The effects of washing with hydrogen peroxide (H2O2) and sodium hypochlorite (NaOCl) solutions on the gel-forming ability and physicochemical properties of surimi produced from bigeye snapper (Priacanthus tayenus), stored in ice for up to 14 days, were investigated. Generally, pH and the trichloroacetic acid (TCA)-soluble peptide content of washed mince varied, depending on the type of oxidizing agent and storage time of the fish. With increasing time of storage, the pHs of water- and H2O2-washed mince were lower than that of NaOCl-washed mince (P < 0.05). However, no differences in the TCA-soluble peptide contents of the resulting mince washed with any media were observed (P > 0.05). Washing with 20 ppm NaOCl resulted in the highest increase in both the breaking force and the deformation of mince from fish stored in ice for all the times studied (P < 0.05). Natural actomyosin (NAM) extracted from NaOCl-washed mince had higher surface hydrophobicity and disulfide bond (SS) content than that of water-washed mince (P < 0.05). With no effect on Ca2+-, Mg2+-, or Mg2+–Ca2+-ATPase activities, NaOCl washing resulted in an increase in Mg2+–EGTA-ATPase activity of NAM (P < 0.05). The results suggested that washing mince with the appropriate type and concentration of oxidizing agent can improve the gelling ability of surimi, particularly from low quality fish. 相似文献

This study deals with evaluating the energy and exergy utilization efficiencies in the Turkish agricultural sector over a 12‐year period from 1990 to 2001. In the energy and exergy analyses, two main energy sources, namely fuels and electricity, are taken into consideration, while the sectoral energy and exergy efficiencies are compared for this period. These main energy sources include diesel for tractors and other vehicles, and electricity for pumps. Overall energy utilization efficiencies are obtained to vary between 29.1 and 41.1%, while overall exergy utilization efficiencies are found to range from 27.9 to 37.4% in the analysed years, respectively. It may be concluded that the present technique proposed here may be used as a useful tool in analysing and evaluating the energy and exergy utilization efficiencies, identifying energy efficiency and/or energy conservation opportunities and dictating the energy strategies of countries. The contentions made in an earlier paper [J Chem Technol Biotechnol 80 : 133–137 (2005)] that the coefficients of the Abraham solvation equation do not provide meaningful information on the molecular properties of ionic liquid solvents is refuted. The objections noted in the earlier paper disappear when the solvation equation model is correctly applied to the experimental data. It is further shown that the coefficients of the Abraham solvation equations can be used to characterize ionic liquids and can be used to select solvents for the solubility of gaseous solutes. The aluminium species in different tea infusions were investigated, by determining their stability constants and concentration. This was done for some particular samples using a simple experimental method based on the sorption of aluminium on the strongly sorbing resin Chelex 100, by a batch procedure. From the thermodynamic information obtained it is possible to calculate the concentration of the different species, and in particular that of the free metal ion, which is very important for evaluating the adsorption of aluminium on biological membranes. It was found that aluminium in the tea infusions here considered is present at high total concentration, approximately 0.1 mM, but mainly linked to strong complexes, for instance with side reaction coefficient higher than 10(5.11) at pH 3.95 in one case (tea 1). This could be the reason for the low toxicity of aluminium in tea. These strong complexes were not dissociated even in the presence of Chelex 100. In this case only a limiting value of the reaction coefficient could be evaluated. The presence of the very strong complexes was found in all the tea sample here considered. In two of the considered samples (one black and one green tea) a part of Al(III) was linked to less strong complexes, for example with a reaction coefficient 10(4.14) (tea 2, pH 4.20). The presence in the considered tea infusions of other substances able to complex aluminium was also detected, by the well known ligand titration procedure, at concentration ranging from 0.65 to 3.37 mM in three tea infusions, and at somewhat higher concentration in the case of the ready drink, which was also considered for comparison. 相似文献

Samples of chicken meat from spent laying hens were obtained by four different methods: (1) manual deboning of whole carcasses; (2) manual deboning of skinned carcasses; (3) mechanical deboning of whole carcasses; and (4) mechanical deboning of skinned carcasses. The meat was packaged, frozen and stored at ?18 °C for up to 3 months. Functional properties studied were pH, emulsifying capacity (EC) and water‐holding capacity (WHC) and, in addition, pigment concentration was investigated. Sensory properties included aroma, colour, texture and overall acceptability, as judged by a trained panel using a nine‐point hedonic scale. Removal of the skin prior to deboning by either method gave significantly higher values (P < 0.05) for EC, while WHC values were not significantly different among the experimental treatments, despite higher pH values for mechanically‐deboned meat, with and without skin. Pigment concentrations were highest in meat from Treatment 4 and lowest for Treatment 1, but values for both methods of deboning were affected by the presence of skin. There were no significant differences between treatments for any of the sensory properties studied. Changes occurring in the meat during frozen storage are described. 相似文献

New small‐scale dispersed generation systems, such as fuel cells and micro gas turbines, have made remarkable advances lately and they will be applied practically in the near future. Although a large number of researches on the introduction of small‐scale dispersed generation systems have been carried out, only a small number of small‐scale dispersed generation systems are considered in these researches. Therefore, little is known about problems to be solved when a large number of small‐scale dispersed generation systems are introduced into electric power systems. This paper deals with a super‐distributed energy system that consists of a great number of dispersed generation systems such as fuel cells, micro gas turbines, and so on. The behavior of a customer with a dispersed generation system is simulated as the Ising model in statistical mechanics. The necessity of a distribution network in super‐distributed energy systems is discussed based on the Ising model. The thermal behaviour of a packed bed storage system charged with hot air is modelled using two partial differential equations representing the energy conservation in the air and solid phases constituting the bed. These two equations are coupled through the heat exchange process between the two phases. A fully implicit numerical scheme based on forward, upwind and central differencing for the time, first and second space derivatives, respectively, is used to solve the modelling equations. Marching technique is used for the air equation and a tri-diagonal matrix solver is employed to solve the solid equation. The solution yields the thermal structure of the bed, namely the air and solid temperature distribution inside the bed at any particular time, and the variation of total energy stored in the bed with time. The effect of bed length, solid diameter and void fraction on the thermal characteristics of the packed bed is studied.
