provide ontological patterns for resolving these inconsistencies automatically. This results global merged ontology free from ??circulatory error in class/property hierarchy??, ??common class between disjoint classes/properties??, ??redundancy of subclass/subproperty of relations?? and other types of ??semantic inconsistency?? errors. Experiments on the real ontologies show that our algorithms save time and cost of traversing local ontologies, improve system??s performance by producing only consistent accurate mappings, and reduce the users?? dependability for ensuring the satisfiability of merged ontology. 相似文献

The coagulation of ewe's milk was studied by using plant source coagulants namely the artichoke, Cynara scolymus L. cv. Blanca, and latex from the fig tree (Ficus carica L.). A turbidimetric method was used to evaluate and compare the coagulation properties of the novel coagulants with chymosin treated samples. Syneresis capacity and sensory evaluation of resultant cheese samples were studied and it was found that both cynara and chymosin produced sigmoidal increase in turbidity to the milk with three distinct phases. The coagulation kinetics was affected substantially by both coagulants. Plant coagulant induced shorter gelation time compared to chymosin however required longer time for restructuration (end of coagulation). The coagulum obtained with the latex of Ficus carica had a higher yield, owing to its high water retention capacity. With the exception of color, the overall sensory attributes did not show significant differences among coagulants. 相似文献

The anti-microbial activity of a range of garlic products including dried garlic powder produced by different methods, commercial garlic products, and garlic oil was determined against a range of selected bacteria. The bacteria included food borne pathogens, spoilage agents, and health-beneficial agents, namely Staphylococcus aureus, Escherichia coli, Salmonella typhimurium, Bacillus cereus, and a mixed lactic culture consisting of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. The dried powders were produced using air-drying at both 60 and 80°C, vacuum-drying at 50 and 60°C, and freeze-drying at ?20°C. In addition, five commercial products were tested, two of which are used as spices, and three as food supplements. Before testing, the moisture content of the dried garlic powders was raised to that of fresh garlic before drying. Garlic oil was used without any addition of water. In general, the results showed that the lactic culture was the most sensitive to the growth inhibitory active compound of garlic used in this study, followed by Staphylococcus aureus. In contrast Salmonella typhimurium and Bacillus cereus demonstrated the greatest resistance to garlic. Generally, fresh garlic produced the greatest inhibition followed by freeze-dried powder. The anti-microbial activity decreased with decreasing dried garlic powder concentration. The results showed that both drying temperature and time have major effects on retaining the active components responsible for the inhibition of microbial growth. The anti-microbial substances in the moist fresh garlic were also affected by moist-heating temperatures and time. Higher heating temperatures caused faster loss of anti-microbial activity. The decrease in growth-inhibition zones for moist-heated fresh garlic followed zero-order kinetics. 相似文献
