The objective of the study was to systematically investigate flavor compounds in Chinese rice wine (CRW) using chromatography technology. In twelve CRW samples, 93 different flavor compounds were detected and identified including 16 alcohols in addition to ethanol, 29 esters, 9 aldehydes, 9 organic acids, 19 amino acids and 11 fatty acids. Statistical analysis by principal component analysis (PCA) indicated that seventeen flavor compounds in Guyue Longshan rice wine made a large contribution to its special flavor. These compounds were benzaldehyde, acetaldehyde, ethyl 2‐hydroxy‐4‐methylvalerate, ethyl butyrate, phenyl ethyl isobutyrate, ethyl benzoate, ethyl phenyl‐acetate, methyl dodecanoate, methyl oleate, ethyl dedecanoate, 1‐butanol, 3‐ethoxyl‐1‐propanol, 1‐enanthol, dodecanol, lactic acid, fumaric acid and lauric acid. 相似文献

Simulations of gastro‐intestinal digestion was used to try to identify the nature of the complexes between antinutritional factors and zinc in faba bean fractions. In the hull fraction, the action of phytases and the simultaneous action of cellulase and phytase allowed about 7% and 35% additional zinc to be solubilised, respectively. Single enzymatic degradation of phytates from dehulled faba bean allowed solubilisation from 65% to 93% of zinc depending upon the treatment. The zinc of faba bean flour was mainly linked to phytates and the greater the degree of phytate degradation before in vitro digestion, the greater the quantity of zinc released. In dehulled faba bean zinc was almost exclusively chelated by phytates. In the hull of faba bean, the majority of zinc was chelated in complexes between phytates and fibres. 相似文献

Two new sesquiterpene glucosides, litchiosides A (1) and B (2), were obtained along with pumilaside A (3) and funingensin A (4) from lychee (Litchi chinensis Sonn.) seed. Their structures were elucidated on the basis of spectroscopic and chemical evidence. The in vitro antitumour activity of compounds 1–4 against A549, LAC, Hela, and Hep-G2 cell lines was determined using the MTT colourimetric assay. Pumilaside A (3) exhibited significant activity against all the tested cell lines with IC50 values of 0.012–6.29 μM, and funingensin A (4) showed moderate activity against Hep-G2 cells (IC50 = 39.27 μM), while litchiosides A (1) and B (2) were found to be inactive. 相似文献
