Single cell oils (SCO) produced from oleaginous microorganisms are a potential alternative oil feedstock for biodiesel production. The worldwide production of glycerol, a 10% (w/w) byproduct produced in the transesterfication process of oils converted to biodiesel, is increasing as more biodiesel is being produced. For the purposes of cost reduction, crude glycerol was regarded as a suitable carbon source for the cultivation of Rhodotorula glutinis. In addition to using renewable crude glycerol, waste solution collected from the brewing company (called thin stillage) was adopted as a substitute to replace a costly nitrogen source used in the medium. The results of using mixture of crude glycerol and thin stillage indicated about a 27% increase in total biomass as compared to that of using crude glycerol with a standard medium. Using glycerol instead of glucose as the carbon source could also alter the lipid profile, resulting in an increase in linolenic acid (C18:2) to comprise over 20% of the total lipid. Successfully using renewable crude glycerol and thin stillage for the cultivation of oleaginous microorganisms could greatly enhance the economic competition of biodiesel produced from SCO.  相似文献

The relationship between the adsorption of chitosan to oil droplet interfaces (surface adsorption) and the molecular characteristics of the chitosan (molecular weight and charge density) was examined using an in vitro digestion model. This model involved adding different concentrations (3–10 wt%) of oil droplets to a 0.1 wt% chitosan solution at pH 3 to simulate consumption of an oil-containing meal after ingestion of chitosan. The pH was then incrementally raised to investigate pH variations that occur when a food material passes through the human digestive tract at an oil concentration of 3%. The amount of chitosan adsorbed to the oil droplet interface decreased with decreasing molecular weight (MW) and with increasing degree of deacetylation (DDA): ≈132, 85, and 78 g of oil per g of chitosan for MWs of 200, 500 and 750 kDa (all 90% DDA), respectively; and, 47, 65, and 78 g of oil per g of chitosan for DDAs of 40%, 70% and 90% (all 750 kDa), respectively at pH 3. In addition, the extent of droplet aggregation and the nature of the aggregates formed (strong versus weak; large versus small) also depended on chitosan characteristics. The pH dependence of the interaction between anionic oil droplets and cationic chitosan molecules depended on both MW and DDA. Microscope images showed formation of large flocculated structures at pH > 7 except for low DDA chitosan which remained soluble at all pH levels. Our results may have important consequences for understanding the bioactivity of chitosan, and for designing functional food ingredients to reduce lipid digestion and absorption.  相似文献

The effect of pasture- or concentrate-diet on colour stability, lipid oxidation and protein oxidation was measured in lamb meat (M. longissimus dorsi) during refrigerated storage of 7 days under gas permeable film. Lipid and protein oxidation increased rapidly with storage time while evolution of colour parameters exhibited a biphasic curve. Diet had an important effect on lipid oxidation where animals fed concentrate showed higher thiobarbituric reactive substance (TBARS) levels than animals fed pasture-diet. However the nature of diet did not affect protein oxidation or colour parameters of meat. In parallel anti-oxidant status of meat was estimated by measurement of vitamin E content and anti-oxidant enzyme activities while pro-oxidant status was evaluated by haeminic iron, polyunsaturated fatty acid (PUFAs) and glycogen content of muscle. Statistical analysis was performed in order to relate oxidation parameters to pro- and anti-oxidant status of muscle.  相似文献

Objective: To quantify and compare the nutrient‐density of commonly consumed snacks using two nutrient‐density measures, Nutrient Rich Foods Indices 9.3 (NRF 9.3) and 15.3 (NRF 15.3). Design: Identify commonly consumed categories of snacks and individual snack foods, calculate NRF 9.3 and 15.3 scores, rank snacks by category and by individual food based on nutrient density, compare and contrast scores generated by the two NRF Indices. Main Outcome Measures: NRF 9.3 and 15.3 scores. Analysis: Averages and standard deviations of nutrient‐density scores for each snack category. Results: Vegetables and coffee/tea received the highest category scores on both indices. Cakes/cookies/pastries and sweets had the lowest category scores. NRF 9.3 scores for individual snacks ranged from –46 (soda) to 524 (coffee). NRF 15.3 scores ranged from –45 (soda) to 736 (coffee). Conclusions and Implications: If added to food labels, NRF scores could help consumers identify more nutritious choices. The differences between NRF 9.3 and 15.3 scores generated for the same foods and the limitations of these indices highlight the need for careful consideration of which nutrient‐density measure to include on food labels as well as consumer education.  相似文献

There is increasing evidence that reactive oxygen species (ROS) are intimately involved in the oxidative damage of tissues for a wide variety of pulmonary diseases. Thus, it is desirable to search for chemopreventive agents that can counteract ROS-mediated injury to the pulmonary tissues. Using a human lung fibroblast IMR-90 cells as the experimental model, we first demonstrated that nearly 90% of intracellular ROS could be removed when H(2)O(2)-treated cells (200 microM) simultaneously incubated with 10 microg/mL of tannic acid (TA), gallic acid (GA), ellagic acid (EA), and propyl gallate (PA). Using C(11)-BODIPY(581/591 )as a lipid peroxidation probe, we also attested that all these compounds examined (10 microg/mL) could alleviate H(2)O(2)-evoked lipid peroxidation phenomena. Next, we examined the protective effects of these compounds on the depletion of intracellular glutathione (iGSH) in H(2)O(2)-treated cells using CMF-DA probe. Interestingly, PA was demonstrated to be the only compound that could effectively protect the integrity of iGSH from being depleted by this system. Finally, the protective effects of these compounds against oxidative DNA damage were evaluated using 8-oxoguanine formation as a marker. Our data indicated that all four compounds suppressed the formation of 8-oxoguanine effectively. Taken together, our data suggested that TA, GA, EA, and PA can protect cells from oxidative stress.  相似文献

Thermal oxidation of edible oils can generate 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) radical scavenging compounds from oxidized lipids (RSOLs). However, effects of photosensitization on the formation of RSOLs have not been reported yet. Methylene blue (MB) photosensitization and involvement of singlet oxygen and transition metals on the RSOL formations were determined in stripped lard oils. RSOLs were formed in lard containing MB and visible light irradiation only. Addition of sodium azide decreased RSOLs with concentration dependent manner, which implies singlet oxygen was involved on the RSOL formation. Ethylenediammetetraacetic acid (EDTA), a well known metal chelator, accelerated the formation of RSOLs through protecting the decomposition of MB photosensitizer. Results from p‐anisidine values showed that RSOLs from photosensitization may not be formed from the same pathways compared to thermal oxidation. Practical application: Understanding mechanisms of lipid oxidation can help extend the shelf‐life of foods. Photosensitization plays important roles in accelerating the rates of lipid oxidation. The results of this study showed that foods containing photosensitizers can generate radical scavenging compounds from oxidized lipids (RSOLs) under visible light irradiation and singlet oxygen is involved in the formations of these compounds. However, these compounds may not share the same pathways with thermally oxidized lipids. Metal chelating agents accelerated the rates of lipid oxidation and formation of RSOLs which implies that metal chelators can act as prooxidant. Careful considerations are necessary on the addition of metal chelators because non‐polar photosensitizers can act a prooxidant.  相似文献

In this study, proximate and fatty acid composition in the edible flesh of eight underutilized and five commercial freshwater fish species were compared in order to evaluate the potential of these fish for development of functional value-added fishery products. The lipid content (% dry weight basis) of investigated fish species ranged from 3.44 to 9.25 in underutilized and 3.73–7.68 in commercial species. In comparison with underutilized fish species, commercial species had higher levels of protein (P < 0.05). The high proportion of EPA+DHA was found with Goldfish (524 mg/100 g flesh), Wels (422 mg/100 g flesh), and Crucian carp (354 mg/100 g flesh), all of which belonged to underutilized group. All studied fish (save Lenkoran) showed values higher than the minimum recommended DHA/EPA value (0.45). The ratios of n-6/n-3 found in this study were much lower (save Goatfish) than those cited as a harmful value (4.0 as the maximum value). The PUFA/SFA value of the present fish samples was higher at 1.57 for Goatfish, 1.02 for Lenkoran, 0.68 for Wels, all of these fish belonging to the underutilized group. The highest atherogenic and thrombogenicity index values were generally obtained for commercial species. It seems in respect of comparability of these lipid quality indicators, the underutilized fish species could be highly recommended as an important source of polyunsaturated fatty acids and Max-EPA products for humans consumption.  相似文献

Antioxidant and Antithrombotic Activities of Rapeseed Peptides   总被引:2,自引:0,他引:2  
The antioxidant and antithrombotic activities of crude rapeseed peptides (CRPs) and peptide fractions (RP25 and RP55) prepared from aqueous enzymatic extraction (AEE) of rapeseed were determined. The reducing power of RP55 and CRPs was higher than that of RP25 at the same concentrations. Rapeseed peptides exhibited marked antioxidant activities. The median effective dose (ED50) values of CRPs, RP25 and RP55 for α,α-diphenyl-β-picrylhydrazyl (DPPH) radical scavenging were 72, 499 and 41 μg/mL, respectively. The ED50 values for RP25 and RP55 for hydroxyl radicals scavenging were 2.53 and 6.79 mg/mL, respectively while the ED50 values of RP55 and CRPs for inhibition of lipid peroxidation in a liposome model system were 4.06 and 4.69 mg/mL, respectively. The inhibitory effect on lipid oxidation of RP55 was similar to that of ascorbic acid at a concentration of 5.0 mg/mL. A good positive correlation existed between the peptide concentration and antioxidant activity. RP55 generally showed more potent antioxidant activities except for hydroxyl radicals scavenging ability than RP25 and CRPs at the same concentrations, which was thought to relate to the significantly higher contents of hydrophobic amino acid, tannin, and the brown color substances in RP55. Rapeseed peptides possessed marked inhibitory activities on the thrombin-catalyzed coagulation of fibrinogen, however, their inhibitory effects were not comparable to that of heparin.  相似文献
