L-Ascorbic acid (vitamin C) was freeze-dried along with the following six types of wall materials: soluble soybean polysaccharide (SSPS), gum arabic (GA), maltodextrin (MD), α-cyclodextrin (α-CD), trehalose (Tre) and lactose (Lac). α-CD, Tre and Lac were used in mixtures with MD (weight ratio of 1:1). The decomposition kinetics of L-ascorbic acid in these powders stored at 80 °C and relative humidities of 11, 51 and 79% were expressed by the Weibull equation. The discoloration of the powders was also monitored by measuring the absorbance at 500 nm for solutions which were obtained by dissolving the systems in water. The L-ascorbic acid powders prepared with GA and SSPS were significantly discolored and the processes could be expressed by a modified Weibull equation. The discoloration of the L-ascorbic acid powders prepared with other saccharides was very slow. The discoloration rate constants were significantly greater at temperatures higher than the glass transition temperatures of the saccharides under the stated storage conditions, while the decomposition rate constant was only slightly affected by the system glass transition temperature.

Industrial relevance

Decomposition and discoloration are examples of food deterioration. Food usually represents a multi-component system in which components interact with each other. Both their state and interaction would affect the deterioration. L-Ascorbic acid is one of the food components which are subject to decomposition and discoloration during storage. The decomposition and discoloration of L-ascorbic acid powders freeze-dried with saccharides were measured under various conditions and kinetically analyzed to understand an aspect of food deterioration.  相似文献

Extracted lipids obtained from Jack beans (white and red) were fractionated by TLC into nine subfractions. The major components were TAGs (TAG: 43.8–45.7 wt%) and phospholipids (PL: 46.7–47.0 wt%), while other components were also present in minor proportions (0.3–2.7 wt%). The principal fatty acids (FA) are generally palmitic (18.8–28.8%), stearic (0.7–6.8%), oleic (42.0–51.8%), linoleic (16.2–22.8%), and α‐linolenic (3.0–8.2%) acids, the distribution of which differs according to these lipid classes. There were no significant differences (p>0.05) in the positional distribution of FA in the TAG; unsaturated FA (97.5%) were predominantly concentrated in the sn‐2 position while saturated FA (33.3%) primarily occupied the sn‐1 position or sn‐3 position. However, significant differences (p<0.05) in FA distribution existed when the individual PL were compared between the white and red beans. Based on the FA composition of these lipids, it seems that the two cultivars of Jack beans are very similar to each other with a few exceptions. The results could be useful to both producers and consumers for our daily diet to improve value of the Japanese diet. Practical applications : The lipid composition suggests that these beans could be a good source of nutraceuticals with providing heath benefits. The white and red beans may be well incorporated into our daily Japanese diets to improve nutritional value. The data obtained in this study provide valuable information for manufacturing functional drinks such as Jack bean tea in Japan.  相似文献

Endogenous tocopherols in extracted lipids from Jack beans (Canavalia gladiata DC.) were determined by high-performance liquid chromatography (HPLC), and were investigated in relation to the fatty acids (FA) distribution of triacylgycerols (TAG) and phospholipids (PL). The dominant tocopherols were (δ)-tocopherol (78.9–96.5 mg%) and (γ)-tocopherol (42.1–56.1 mg%) with much smaller amounts of (α)-tocopherol (1.1–1.3 mg%). The lipids of Jack beans comprised mainly TAG (34.6–38.6 wt.%) and PL (54.8–57.4 wt.%), and other components were also detected in minor proportions (0.3–3.8 wt.%). The PL components included phosphatidyl choline (46.2–48.7 wt.%), phosphatidyl inositol (23.4–29.6 wt.%) and phosphatidyl ethanolamine (18.5–21.2 wt.%). Comparison of these different beans showed, with a few exceptions, no significant differences (P > 0.05) in FA distribution. The FA distribution of TAG among the five beans was evident in the Jack beans: unsaturated FA (93.3–95.3 wt.%) were predominantly concentrated at the sn-2 position and saturated FA (33.6–34.4wt.%) primarily occupying the sn-1 position or sn-3 position. The results obtained from this work would provide useful information to both producers and consumers for manufacturing functional foods or beverages in Japan and elsewhere.  相似文献

Extramammary Paget’s disease (EMPD) is a rare skin cancer arising in the apocrine gland-rich areas. Most EMPD tumors are dormant, but metastatic lesions are associated with poor outcomes owing to the lack of effective systemic therapies. Trophoblast cell surface antigen 2 (Trop2), a surface glycoprotein, has drawn attention as a potential therapeutic target for solid tumors. Sacituzumab govitecan, an antibody–drug conjugate of Trop2, has recently entered clinical use for the treatment of various solid cancers. However, little is known about the role of Trop2 in EMPD. In this study, we immunohistochemically examined Trop2 expression in 116 EMPD tissue samples and 10 normal skin tissues. In normal skin, Trop2 was expressed in the epidermal keratinocytes, inner root sheaths, and infundibulum/isthmus epithelium of hair follicles, eccrine/apocrine glands, and sebaceous glands. Most EMPD tissues exhibited homogeneous and strong Trop2 expression, and high Trop2 expression was significantly associated with worse disease-free survival (p = 0.0343). These results suggest the potential use of Trop2-targeted therapy for EMPD and improve our understanding of the skin-related adverse effects of current Trop2-targeted therapies such as sacituzumab govitecan.  相似文献

Proximal tubules (PTs) take up most of the glucose in the glomerular filtrate and return it to peritubular capillary blood. Sodium-glucose cotransporter 2 (SGLT2) at the apical membrane takes up glucose into the cell. Glucose then flows across the cells and is transported to the interstitium via glucose transporter 2 (GLUT2) at the basolateral membrane. However, glucose transport under SGLT2 inhibition remains poorly understood. In this study, we evaluated the dynamics of a fluorescent glucose analog, 2-NBDG, in the PTs of live mice treated with or without the SGLT2 inhibitor, luseogliflozin. We employed real-time multiphoton microscopy, in which insulin enhanced 2-NBDG uptake in skeletal muscle. Influx and efflux of 2-NBDG in PT cells were compared under hypo-, normo-, and hyperglycemic conditions. Luseogliflozin did not exert significant effects on glucose influx parameters under any level of blood glucose. Our results suggest that blood glucose level per se does not alter glucose influx or efflux kinetics in PTs. In conclusion, neither SGLT2 inhibition nor blood glucose level affect glucose uptake kinetics in PTs. The former was because of glucose influx through basolateral GLUT2, which is an established bidirectional transporter.  相似文献

Based on the data for pesticide residues in vegetables and fruits collected in Aichi prefecture (fiscal years 2001-2005), we selected groups of foods and pesticides that would allow efficient and effective inspection under the positive list system. Statistical analyses were done to examine the rates of detection of pesticides and the numbers of kinds of pesticides detected in samples of domestic vegetables, domestic fruits, imported vegetables, and imported fruits. The rate of detection of pesticides has decreased gradually in domestic vegetables. The number of different kinds of pesticides detected in each sample was significant higher in domestic fruits. Data for previous years were reassessed in terms of the present maximum residue limits (MRL), and classified as relative value to the MRL. The proportion of pesticides detected at levels that exceeded the MRLs showed a decreasing tendency. In addition, we were able to identify combinations of pesticides and agricultural commodities in which the MRLs were more likely to be exceeded.  相似文献

This paper reports on the mechanical properties and pH upon degradation of phosphate glass fibre reinforced methacrylate-modified oligolactide. Phosphate glass fibres of the composition 51.04 P2O5–21.42 CaO–25.51 Na2O–2.03 SiO2 (mol%) were produced by a crucible spinning technique. Fibres were embedded into a matrix of a degradable organic polymer network based on methacrylate-modified oligolactide; samples with and without addition of CaCO3 for pH control were produced. pH during degradation in physiological NaCl solution could be increased to up to 6.5 by addition of 20 wt.% calcium carbonate to the fibre composites. pH in Tris buffer solution was about 7.11. Mechanical properties of dry specimens were investigated during 3-point bending tests and gave elastic moduli in the range of cortical bone (15 to 20 GPa). However, addition of calcium carbonate decreased tensile strength of the fibre composites and resulted in brittle fracture behaviour, while CaCO3-free composites showed a fibrous fracture mode. Control of pH and degradation is a requirement for obtaining a fracture fixation device with degradation properties matching in vivo requirements. Results show that addition of CaCO3 is suitable for controlling the pH during degradation of metaphosphate glass polymer composites.  相似文献

To investigate the aging behavior of Li2+xTiO3+y, the materials Li2.0TiO3+y, Li2.2TiO3+y and Li2.4TiO3+y were stored under moist air at ambient temperature. Under these conditions the weight of Li2.0TiO3+y increased by only 1% in 100 days, which provides evidence for the high chemical stability of Li2TiO3. In comparison, under the same storage conditions the weights of Li2.2TiO3+y and Li2.4TiO3+y increased by 14% and 18%, respectively. The observed weight gain is attributed to the uptake of water, and to the reaction of a by-product of Li2+xTiO3+y with water and carbon dioxide. The weight gain curves were evaluated by the Jander equation. From the analysis, it was possible to obtain the diffusion coefficient of water through Li2TiO3 particles at ambient temperature. The determined value was 2 × 10−17 m2/s.  相似文献

Substantial amounts of mercury are usually present in tuna muscle, with levels in excess of 10 times the standard safety value present in some individuals. Inspection of individual fish for mercury content would be desirable but may not be cost-effective. In this study, we tried to establish a low-cost system for checking the mercury content of tuna by using a tail muscle that is usually discarded. The samples used in this experiment were bluefin tuna, cultured in the Fisheries Laboratory of Kinki University (Oshima Experimental Station, Wakayama, Japan). They were raised from eggs spawned in 2002. Ninety-eight individuals, weighing 22.3 to 61.6 kg, were selected between December 2004 and November 2005. In nine individuals, the mercury content of the tail was compared with that of the whole body. The total mercury level was measured using the reduction vaporizing atomic absorption method after acid digestion. Except for the front of the abdomen, where the mercury content was lower (0.490 ppm), the mercury content of other parts of the fish did not differ from that of the tail muscle (0.631 ppm). Therefore, the overall mercury concentration in bluefin tuna could be estimated to be almost the same and/or lower than that of the tail muscle. On the basis of these results, for 1 year we investigated the quantity of mercury in full-cycle cultured bluefin tuna that were shipped. The mercury concentration showed no increase irrespective of increases of body weight.  相似文献
