The effect of boiling, microwaving and grilling on the composition and nutritional quality of beef intramuscular fat from cattle fed with two diets was investigated. Longissimus lumborum muscle from 15 Alentejano young bulls fed on concentrate or pasture was analyzed. Cooking losses and, consequently, total lipids, increased directly with the cooking time and internal temperature reached by meat (microwaving > boiling > grilling). The major changes in fatty acid composition, which implicated 16 out of 34 fatty acids, resulted in higher percentages in cooked beef of SFA and MUFA and lower proportions of PUFA, relative to raw meat, while conjugated linoleic acid (CLA) isomers revealed a great stability to thermal processes. Heating decreased the PUFA/SFA ratio of meat but did not change its n−6/n−3 index. Thermal procedures induced only slight oxidative changes in meat immediately after treatment but hardly affected the true retention values of its individual fatty acids (72–168%), including CLA isomers (81–128%).  相似文献

The aim of the present study was to compare the fatty acid composition, PUFA:SFA ratio, n6/n3 ratio, and TFA of different farm animal meats and offal products. These products were collected at a regional farm in Istanbul which is the most populous city in Turkey. The results of fatty acid composition analysis indicated that the major fatty acids of C16:0 (18.00–29.35 %), C18:0 (4.10–29.71 %), C18:1 (29.21–57.30 %), and C18:2 (1.37–18.60 %) were found in the samples. The total saturated fatty acids, total monounsaturated fatty acids and total polyunsaturated fatty acids content of the samples ranged between 30.00 and 61.83 %, 32.24 and 57.80 %, and 1.64 and 23.60 %, respectively (p < 0.05). Except for turkey abdominal fat, TFA content in all other samples showed a variation between 0.10 and 3.36 %. The PUFA:SFA ratio was higher in turkey meat (0.64) and was lower in sheep kidney fat (0.02). Moreover, the n6/n3 PUFA ratio changed between 2.90 and 22.28 (p < 0.05).  相似文献

Chronic multifactorial diet related diseases are the major causes of death and illness worldwide. The amount and composition of fat in the diet is an important determinant of the pathobiology of many of these conditions. In the current review the associations between dietary fat and disease risk will be considered. Mean population fat intakes will be compared with dietary recommendations aimed at reducing the population burden of disease and the main sources of fat in the adult and childhood diet will be given. An assessment will be made of the principal vegetable oil sources used in the manufacture of processed foods, in particular fried foods, with particular reference to the rheological and nutritional justification for their use. The impact of the more widespread use of alternative oil sources with improved fatty acid profiles, on the fat composition of fried foods and the overall diet will be presented, demonstrating that such apparently focussed approaches could potentially result in a significant impact on population fat intake and potentially overall chronic disease burden.  相似文献

The composition of dietary fat has received increased attention during the recent years because it influences human health. Seventy seven samples from pork adipose tissue and melted fat from the same tissue were measured with Raman spectroscopy. Gas chromatography analysis was conducted as reference. Iodine values (IV) ranged from 58.2 to 90.4 g iodine added per 100 g fat. Polyunsaturated fatty acids (PUFA) ranged from 7.8% to 31.7% and monounsaturated fatty acids (MUFA) from 35.2% to 51.5% of total fatty acids. When applied on pre-processed spectra of melted fat, partial least square regression (PLSR) with cross-validation gave a correlation coefficient (R) = 0.98, and root mean square error of cross-validation (RMSECV) = 1.4 for IV, using 3 PLS factors in the model. PUFA gave R = 0.98 and RMSECV = 1.0% of total fatty acids, using 5 PLS factors. MUFA were predicted with R = 0.96 and RMSECV = 1.0% of total fatty acids, using 9 PLS factors. On adipose tissue a model with 3 PLS factors gave R = 0.97 and RMSECV = 1.8 for IV. For PUFA, a model with 3 PLS factors gave R = 0.95 and RMSECV = 1.5% of total fatty acids. For MUFA a model with 6 PLS factors gave R = 0.91 and RMSECV = 1.5% of total fatty acids. The results indicate the feasibility to use Raman spectroscopy as a rapid and non-destructive method to determine IV, PUFA, MUFA and saturated fatty acids (SFA) measured directly on pork adipose tissue and in melted fat from the same tissue.  相似文献

目的探讨不同煎炸时间对大豆油、花生油和芝麻油3种植物油脂脂肪酸含量变化的影响。方法选取煎炸温度为350℃,煎炸时间分别为0.5、1、3、5、7、25 h,用氢氧化钾-甲醇溶液进行甲酯化,并采用气相色谱-质谱法(gas chromatography-mass spectrometry)对脂肪酸甲酯化溶液进行定量分析。结果随着煎炸时间的延长,油脂中总脂肪酸含量呈现递减趋势。其中,油脂中饱和脂肪酸(SFA)的总含量均呈递增趋势,而不饱和脂肪酸(UFA)的总含量均呈递减趋势。结论煎炸25 h后的大豆油、花生油和芝麻油的饱和脂肪酸(SFA)含量分别由19.03%、14.68%、17.54%增至33.01%、23.24%、27.41%,变化率分别为58.45%、34.43%、56.34%,从饱和脂肪酸的变化率来看,花生油相对更稳定。而其不饱和脂肪酸(UFA)分别由80.84%、85.21%、82.39%减少到59.67%、68.97%、69.41%,变化率分别为19.06%、26.18%、15.75%,从不饱和脂肪酸来看,芝麻油更具稳定性。  相似文献

Dietary lipid effect, as a consequence of protein supplement, on lamb m. longissimus dorsi fatty acid composition was investigated, with emphasis on biohydrogenation intermediates. Crossbred lambs (White Swedish Landrace × Texel) were fed a barley-based diet without (CON) or with protein supplements including peas (PEA), rapeseed cake (RC) or hempseed cake (HC). The HC diet resulted in the highest muscle 22:6n-3 proportion, with the RC diet being similar (P<0.05). Protein supplement did not affect the c9,t11 conjugated linoleic acid (CLA) proportion, however the HC diet increased some minor CLA isomers, including t10,c12 CLA (P<0.05). The t10-18:1 and total trans-18:1 were lowest for the RC diet (P<0.05), likely relating to rumen conditions and precursor availability. The saturated, monounsaturated and branched-chain fatty acids were largely unaffected by protein supplement. In conclusion, feeding the RC diet lowered the t10-18:1 and total trans-18:1 in meat, and modestly increased 22:6n-3 content. The direction of these changes would be beneficial, making the RC diet the preferred protein supplement; however the magnitude of the changes in the present experiment may not be sufficient to have an impact on human health.  相似文献

A comparative study has been conducted of the major lipid classes composition, as well as the fatty acid and carotenoid content in the yolk of conventional eggs from five avian species (ostrich, turkey, quail, duck and goose); the nutritional indices were calculated. The neutral lipids were the major yolk fractions but their proportions varied among species. All yolks and especially ostrich’s yolk were found to be an excellent source of dietary lecithin. Quail yolk displayed the lowest fat and cholesterol content and the lowest values for the cholesterol index (CI) and cholesterol-saturated fat index (CSI). It is therefore more appropriate for a healthier diet. Turkey and goose yolks contained significantly (P < 0.05) higher ω-3 fatty acid proportion and ω-6/ω-3 ratio. The turkey yolk was characterised by the lowest AI and TI values, which are recommended for a healthy diet. Quail yolk lipids contained a favourable PUFA/SFA ratio. All the examined yolks contained highly bioavailable functional nutrients, such as lutein and zeaxanthin.  相似文献

Carob flour (CF) and washed carob flour (WCF) (without the water soluble dietary fraction) were submitted to an in-vitro digestion method to evaluate the dietary soluble fibre (DF) and soluble sugars content on the digestibility and bioaccessibility of polyphenols. In addition, combinations of the raw materials (CF and WCF) with hazelnut oil (HO) were proposed in order to evaluate the protection of a vegetable oil rich in polyunsaturated fatty acids (PUFA) on the phenolic compounds submitted to in-vitro digestion conditions. The results showed that the soluble dietary fraction enhanced the stability of the phenolic compounds during the duodenal digestion phase. Similarly, the lipid fraction (rich in PUFA) showed a protective effect on the recovery of the phenolic compounds during duodenal digestion. Disruption of the natural matrix under digestion conditions led to the release of DF and PUFA, which could establish interactions with certain polyphenol compounds enhancing their recovery and stability during digestion.  相似文献

BACKGROUND: Conjugated linoleic acid (CLA) was shown to cause embryo mortality when added into chicken diets. The objective of this study was to determine if CLA accumulation in yolk was directly responsible for embryo mortality. MATERIAL AND METHODS: Forty‐two 30‐week‐old hens were assigned to seven groups and fed a diet containing 5 g kg?1 canola oil (Group A), 5 g kg?1 CLA (Group B), 5 g kg?1 CLA plus 20 g kg?1 canola oil (Group C), 5 g kg?1CLA plus 30 g kg?1 canola oil (Group D), 5 g kg?1 CLA plus 40 g kg?1 canola oil (Group E), 10 g kg?1 CLA plus 40 g kg?1 canola oil (Group F) or 20 g kg?1 CLA plus 40 g kg?1 canola oil (Group G) for 22 days. Collected eggs were held at 15 °C for 24 h, and then incubated. For fatty acid analysis, three eggs were collected on the 22nd day of the study. RESULTS: After the sixth day, embryonic mortality was 100% in eggs from Group B versus 2, 30, 21, 4, 0, and 9% in groups A, C, D, E, F and G, respectively. The ratio of SFA/UFA of yolks from groups A, B, C, D, E, F and G was 0.64, 1.53, 1.07, 1.06, 1.08, 1.05 and 1.13, respectively. Relative levels (%) of CLA in the eggs from the groups A, B, C, D, E, F and G were 0.12, 2.29, 1.68, 1.80, 1.76, 3.04, and 5.25%, respectively. CONCLUSION: This study showed that CLA was not directly toxic for developing embryo, but caused mortality in the fertile eggs by increasing the ratio of SFA to UFA in egg yolk. Thirty two Alentejano purebred bulls were used to investigate the effect of four feeding systems (pasture only, pasture feeding followed by 2 or 4 months of finishing on concentrate, and concentrate only) on meat fatty acid composition (GC-FID), including conjugated linoleic acid (CLA) isomeric distribution (Ag[+]–HPLC–DAD). In addition, meat fatty acids and CLA isomers were used to elucidate the impact of the different feeding regimens on the nutritional value of intramuscular fat and their usefulness as chemical discriminators of meat origin. The diet had a major impact on the fatty acid composition of beef (affected 27 of 36 fatty acids and 10 of 14 CLA isomers), which was independent of the fatty acid concentration. Beef fat from pasture-fed animals had a higher nutritional quality relative to that from concentrate-fed bulls. Finally, meat fatty acid composition was an effective parameter to discriminate between ruminant feeding systems, including different finishing periods on concentrate.  相似文献
