Abstract

The aim of this study was to evaluate the effect of convective and cryogenic freezing, hot air convective drying (HACD) at 60, 70, 80, and 90?°C and microwave vacuum drying (MWVD) at 100, 150, 200, 300, 450, and 500?W on the drying kinetics and texture of whole cranberries. Effective moisture diffusivities and drying rates were higher, whereas drying times were shorter for the samples dried by MWVD compared with the samples processed by HACD. The drying kinetics of cranberries during MWVD was discussed based on the hypothesis postulating that changes in the drying rate of cranberries during MWVD can be explained by and correlated with changes in the pressure gradient on material surface. Cranberries processed by MWVD were characterized by significantly greater hardness, gumminess, and chewiness in comparison with HACD samples. MWVD was found to be an effective method for producing dried snacks characterized by hard and crispy texture and considerable resistance to stress associated with manufacturing, packaging, storage, and delivery. HACD produced brittle fruit that were difficult to store and transport and were not fully suitable for direct consumption. Convective freezing before MWVD improved the overall appearance of cranberries, whereas cryogenic freezing combined with high temperature HACD adversely influenced the drying rate and produced dried cranberries with suboptimal overall appearance.  相似文献

ABSTRACT

A two-dimensional mathematical model for vacuum-contact drying of wood is presented. The moisture and heat equations are based on the water potential concept whereas the pressure equation is formulated considering unsteady state conservation equation of dry air. Most of the model parameters were determined during independent experiments. The set of equations is then solved in a coupled form using the finite element method. The validation of the model is performed using experimental results obtained during vacuum-contact drying of sugar maple sapwood. The experimental and calculated data are in good agreement. Nevertheless, some discrepancies are observed which can be attributed to the boundary conditions used and to the fact that heat transfer by convection was neglected.  相似文献

ABSTRACT

In vacuum-press drying of softwood species, wood lemperaiure exhibited a low temperature gradient, and plateau temperature of core lasied during all stages of drying. The drying curves were close to “linear”. The drying rates of the short lumbers were higher for red pine and western hemlock, lower for white pine and similar for larch lumber compared to the long ones. Transverse and longitudinal moisture gradients were small for western hemlock and red pine, and great for larch and white pine lumber. Energy consumption curves were split into three sections: increasing moderately, fairly constant and increasing rapidly. Casehardening stress of dried lumber occurred very slightly. Dried lumbers exhibited strong tendency for fine end checking, slight surface checking and no internal checking. Shrinkage appeared to be low.  相似文献

Tomato peel was separated from pomace by sedimentation and dried in cabinet and fluidized-bed dryer at 50–70°C using 4–12 kg/m2tray load. The drying of tomato peel took place under the falling rate period and the drying behavior was well described by Page's model with coefficient of determination greater than 0.99 and standard error of 0.003–0.016. A fluidized-bed dryer was much more efficient than a cabinet dryer to dry tomato peel. The moisture adsorption isotherms of tomato peel were obtained by equilibrating above saturated salt solutions of known a w (0.113–0.92) at 20–60°C. The data were analyzed using fifteen sorption models based on coefficient of determination, standard error, and residual plots. Modified Henderson was the best model for tomato peel with coefficient of determination >0.99, standard error <0.210, and a scattered residual plot. The net isostearic heat of sorption, estimated using the Clausius-Clapeyron equation, was 0.74–23.23 kJ/mol at 2.0–2.5% moisture content (dry basis).  相似文献

ABSTRACT

This paper reviews the technology of wood drying and recent developments in the field. The importance of drying is reviewed first. Then the fundamentals of wood properties as they relate to drying are discussed, including how water is held in wood, how it moves through wood, and how drying stresses that lead to drying defects develop. Traditional drying technology for lumber, veneer, and heavy timbers is then presented. With this background, the discussion moves to recent developments in drying technology that have been implemented commercially, such as high-temperature drying, low-temperature drying, continuously rising temperature drying, vacuum drying, and advances in process control. Finally, a discussion is presented on drying technology of the future. This topic describes processes that offer potential improvements in drying technology, but are still in the research and development stage.  相似文献

ABSTRACT

This study was conducted to evaluate the potential of a natural zeolite (chabazite) as the particulate medium for grain drying. The granular zeolite was heated in an electric oven and mixed with grain corn. Drying experiments were conducted in a rotary batch dryer equipped with a computer and a data acquisition and control unit simulating an adiabatic process. ABSTRACT

Measurement of material moisture content is necessary for the control of product quality in batch drying. However, this variable cannot be measured on-line, and state estimation techniques are proposed. A non-linear dynamic model is developed for batch drying of foods. Process disturbances and measurement errors are modeled as stochastic processes and a hybrid extended Kalman filter is employed for state estimation. This filter is based on the local linearization of the process model around the suboptimal filter estimates. The moisture estimation approach was applied to experimental points obtained in a laboratory dryer with quite satisfactory results.  相似文献

The thermal contact conductance for a paper/metal interface and the effective thermal conductivity of paper samples were determined using an experimental contact conductance apparatus. The effects of pressure and moisture content on the thermal contact conductance and the effective thermal conductivity were investigated. The samples considered in the experiments consisted of paper machine samples from different sections of the drying section. ABSTRACT

Vacuum drying, j,e drying under absolute gas pressure of about 10? Pa. is an efficient means of reducing the process period and of producing good quality wood. We will examine here continuous vacuum drying where the plank surfaces are kept at a constant temperature, which remains above the boiling point, and moisture flowing to the surface is extracted from the kiln.

We have carried out an experimental study of oak drying under such conditions. The drying rate and moisture content profile of the sample (40 mm thick) are recorded during the whole drying period.

A model of continuous drying is established from general conservation equations with the main approximation that the air is rapidly extracted. The two constitutive equations of the model which describe temperature and water content fields are of a diffusive type and coupled through coefficients. The adequate boundary equation is not a convective one, but expresses a hygroscopic equilibrium between the vapour in the chamber and the wood surface. The mass diffusive coefficient can be adjusted to the drying rates through capillary pressure and bound water diffusion functions. The wood heterogeneity (seasonal growth) is the main factor of discrepancy in these functions. The simulated drying rates correspond with the experimental ones.  相似文献
