The combined effects of different heating methods (conventional (CH) vs. Ohmic (OH)), types of acidifying agent (citric vs malic acid) and pH levels (pH 4.5, 5.5 and 6.2) were investigated to study their influence on destruction kinetics of spores of Bacillus licheniformis. The ultimate aim to generate relevant kinetic data on an indicator microbial spore is useful for assessing the efficacy of thermal processes for acid or acidified low acid foods. Kinetic parameters were evaluated according to the first-order kinetic model. Temperature and pH showed a highly significant (p < 0.01) effect on the spore destruction kinetics. Ohmic heating showed marginally better rate of bacterial destruction than conventional heating. The overall range of D and z values were 1.1–11.2 min and 12.6–17 °C, respectively, depending up on the pH and temperature levels, method of heating as well as the type of acidulate used. The shortest D97°C = 1.1 min was obtained at pH of 4.5 when citric acid was used as an acidifying agent in OH. No significant difference (p > 0.05) was observed with respect to D and z values between the two types of acidifying agents.  相似文献

Performance of mixed flow compressor with un-shrouded impeller strongly depends upon unsteady, asymmetrical flow fields in the axial directions. The flow through the mixed flow impeller is complex due to three-dimensional nature of geometry. In mixed flow impeller, there are clearances between the rotating impeller blades and the casing as the high pressure ratio compressors are usually open shrouded impellers. As a result, certain amount of reduction in the performance is unavoidable due to clearance flows. In the present investigations, numerical analysis is performed using a commercial code to investigate tip clearance effects on through flow. The perform- ance of mixed flow impeller with four different clearances between impeller and stationary shroud are evaluated and compared with experimental results. The impeller performance map was obtained for different operating speeds and mass flow rates with different tip clearances. The result shows that the tip leakage flow strongly inter- acts with mainstream and contributes to total pressure loss and performance reduction. The pressure and per- formance decrement are approximately linearly proportional to the gap between impeller and stationary shroud. The analysis showed scope for improvement in design of the compressor for better performance in terms of effi- ciency and operating range.  相似文献

A novel protein hydrolysate was prepared from the mixture of oilseed flours (soybean, sesame and peanut) and determined physicochemical & functional properties along with comparison of individual oilseed flour hydrolysate of soybean. Mixed flour obtained from oilseed flours viz. soybean, sesame and peanut by using calculated amounts in the ratio of 1.1:1.7:0.7, respectively was used as a starting raw material having balanced amino acid profile. Protein hydrolysates were prepared from mixed flour and soybean flour by a double enzyme treatment method to a level of 40% degree of hydrolysis. The dried protein hydrolysate prepared from the mixed flour had 72% crude protein. This protein was characterized by gel filtration chromatography and SDS-PAGE. Comparison of the amino acid profile of the protein hydrolysate from mixed flours and soyabean flours showed a significant increase in the former one with respect to amino acid contents usually deficient of single oilseed flour hydrolysate. The product is creamish yellow in colour and had a solubility of >90% over a wide pH range of 2–10. The mixed flour protein hydrolysate showed better functional attributes such as foaming, as compared to that from soybean flour alone.  相似文献

Chitosan glucose complex (CGC), a modified form of chitosan was prepared by heating chitosan with glucose. Fluorescence and the browning reaction of CGC indicated the presence of the Maillard reaction product (MRP). CGC showed excellent antioxidant activity while chitosan or glucose alone did not have any significant activity (p < 0.05). The IC50 value of CGC for DPPH radical scavenging was 51.1 μg/ml. The efficacy of CGC in scavenging hydroxyl and superoxide anion radicals was also very high but it showed a low reducing power. The antimicrobial activity of CGC was similar to chitosan against E. coli, Pseudomonas, Staphylococcus aureus and Bacillus cereus, the common food spoilage and pathogenic bacteria. The minimum inhibitory concentration of CGC or chitosan was 0.05%. Addition of CGC to lamb meat increased its shelf life by more than 2 weeks during chilled storage. It also enhanced the shelf life of pork cocktail salami to 28 days. CGC is endowed with both antioxidant and antimicrobial activity and thus is a promising novel preservative for various food formulations.  相似文献

Data on pubertal maturation in male marmoset, a model for human reproduction, are scant and conflicting. We collected data on novel parameters to characterize puberty. Twenty-five marmoset monkeys were assigned to five age groups by weeks (wk): 21 (pre-pubertal), 43 (onset of puberty), 52 (fully pubertal), 70 (mature), and 116 (fully adult). Serum and intratesticular testosterone and pituitary bioactive chorionic gonadotropin (bioCG) were measured. Testicular development was assessed by ultrasonography, histology, and flow cytometry. Three consecutive blood samples revealed extreme fluctuations in testosterone concentrations, suggesting an erratic secretion. Age-related changes in serum testosterone and pituitary bioCG concentrations were observed. Intratesticular androgens (ITAs) showed high fluctuations within groups at all ages and were high in some animals by 21 wk. Unexpectedly, no correlation between pituitary bioCG and serum testosterone or ITAs was found, but these parameters significantly correlated with testicular weight and volume. These observations were consistent a dependence on the testis growth on bioCG. Unfortunately, the low serum levels of bioCG were not measurable in this study. At 43 wk, the animals reached puberty. At 52 wk of age, animals attained maximum body and epididymal weights and qualitatively normal spermatogenesis, but testes continued growing, reaching a maximum of all parameters at 70 wk of age, without further major changes at the age of 116 wk. It is concluded that (1) gonadal activation is evident at wk 21, (2) the male marmoset reaches the pubertal threshold around 43 wk of age, attains qualitative parameters at 52 wk, matures further to sexual maturity at 70 wk, and (3) serum testosterone and ITAs are highly variable without any identifiable correlation with pituitary bioCG.  相似文献

Selective oxidation reactions like the oxyfunctionalization of alkanes, hydroxylation of aromatics and sulfoxidation of thioethers have been carried out with dilute hydrogen peroxide over titanium and vanadium metallosilicate molecular sieves with MEL topology, viz., TS-2 and VS-2. Though both the catalysts possess similar activities, substantial differences in the product distribution are observed. The oxyfunctionalization of the primary carbon atoms of the alkanes and the oxidation of the methyl substituents of the aromatic hydrocarbons distinguish VS-2 from TS-2. Both the catalysts are found to be equally active in the hydroxylation of phenol, though they possess different activities in different solvents. In general, the oxidations are deeper over VS-2 than on TS-2.  相似文献

The rate of pheromone [(E)- and (Z)-11-tetradecenal] release from calling virginChoristoneura fumiferana females and synthetic lures was determined in both static and aerated atmospheres. In a static system ca. 2 ng/hr was recovered per female. Owing to the > 75% adsorption onto the females' bodies in static atmospheres, the actual release rate has to be corrected to roughly 9–27 ng/hr, depending on the percentage adsorbed. In the air-flow system, females were found to release between 4 and 20 ng/hr. On a 168 light-dark cycle, calling began 1–2 hr before lights-off and continued nonstop until lights-on.
