Rewarming of fruits and vegetables after cooling is characterized by heat and mass transfer processes, which leads commonly to condensation of water on the produce surface at temperatures below the dew point. This effect may affect the produce quality due to microbial growth at unfavorable environmental conditions. The amount of condensed water is a function of the produce surface temperature and of the surrounding conditions as air temperature, air humidity, and air flow. Under practical conditions, both the warming and the condensation are strongly affected by the packaging system used. Depending on the flow conditions close to the produce surface, parameters of heat and mass transfer under laboratory conditions were measured. A mathematical model was developed for the determination of the amount of condensed water on fruit surfaces, its reevaporation, and its total dwell time dependent on the environment air conditions. The model describes the heat and mass transfer processes on single fruits. The process of diffusion of humidity in air and proceed of surface temperature is the basis for the model.  相似文献

This article presents a two-dimensional transient model for gas-solids flow and heat transfer through pipes using the coupled Computational Fluid Dynamics and Discrete Element Method approach. Numerical simulations have been conducted to examine the modification of fluid thermal structure due to the presence of particles in a pneumatic transport pipeline. Modeled results have demonstrated the key role of transversal motion of rebounding particles in the pipe cross section in altering fluid temperature. Further implementation of this modeling technique in air-drying processes is discussed and possible experimental methods for the measurement of in situ particle and fluid motion and temperature profile are cited.  相似文献

The electrical conductivity of solution-grown ethyl cellulose (EC) films, 5–30 μm thick, has been studied in the sandwich configuration (metal–EC–metal) as a function of iodine concentration from 0.5 to 5.0 wt% ratio. The studies were conducted in the temperature range 333–383 K, while the field was varied over the range (3.0–5.5) × 104V/cm. Aluminium was used as the lower electrode, while the upper electrode was of Al, Ag, Cu, Au or Sn. Certain transient effects such as a large burst of current immediately after the application of field were observed. An attempt was made to identify the nature of the current by comparing the observed dependence on electric field, electrode material and temperature with the respective characteristic features of the existing theories of electrical conduction. The results show that the electrical conduction follows Ohm's law at lower fields, while at higher fields, space-charge limited current (SCLC) was observed. It was also found that Richardson–Schottky emission was responsible, to some extent, for the transport of charge carriers in the polymer. The conductivity of the films increased on doping with iodine. The dopant molecules are considered to act as additional trapping centes and provide links between the polymer molecules in the amorphous region, thus resulting in the formation of charge transfer complexes.  相似文献

A novel elastic polymer containing 4,4′-bipyridinium salts with tetrakis[3,5-bis(trifluoromethyl)phenyl]borate as part of the main chain was synthesized. The cast film showed persistent and reversible colour changes due to photoinduced electron transfer upon excitation of an ion-pair charge-transfer band (ex >365 nm) in vacuo. The lifetime of the coloured state markedly depended on temperature. The optically written data were stored without decay below 0°C and were erased thermally at elevated temperatures. The colour changes were reversibly repeatable for many times.  相似文献

In the case of submerged multijets impinging on to a flat surface, the limiting current densities were measured at microelectrodes, fixed flush with the target surface using diffusion controlled electrode reactions (i.e. reduction of ferricyanide ion). The height of the multijet distributor from the target surface (Y) was varied from 5 to 9 cm. The numbers of holes of the distributor (N) studied were 76 and 141. The variation of mass transfer data with radial distance reveals the existence of two different regions, i.e. the impingement region and the wall jet region. The mass transfer rate increased with increase in Y in the impingement region. The effect of Y is negligible in the wall jet region. Decrease in N decreases the mass transfer rate in both the regions. The data are correlated separately for the two regions.  相似文献

Artificial neural network (ANN) models were developed for the prediction of transient moisture loss (ML) and solid gain (SG) in osmotic dehydration of fruits using process kinetics data from the literature. ANN models for ML and SG were developed based on data over a broad range of operating conditions and ten common processing variables: temperature and concentration of osmotic solution, immersion time, initial water and solid content of the fruit, porosity, surface area, characteristic length, solution-to-fruit mass ratio, and agitation level. The trained models were able to accurately predict the outputs with associated regression coefficients (r) of 0.96 and 0.93, respectively, for ML and SG. These ANN models performed much better than those obtained from linear multivariate regression analysis. The large number of process variables and their wide ranges considered along with their easy implementation in a spreadsheet make them very useful and practical for process design and control.  相似文献

An analytical study is performed to examine the thermal diffusion characteristics of free convection and mass transfer flow in a non-Newtonian fluid (Walters, 1962: liquid B') past a uniformly accelerated infinite vertical plate in the presence of thermal diffusion. The expression for the velocity field is obtained by the Laplace transform technique. The influence of the Soret number (a thermal diffusion parameter) on the velocity field is extensively discussed with the help of graphs.  相似文献

Using the photonic band gap in photonic crystals, the fundamental waveguide structures for the light wavelength range have been developed. Based on the fine structure of these many functional devices have been proposed by analytical or numerical simulation methods and the experiments of trial manufacture. In this paper, the treatment of chiral dielectric in the Condensed Node Spatial Network for the vector potential is explained, and we show the polarization plane rotation property in air‐hole and pillar type photonic crystal waveguide structures with the chiral medium substrate. Then, we show the fundamental advantage of the air‐hole type photonic crystal waveguide structure in application to a mode converter. © 2005 Wiley Periodicals, Inc. Lake Erie's food web has been dramatically modified by exotic species. Both exotic dreissenid mussels and the round goby Neogobius melanastomus have shifted the food web from a pelagicbased to a benthic-based one, potentially creating a new pathway for contaminant transfer to top predators. Before the invasion of round gobies, few predators of dreissenids occurred in Lake Erie, allowing contaminants to be confined to these benthic organisms. The invasion of the round goby has produced a new pathway through which these contaminants can enter the food web. To characterize heavy-metal transfer through this new food web and to assess risk to humans, water, surficial sediment, dreissenid, round goby, and smallmouth bass Micropterus dolomieui samples were collected at three sites during summers, 2002 and 2003, and analyzed for total lead (Pb), total mercury (Hg), and methyl mercury (MeHg). In addition, we compared smallmouth bass Pb and Hg concentrations to those measured in 1993/1994, before round gobies were prevalent. Pb biodiminished and MeHg biomagnified through the food web to smallmouth bass; patterns were similar among our three sites. Total Pb concentrations in smallmouth bass were higher before the incorporation of round gobies into their diet. We attributed this decline to changes in food web structure, changes in contaminant burdens in prey, or declines in sediment Pb concentrations in Lake Erie. By comparison, Hg concentrations in smallmouth bass changed little, before and after the round goby invasion, possibly due to a shift in diet that increased growth. Despite a decline in sediment Hg concentrations in Lake Erie, smallmouth bass continued to accumulate Hg at historical rates possibly because of their high consumption rates of benthivorous round gobies. As smallmouth bass continue to consume round gobies during their lives, their Hg concentrations may well continue to increase, potentially increasing the risk of Hg contamination to humans.  相似文献
