Summary Part-baked Irish brown soda bread loaves with bicarbonate levels from 0 to 2.8 % were baked, packed and stored for up to 11 days at 5 C then second-baked at 180 or 200 C for various times to give an oven-fresh end product. The quality of the rebaked bread was dependent on characteristics of the part-baked bread, its storage conditions and the processing parameters of the second baking phase. Quality parameters evaluated were bread volume yield, crumb and crust firmness, moisture content and colour. Staling of the part-baked bread during storage at 5 C and the reversion of this process at 59 C was investigated with regard to rebaking time and temperature. Rebaking conditions were optimized by evaluating the core temperature increase in the centre of the bread. Immediately after the second baking phase a post-baking temperature increase was measured which allowed reduction of the in-oven rebaking time. In a study of pigs slaughtered at British abattoirs, approximately 23% carried Salmonella in their cecal (large intestine) contents. The most frequent serotype was Salmonella Typhimurium (STM), which was the second most common cause of human salmonellosis in Great Britain. A pig industry-monitoring program was developed to reduce Salmonella infection on British farms. The control of STM infection on the farm requires an understanding of STM transmission dynamics within the herd, and a mathematical model has been developed for an infected grower-finisher farm. The model estimates the probability of a random pig being infected with STM. There are three broad categories of STM infection in pigs: pigs that are infected but unable to transmit the infection (latent); pigs that are infectious, i.e., able to transmit the infection (shedders); and pigs that have stopped shedding but harbor STM in their internal organs (carriers). The model estimates that 21.0% (5th and 95th percentiles, 0.05 to 77.5%) of slaughter-age pigs on an infected farm are likely to be shedding STM. Although this range is wide, it is biologically plausible. Sensitivity analysis of the total number of infected pigs revealed that the most significant input parameters are the probability of effective contact between a specific infectious and susceptible pig and the duration of shedding. The model predicted that 11.5% of pigs would be shedding STM at slaughter age. This value is close to the estimate obtained from a British abattoir survey that 11. 1% of pigs carried STM in their ceca, indicating that the model has reasonable validity. 相似文献

Listeriosis is a foodborne disease caused by the bacterium Listeria monocytogenes. The food industry and government agencies devote considerable resources to reducing contamination of ready-to-eat foods with L. monocytogenes. Because inactivation treatments can effectively eliminate L. monocytogenes present on raw materials, postprocessing cross-contamination from the processing plant environment appears to be responsible for most L. monocytogenes food contamination events. An improved understanding of cross-contamination pathways is critical to preventing L. monocytogenes contamination. Therefore, a plant-specific mathematical model of L. monocytogenes cross-contamination was developed, which described the transmission of L. monocytogenes contamination among food, food contact surfaces, employees' gloves, and the environment. A smoked fish processing plant was used as a model system. The model estimated that 10.7% (5th and 95th percentile, 0.05% and 22.3%, respectively) of food products in a lot are likely to be contaminated with L. monocytogenes. Sensitivity analysis identified the most significant input parameters as the frequency with which employees' gloves contact food and food contact surfaces, and the frequency of changing gloves. Scenario analysis indicated that the greatest reduction of the within-lot prevalence of contaminated food products can be achieved if the raw material entering the plant is free of contamination. Zero contamination of food products in a lot was possible but rare. This model could be used in a risk assessment to quantify the potential public health benefits of in-plant control strategies to reduce cross-contamination. 相似文献

Corynebacterium bovis is a mastitis-causing microorganism responsible for economic losses related to decrease in milk production. The aim of the study was identify Corynebacterium spp. strains recovered from milk samples of subclinical mastitis by using matrix-assisted laser desorption/ionization mass spectrometry (MALDI-MS). Samples were collected during a 10-mo mastitis-monitoring program in a high-production dairy farm. In this study, 80 strains were analyzed; from these 54 (67.5%) were identified at species level as Corynebacterium bovis, 24 (31.2%) isolates were identified at the genus level as Corynebacterium spp., and only 1 (1.35%) isolated had unreliable identification. Results demonstrated that MALDI-MS could be an important technique for the identification of Corynebacterium spp. in milk. 相似文献

The adsorption of copper, cadmium, and nickel on goethite was examined in natural groundwater samples from an infiltration site of the river Glatt at Glattfelden (Switzerland). Unfractionated dissolved organic matter was used at its natural concentrations. Metal concentrations were close to environmental conditions. Cu, Cd, and Ni presented the typical pH adsorption edge of cations. The major influence on metal adsorption was due to a strong organic ligand L(I), which inhibited adsorption of Cu, Cd, and Ni in the alkaline pH region. Complexation of Cu, Cd, and Ni by the natural organic ligands was described with a model defining a minimum number of discrete ligands: a strong ligand L(I) at low concentration and additional weaker ligands with higher concentrations. The adsorption of Cu, Cd, and Ni on the goethite surface in the presence of the natural organic ligands was adequately described by considering only surface complexation and complexation in solution by organic ligands. No ternary complexes had to be invoked in the model. The major effect was complexation by the strongest ligand, whereas interactions with other cations and anions had only a minor influence. Seven target polychlorinated biphenyls (PCBs; IUPAC nos. 28, 52, 101, 118, 138, 153, and 180) and the organochlorine pesticides (OCPs) hexachlorobenzene (HCB) and dichlorodiphenyltrichloroethane (DDT) and its related metabolites (p,p'-DDT, p,p'-DDE, and p,p'-DDD) were quantified in edible tissues from seven marine species (European hake, red mullet, blue whiting, Atlantic mackerel, blue and red shrimp, European flying squid, and Mediterranean mussel) from the Gulf of Naples in the southern Tyrrhenian Sea (Italy). PCBs 118, 138, and 153 were the dominant congeners in all the species examined. The concentrations of all PCBs (from not detectable to 15,427 ng g(-1) fat weight) exceeded those of all the DDTs (from not detectable to 1,769 ng g(-1) fat weight) and HCB (not detectable to 150.60 ng g(-1) fat weight) in the samples analyzed. The OCP concentrations were below the maximum residue limits established for fish and aquatic products by the Decreto Ministerale 13 May 2005 in all the samples analyzed; therefore the OCPs in the southern Tyrrhenian Sea species are unlikely to be a significant health hazard. Conversely, the mean concentrations of PCBs exceeded (greatly in some cases) the current limits (200 ng(-1) fat weight) set by the European Union for terrestrial foods. Although the manufacture and use of PCBs are banned or highly restricted, these compounds still are important persistent chemical contaminants in the Gulf of Naples. 相似文献
