Heat treatment has long been regarded as one of the most widely used and most effective means of destroying pathogens in food. Up to now the linear relationship between the death rate and the temperature has been used when choosing the best heat treatment to apply. However, the information given by this linear relationship is no longer sufficient when nonlinear survival curves are observed. Consequently, the agri-food industry needs a tool to choose the best mild heat treatment to apply in the case of nonlinear survival curves. This study deals with the temperature-induced death of Listeria monocytogenes CIP 7831 in the stationary phase of growth. Eleven temperatures were tested. With the proposed primary and secondary models good fits of our data were obtained. A model describing both the effect of the duration of treatment and the temperature on the logarithm of the number of survivors was then built. A clear increase in the precision of the estimation of the parameters was obtained with this model. Moreover, with this model a new graphical strategy to choose a mild heat increase regarding a maximal survivor number has been proposed. 相似文献

Natural convection in air-filled 2D square enclosure heated with a constant source from below and cooled from above is studied numerically for a variety of thermal boundary conditions at the top and sidewalls. Simulations are performed for two kinds of lengths of the heated source, i.e., a small and a large source corresponding to 20% and 80% of the total length of the bottom wall, respectively. The Rayleigh number varied from 103 to 107. Results are presented in the form of streamline and isotherm plots as well as the variation of the Nusselt number and maximum temperature at the heat source surface. With the object of evaluating its importance to thermoelectric generator design, heat loss is introduced into the standard thermoelectric generator design theory. The theory for both the constant hot and cold junction temperatures model and the constant heat input model are so modified. The modification is first order and, therefore, is limited to small leg heat-transfer coefficients. Numerical results using representative properties show that significant differences can exist between the optimum geometry and performance of a generator idealized as lossless and those of a generator designed by the modified theory. The values for the standard entropies of crystalline and amorphous phases were reassessed through use of the Planck-Einstein approach. The investigation of radiation-absorption,chemical reaction,Hall and ion-slip impacts on unsteady MHD free convective laminar flow of an incompressible viscous,electrically conducting and heat generation/absorbing fluid enclosed with a semi-infinite porous plate within a rotating frame has been premeditated.The plate is assumed to be moving with a constant velocity in the direction of fluid movement.A uniform transverse magnetic field is applied at right angles to the porous surface,which is absorbing the fluid with a suction velocity changing with time.The non-dimensional governing equations for present inves-tigation are solved analytically making use of two term harmonic and non-harmonic functions.The graphical results of velocity,temperature and concentration distributions on the analytical solutions are displayed and discussed with reference to pertinent parameters.It is found that the velocity profiles decreased with an increasing in Hartmann number,rotation parameter,the Schmidt number,heat source parameter,while it increased due to an increase in permeability parameter,radiation-absorption param-eter,Hall and ion slip parameters.However,the temperature profile is an increasing function of radiation-absorption parameter,whereas an increase in chemical reaction parameter,the Schmidt num-ber Sc or frequency of oscillations decrease the temperature profile on cooling.Also,it is found that the concentration profile is decreased with an escalating in the Schmidt number or the chemical reaction parameter. 相似文献
