古典主义服装设计风格的现代设计应用思考

从西方古典主义服装设计风格入手,利用其服装整体造型和细节表现复古和回归思潮,以西方古典主义服装设计风格作元素进行现代服装设计思维拓展的新途径。     

Changes in biogenic amines during the conventional production of stinky tofu

This study was carried out to investigate the changes in ten biogenic amines and chemical properties in stinky tofu and brine during conventional production. Results show that the free amino acid nitrogen was positively correlated with fermentation time in stinky tofu and brine except during the primary fermentation (0–24 h) in stinky tofu. Of the amines analysed, putrescine, cadaverine, spermidine, spermine and agmatine were detected in stinky tofu, putrescine, cadaverine and spermidine were detected in stinky brine, and only putrescine and cadaverine exhibited a significant positive correlation (P < 0.05) with time in both sample types during extended fermentation (24–144 h). From a toxicological point of view, stinky tofu poses no risk to health; nevertheless, an increase in total biogenic amines in stinky tofu during extended fermentation may be harmful. The results indicate that the fermentation time should be <48 h and a suggested optimum time is 12–18 h.

中国传统发酵豆制品γ-氨基丁酸研究

选择全国不同地区生产的61种传统发酵豆制品(包括豆豉、腐乳、豆酱和酱油),使用高效液相色谱法(HPLC)柱前衍生测定其γ-氨基丁酸(GABA)含量。研究表明,中国传统发酵豆制品富含GABA,从所试样品来看,腐乳样品GABA平均含量最高,为277.26mg/100g干重,含量最高的样品达1 159.46 mg/100g干重。所试豆豉、豆酱和酱油中平均GABA含量分别为116.81 mg/100g干重、68.81mg/100g干重和141.51mg/100mL。同一种类不同品牌发酵豆制品中GABA含量存在较大差异,这与发酵豆制品的不同生产工艺相关。通过工艺改进,可望富集GABA,生产富含GABA的功能性发酵豆制品。     

Content of Vasoactive Amines in Sremski Kulen and Sremska Kobasica Traditional Dry Fermented Sausages From Vojvodina

The aim of this paper was to determine the content of vasoactive biogenic amines in Sremski kulen and Sremska kobasica and to estimate hygienic conditions and good manufacturing practice (GMP) according to proposed criteria. Formation of dansyl chloride derivatizated vasoactive amines were determined using HPLC–DAD. Tryptamine (47.6; 34.2 mg/kg), histamine (16.1; 6.42 mg/kg) and tyramine (95.1; 45.2 mg/kg) were detected in both investigated type of traditional dry fermented sausages while phenylethylamine was not detected. Total content of vasoactive amines did not exceed the sum (200 mg/kg) proposed as a possible indicator of hygienic conditions and GMP in sausage production.

本文通过对清代传统图案纹样类型进行系统分类,对清代服饰图案艺术史有了一个研究的框架。清代服饰体系是最为繁缛,规章制度也是最庞杂的,所以它有着其自己独特的服饰图案艺术风格,本文经过归纳把清代传统图案纹样分为珍禽瑞兽、花卉、虫鱼、人物、几何,寓意这几个方面。     

豉香型白酒传统工艺的继承与创新

豉香型白酒是珠三角地区盛行的一种传统米酒。通过对豉香型白酒传统工艺的细致总结后,主要继承了豉香型白酒传统工艺的发酵方式、蒸馏方式及陈肥肉酝浸工艺。从适当延长发酵期、缩短浸肉时间、改良勾兑贮存工艺几方面对原有工艺进行改良。
