Several cereals and pulses commonly consumed in India were screened for zinc and iron contents and their bioaccessibility in the same was determined by equilibrium dialysis employing an in vitro simulated digestion procedure. Zinc content of cereals ranged from 1.08 mg/100 g in rice to 2.24 mg/100 g in sorghum. Zinc content of pulses was between 2.03 mg/100 g (whole chickpea) and 2.68 mg/ 100 g (decorticated chickpea). Iron content of cereals ranged from 1.32 mg% in rice to 6.51 mg% in sorghum, while that of pulses ranged from 3.85 mg% in decorticated green gram to 6.46 mg% in black gram. Dialyzability of zinc from pulses (27–56%) was generally higher than that from cereals (5.5–21.4%). Dialyzabilities of iron were almost similar from both cereals and pulses examined and were 4.13–8.05% in cereals and 1.77–10.2 % in pulses. A significant negative correlation between inherent phytate content and zinc dialyzability value was inferred in the case of pulses. Phytic acid content of the cereals had a significant negative influence on iron dialyzability. Inherent calcium had a negative influence on zinc dialyzability in cereals. Tannin did not have any significant influence on zinc or iron dialyzabilities from cereals and pulses. While both insoluble and soluble fractions of the dietary fibre generally interfered with zinc dialyzability, the insoluble fraction alone had this effect on iron dialyzability. The lower collective negative influence of the inherent factors on zinc dialyzability from pulses is consistent with their higher concentrations in these grains, relative to cereals. The negative correlation of inherent phytic acid with zinc and iron dialyzabilities was supported by enhanced dialyzabilities of these minerals upon partial removal of phytate from the grains by treatment with fungal phytase.  相似文献

The features of solitary waves observed in horizontal monodisperse chain of barely touching beads not only depend on geometrical and material properties of the beads but also on the initial perturbation provided at the edge of the chain. An impact of a large striker on a monodisperse chain, and similarly a sharp decrease of bead radius in a stepped chain, generates a solitary wave train containing many single solitary waves ordered by decreasing amplitudes. We find, by simple analytical arguments, that the unloading of compression force at the chain edge has a nearly exponential decrease. The characteristic time is mainly a function involving the grains’ masses and the striker mass. Numerical calculations and experiments corroborate these findings.  相似文献

雷达信号分选是电子对抗的关键技术,而脉冲重复间隔是雷达信号分选的关键参数。目前基于PR I参数提出了很多分选方法。传统的PR I变换法对脉冲重复间隔具有很高的估计精度,它克服了直方图统计法中的子谐波问题,但是它的抗抖动能力很差。该文引入的修正的PR I变换法针对传统PR I变换法的缺点,利用可变的时间起点避免了相位因子的相位差,利用重叠的PR I箱增加PR I箱宽度,有效地克服了传统PR I变换中的缺点。此外,文中还给出了相应的门限设定方法和快速的脉冲抽取算法。仿真表明,该修正的PR I变换算法对固定PR I、抖动PR I和参差PR I脉冲序列都有较好的估计效果,它是精度较高的雷达信号分选方法。  相似文献

超宽带无线电系统中最常用和最典型的信号是时域上的极窄脉冲串。为了使超宽带系统的功率谱进一步平滑,增强系统隐蔽性和保密性,超宽带无线电系统往往都要破坏窄脉冲串的周期性,使所发射的相邻窄脉冲间的时间间隔进行伪随机的跳变。文章对超宽带基本理论、窄脉冲串时间间隔跳变的相关原理进行了介绍,提出了具体实现方法,给出了对实验样机的测试结果。  相似文献

Lead and cadmium contents in cereals and pulses in north-eastern China   总被引:2,自引:0,他引:2  
It is known that, unlike Japanese, Koreans or southern Chinese who depend on rice as a major source of energy for daily life, people in north-eastern China rely not only on rice, but on wheat and other cereals and to a lesser extent also on pulses. Cereal and pulse samples were collected from open markets in north-eastern China, and analyzed by inductively-coupled plasma spectrometry (ICP-MS) for two potentially hazardous heavy metals — lead (Pb) and cadmium (Cd). The average Pb level in cereals (31.3 ng Pb/g as a geometric mean) and that of pulses (25.7 ng Pb/g) were similar to each other with no significant difference. Among the cereals, Pb contents were higher in foxtail millet (54.3 ng/g) and lower in maize (35.4 ng Pb/g; grain and flour in combination), wheat flour (28.8 ng Pb/g) and rice flour (22.7 ng Pb/g). Lead levels in two important types of pulses, kidney bean and soybean (24.6 and 30.8 ng Pb/g, respectively), were comparable to the levels in rice and wheat. In contrast, Cd levels were substantially higher in pulses (55.7 ng Cd/g) than in cereals (9.2 ng Cd/g), and among the pulses, Cd in soybean (55.7 ng Cd/g) was significantly higher than that in kidney bean (23.8 ng Cd/g). The possible public health implication of the Pb and Cd levels, especially the high Pb level in foxtail millet (54.3 ng Pb/g) and the high Cd level in soybean (73.5 ng Cd/g), is discussed.  相似文献

In this study the changes of phenolic compounds and antioxidant activity of four different pulses namely white bean (Phaseolus vulgaris L), Common vetch (Vicia sativa), Lentil (Lens culinaris) and Chickpea (Cicer arietinum) seeds before and after germination were investigated. Seeds germinated in dark chambers maintained near 100 % relative humidity at 20 °C. Three different solvents namely acetone, hexane and methanol were employed to extract the phenolic compounds present in the seeds and sprouts. Total content of phenolic compounds was measured by the Folin–Ciocalteu method and antioxidant activity determined by the delay in fat oxidation. Different concentrations of extracts (0.02 and 0.1 % w/w) were added to tallow and the stabilities of the treatments were determined by the peroxide value and induction period measurements to evaluate the antioxidant activities. The results indicated that the increases in phenolic content from dormant seed to sprouted seed were significant (P ≤ 0.05) in all the samples. The significant differences between induction periods of tallow treated with sprouted seed extracts were observed (P < 0.05). The results indicated that the greatest increase in stability was obtained when tallow was treated with a 0.1 % concentration of acetone chickpea sprout extract. The pulses' sprout flour or extract might be recommended for use as a source of natural antioxidants in functional foods.  相似文献

The nutritional characteristics of seed proteins of 15 Spanish Lathyrus species have been analyzed. Protein contents in studied Lathyrus ranged from 17.7% in Lathyrus sativus to 25.6% in L. tingitanus with a 22.4% average protein content in studied Lathyrus. Among essential amino acids the most abundant were Leu, Lys, Phe, Thr and Val. Also, all species contained Lys above FAO recommendations. On the contrary, all species were limiting in Trp ranging from 0.5% to 0.8% content and were also limiting in sulphur containing amino acids, Met and Cys. In vitro protein digestibility (IVPD) in studied Lathyrus ranged from 76.0% in L. pratensis to 86.5% in L. annuus, with an average IVPD of 80.5%. Nutritional parameters, such as protein efficiency ratio, corresponded to high quality proteins. Protein digestibility corrected amino acid score was similar to the observed in other legumes such as lentil or peanut. An analysis of similarity based on the profile of seed protein amino acid composition showed, in the cluster generated, correlation with the taxonomic classification of these species according to morphological characters. Results confirm the interest of studying wild populations of cultivated and non-cultivated Lathyrus species as source of seeds with good nutritional characteristics.  相似文献

The five major pulse crops grown in Canada are: chick peas, green peas, lentils, pinto beans and kidney beans. Potential causes of fungal infection in these pulses are Aspergillus flavus and Penicillium commune. Early stages of fungal infections in pulses are not detectable with human eyes and traditional microbial methods require significant time to detect fungal infection. Near-infrared (NIR) hyperspectral imaging system is an advanced technique widely being assessed for detection of insect infestation and fungal infection in cereal grains and oilseeds. The primary objective of this study was to assess the feasibility of the NIR hyperspectral imaging system to identify fungal infections in pulses. Hyperspectral images of healthy and fungal infected chick peas, green peas, lentils, pinto beans and kidney beans were acquired and features (six statistical and 10 histogram) were used to develop classification models to identify fungal infection caused by A. flavus and P. commune. Images of healthy and fungal-infected kernels were acquired at 2 week intervals (0, 2, 4, 6, 8 and 10 weeks from artificial inoculation). Six-way (healthy vs the five different stages of infection) and two-way (healthy vs every stage of infection) models were developed and classifications were done using linear discriminant analysis (LDA) and quadratic discriminant analysis (QDA) classifiers. The LDA classifier identified both types of fungal infections with 90–94% accuracy while using the six-way model, and with 98–100% accuracy when using the two-way models for all five types of pulses. The QDA classifier also showed promising results as it gave 85–90% accuracy for the six-way model and 96–100% accuracy for the two-way models. The two fungal species could not be differentiated by the hyperspectral imaging.  相似文献

This study provides new data on the the total carotenoids and β-carotene content of commonly consumed cereals, pulses, vegetables, spices and condiments. Separation of carotenoids by HPLC showed that β-carotene is the predominant carotenoid in all the foods studied. Cereals and pulses appear to be poor sources of provitamin A precursors. Among the vegetables studied pumpkin, ridge gourd, green chillies, tomato, green peas, field beans and French beans are not only inexpensive but are better sources of β-carotene (20–120 mg/100 g). Among the spices and condiments, red chilli (1310 mg/100 g) and Smilax (2136 mg/100 g), which are regularly used in Indian recipes are good sources of provitamin A precursors. The study also identified unconventional sources like Gulmohar, Peltiforum ferruginum,Lucern and Spirulina as rich sources of β-carotene. Considering that Indian diets predominantly consist of cereals and pulses, choosing appropriate combinations of cereals and pulses will contribute significantly to overall vitamin A intakes. Together with our earlier efforts, the present study has generated a database of β-carotene contents of Indian plant foods, which could be of help in the elimination of vitamin A deficiency.  相似文献

The aim was to investigate the occurrence of deoxynivalenol (DON) in cereal and pulse products in Turkey. DON was detected using high-performance liquid chromatography (HPLC) with ultraviolet detection at 220 nm and positive results greater or equal to 0.60 ppm were confirmed by thin layer chromatography (TLC). An acetonitrile-water (21:4 v/v) extract of the sample was cleaned up on a column packed with alumina-Celite-charcoal (0.35 + 0.25 + 0.40 g). The detection limits for DON were 3 ng/injection (0.10 ppm) and 50 ng/spot (0.60 ppm) for HPLC and TLC, respectively. Eighty-three commercially available cereal and pulse product samples collected from markets and street bazaars were analysed. The recovery rates for boiled, pounded wheat and rice spiked with added DON (1 ppm) were 80.9% (SD 8.37, n =5) and 72.3% (3.85, n =5), respectively. DON was detected in six (8.82%) of 68 cereal and in none of 15 pulse products. The maximum detected amount was 2.67 ppm in a corn flour sample.  相似文献
